STRAWBERRY CREAM CHEESE MONKEY BREAD



Strawberry Cream Cheese Monkey Bread image

Strawberries and cream cheese are a classic combination, and they bring a fresh new taste to this sweet and gooey pull-apart bread.

3 cups Original Bisquick™ mix
2 tablespoons granulated sugar
1/4 cup unsalted butter, melted, slightly cooled
1/4 cup milk
1 teaspoon vanilla
3 eggs
1 cup packed light brown sugar
2 teaspoons ground cinnamon
1/2 cup unsalted butter, melted
1 cup sliced fresh strawberries
1 package (3 oz) cream cheese, softened
3 tablespoons powdered sugar
3 tablespoons milk
1/4 teaspoon vanilla

Steps:

  • Heat oven to 350°F. Lightly spray fluted tube cake pan with cooking spray.
  • In large bowl, stir together dough ingredients until well combined. Transfer dough to lightly floured work surface. Divide dough into 24 pieces; roll each piece into a ball.
  • In small bowl, stir together brown sugar and 2 teaspoons cinnamon. Dip 10 balls of dough into 1/2 cup melted butter, tapping off excess; roll in brown sugar-cinnamon mixture. Place coated balls in single layer to cover bottom of pan.
  • Spoon half of the strawberries over layer of dough. Dip 10 more balls of dough into butter and coat with brown sugar-cinnamon mixture; arrange in single layer over strawberries. Top with remaining strawberries. Dip remaining balls of dough into butter and coat with brown sugar-cinnamon mixture; arrange in layer over strawberries.
  • Bake 25 to 30 minutes or until top is golden brown.
  • Meanwhile, in small bowl, beat together glaze ingredients until smooth and creamy. If necessary, add more powdered sugar or milk to create a smooth, thick glaze.
  • Remove bread from oven; cool in pan on cooling rack 5 minutes. Place serving plate upside down over pan; turn plate and pan over. Remove pan. Top warm bread with cream cheese glaze. Serve immediately.

1 cup packed brown sugar
1/2 cup butter, cubed
2 tubes (12 ounces each) refrigerated flaky buttermilk biscuits
1/2 cup sugar
1 tablespoon ground cinnamon
8 ounces cream cheese, cut into 20 cubes
1-1/2 cups chopped walnuts

Steps:

  • In a small microwave-safe bowl, heat brown sugar and butter on high for 1 minute or until sugar is dissolved; set aside. , Flatten each biscuit into a 3-in. circle. Combine sugar and cinnamon; sprinkle 1/2 teaspoon in the center of each biscuit. Top with a cream cheese cube. Fold dough over filling; pinch edges to seal tightly., Sprinkle 1/2 cup walnuts into a greased 10-in. fluted tube pan. Layer with half of the biscuits, cinnamon-sugar and butter mixture and 1/2 cup walnuts. Repeat layers., Bake at 350° for 40-45 minutes or until golden brown. Immediately invert onto a serving platter. Serve warm. Refrigerate leftovers.

Awesome flavors!!! If you are a strawberry lover, this one is for you! A rich creamy texture to enjoy. The nuts are optional, but does add to flavor combination. If used, chopped pecans are recommended.

1/2 cup butter, softened
1 cup sugar
1 (3 ounce) cream cheese, softened
2 eggs
1 teaspoon vanilla extract
2 cups flour
2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1/2 cup milk (half 'n half)
1 1/2 cups strawberries, chopped
1/2 cup finely chopped pecans (optional)

Steps:

  • With electric mixer cream butter, sugar and cream cheese until fluffy. Add eggs one at a time. Mix in vanilla.
  • In separate bowl, mix flour, baking powder, baking soda and salt. Blend flour mixture with butter mixture just until blended. Add half 'n half and only stir just to blend -- do not overstir!
  • Drain strawberries and blot dry. Carefully just fold in strawberries and nuts. Dough mixture will be thick.
  • Grease and flour a 9x5 inch loaf pan. Bake in a 350 degree oven for 50 to 60 minutes. Let bread mellow for one day and then serve.

  • Preheat oven to 350. Spray bundt pan generously with cooking spray. Place 1/2 cup of pecans in the pan. Cut biscuits into quarters. Mix granulated sugar and cinnamon in a bowl. Dip each biscuit quarter in the sugar mixture. Place half of the biscuits in the bundt pan. Top biscuits with 1 cup of sliced strawberries.
  • Warm strawberry preserves in microwave for 20-30 seconds or until it is pourable and pour over strawberries. Place butter in a microwave-safe dish and melt butter in the microwave. Add brown sugar and mix together. Pour half of the brown sugar mixture over the strawberries. Top with 1/2 cup of pecans.
  • Layer the remaining biscuits on top. Place remaining strawberries and pecans on biscuits and pour remaining brown sugar mixture on top. Bake for 45-50 minutes until done.
