ROAST LOIN OF PORK WITH SAGE & ONION STUFFING & GRAVY



Roast loin of pork with sage & onion stuffing & gravy image

Sage and sausage meat are stuffed inside a pork loin to create a moist, flavoursome Sunday lunch main for a crowd

1 tbsp olive oil
1 onion, finely chopped
few sage leaves, shredded
25g fresh breadcrumbs
4 good quality sausages, skinned
1.6kg boned loin of pork
2 tbsp plain flour
400ml chicken or beef stock
100ml cider

Steps:

  • Heat the oil in a saucepan and cook the onion for 5 mins until soft. Remove from the heat. Once cool, transfer to a bowl and mix in sage, breadcrumbs, sausage meat and some seasoning.
  • Untie the pork and score the skin well with a sharp knife. Cut down the length of the meat, then open out like a book so you can stuff the sausage meat inside. Close back up to resemble original shape and tie at intervals with string to hold it together. Weigh so you know how long it will need to cook for. This can be done ahead; chill until needed.
  • Heat oven to 240C/220C fan/gas 9. Rub the joint all over with salt and pepper and place in a roasting tray. Cook for 25 mins, then turn to 180C/160C fan/gas 4 and cook for 20 mins per 450g/1lb. Remove, and check it's cooked through: any juices that run out should be clear. Transfer to a dish, then cover with foil to rest while you make the gravy.
  • Spoon most of the fat out the tray, leaving the meat juices. Place tray on the hob or transfer juices to a frying pan. Stir in the flour for 1 min followed by the stock and cider, and bubble for a few mins. Strain into a jug. Serve the pork sliced, with the crackling, potatoes, gravy and veg.

2 large golden delicious apples, peeled, cut into 8 wedges
1/2 cup water
2 tablespoons sugar
4 whole cloves
6 tablespoons butter
1 medium onion, finely chopped
4 center-cut pork chops, 1-inch thick
1 cup chicken stock
1 cup beef stock
1 1/2 tablespoons fresh sage, minced or 1 1/2 teaspoons dried sage, rubbed

Steps:

  • Combine apples, water, 2 tablespoons sugar and cloves in heavy medium saucepan. Stir over medium-low heat until sugar dissolves. Cover; cook until apples are tender, about 12 minutes. Discard cloves. Using fork, coarsely mash apple mixture. Taste, adding more sugar if desired. Simmer until thickened, stirring occasionally, about 5 minutes.
  • Melt 4 tablespoons butter in medium skillet over medium heat. Add onion; saute until golden, about 10 minutes. Season with salt and pepper. Set aside.
  • Melt 2 tablespoons butter in large skillet over medium-high heat. Season pork with salt and pepper. Add to skillet; saute until brown and cooked through, about 8 minutes per side. Transfer to platter; tent with foil. Add both stocks and sage to skillet; bring to boil, scraping up any browned bits. Boil juices until reduced to 1/3 cup, about 10 minutes.
  • Meanwhile, rewarm onion mixture, stirring occasionally. Rewarm applesauce, stirring occasionally.
  • Divide onion among plates. Top with pork. Spoon pan juices over pork and serve with applesauce alongside.

  • Simmer sage and onions in water for 10 minutes. Add salt, pepper and toasted breadcrumbs. Stir well and add stock. Bring to a boil and simmer; covered, for 3 minutes before serving.

2 large Vidalia onions, chopped
2 cloves garlic, minced
1 large (1/2 gallon or more) bottle vinegar based barbeque sauce
13 pound pork ham

Steps:

  • Saute the onion and garlic in olive oil until onions are tender. Add onions to barbeque sauce and stir well.
  • Place uncooked ham in a baking bag. Pour about 1/2 gallon of barbeque sauce mixture into the bag. Seal the bag and marinate in the refrigerator overnight - about 8 to 12 hours. Remove the ham from the baking bag and place it on the grill. Cook ham until the meat is tender, basting often with barbeque mixture.

100ml marsala
1 medium onion , peeled and chopped
1 large leek , trimmed, washed and chopped
1 bay leaf , fresh or dried
1 sprig fresh thyme
large sprigs fresh parsley
25g butter
1 tbsp olive oil
2 medium onions , peeled and finely diced
100g marsala
300ml dry white wine
6 large fresh sage leaves, finely chopped
142ml carton double cream

Steps:

  • Preheat the oven to 230C/Gas 8/fan oven 210C. Brown the duck bits in the oven for about 30 minutes. Transfer to a stockpot. Discard the fat and place the tin over a medium-high flame. Pour in the Marsala and 200ml/7fl oz cold water, bring to the boil and scrape any stuck-on bits into the liquid. Boil for 2 minutes then scrape everything into the stockpot.
  • Add 2.25 litres/4 pints cold water to the pot and bring to the boil over a medium heat, uncovered. Scoop off any scum, then add the vegetables and herbs. Bring back to the boil, de-scum again.
  • Now very gently simmer for 2 hours, adding cold water if the liquid falls below the level of the bones. Remove from the heat and drain through muslin-lined colander (or use a clean tea towel) into a heatproof bowl. Cool, then refrigerate until jellied.
  • Heat the butter and oil in a large, nonstick frying pan over a low-medium heat, then tip in the onions. Cook for about 30 minutes, stirring occasionally, until meltingly soft. Turn heat to high, add the Marsala and boil for 3-4 minutes, stirring often, until onions are syrupy. Set aside.
  • Meanwhile, remove the solidified fat from the stock and discard. Boil the stock in a saucepan, uncovered, until reduced to 500ml/18fl oz. Add the white wine and boil for 10 minutes, uncovered. Add the onions and sage and bring back to the boil. (Prepare in advance up to this point.)
  • To finish the sauce, pour in the cream and boil furiously for 4-5 minutes, season to taste. Serve in a warmed jug.

APPLE ONION SAUCE FOR PORK

This is excellent served with a pork roast or pork chops. Sometimes I add a little mustard to it as well. You can prepare this the day before and reheat it.

2 apples, coarsely diced (Granny Smith or similar)
2 medium onions, coarsely chopped
4 teaspoons dark brown sugar
2 tablespoons sherry wine
1 pinch salt

Steps:

  • Melt butter in a skillet, medium high heat.
  • Add apples and onions, cook until glossy 3-4 minutes.
  • Add sugar& salt.
  • Reduce heat to very low cover& cook until almost tender, 30 min, stir frequently.
  • Stir in the Sherry.
  • Continue cooking until the mixture is very soft.
  • Transfer to food processor and mix doing on/off.
  • Do not over process.
  • Serve while hot.

2 tablespoons olive oil
4 boneless pork chops (about 3/4 inch thick)
salt and pepper
1/4 cup balsamic vinegar
1/4 cup chicken broth
2 tablespoons unsalted butter, diced and softened
1 1/2 tablespoons chopped fresh sage
fresh sage leaf (to garnish)

Steps:

  • Heat 1 tablespoon of the olive oil in a large skillet over medium high heat.
  • Blot the surface of the pork chops dry and sprinkle with salt and pepper. In two batches, brown the chops about 5 minutes per side. Add the remaining oil for the second batch. Transfer to a platter and cover to keep warm.
  • Drain off any excess oil from the skillet and return it to the heat. Add the vinegar and chicken broth, stirring to loosen any brown bits from the bottom of the pan. Bring to a boil and reduce the liquid by half, about 3 to 4 minutes. once the liquid is thick and syrupy whisk in the butter. stir in the chopped sage and pour over the pork chops. Garnish with sage leaves.
