Sure, these flourless brownies are great for Passover-but they're also great any time of year for anyone who loves flourless chocolate cake!

1 pkg. (8 oz.) semi-sweet baking chocolate, divided
1 cup sugar
1/4 cup unsweetened cocoa powder
2 eggs, lightly beaten
1/2 cup oil
1/2 cup matzo meal
1/2 cup chopped PLANTERS Pecans
1 tsp. margarine
1/2 tsp. MAXWELL HOUSE Instant Coffee
1 Tbsp. hot water
3 Tbsp. BREAKSTONE'S Sour Cream
1/2 tsp. imitation vanilla

Steps:

  • Preheat oven to 350°F. Reserve 5 oz. of the chocolate; cut remaining 3 oz. chocolate into chunks. Mix sugar and unsweetened cocoa in large bowl until blended. Stir in eggs and oil. Mix in matzo meal, chocolate chunks and pecans. Spread into greased 8-inch square baking pan.
  • Bake 30 to 35 min. or until toothpick inserted in center comes out almost clean. (Do not overbake.) Cool in pan on wire rack.
  • Meanwhile, microwave reserved 5 oz. chocolate and margarine in large microwaveable bowl on HIGH 2 min. or until margarine is melted. Stir until chocolate is completely melted; set aside. Dissolve coffee in water. Stir in sour cream and vanilla. Add to chocolate mixture; mix well. Spread over cooled brownies. Cut into 16 squares to serve.

I experimented for years to come up with a brownie made with matzo ... this is the best!

5 eggs
2 ½ cups white sugar
1 ¼ cups vegetable oil
1 ¼ cups matzo cake meal
1 ½ cups unsweetened cocoa powder
1 ¼ cups chopped walnuts

Steps:

  • Beat eggs and sugar. Add oil. Mix in cake meal and cocoa. Add nuts (or use the nuts as a topping).
  • Bake in a greased 9 x 13 inch pan at 325 degrees F (165 degrees C) for 35 minutes. The secret to moist brownies, Pesach or otherwise, is to underbake them. Check them at 30 minutes. I also put nuts on top rather than in the brownies for two reasons: They make the top look good without having to frost them and, for those who don 't or can't eat nuts, they are easily removed without having to search for them.

1 cup white sugar
⅓ cup orange juice
⅓ cup cocoa powder
1 cup matzo cake meal
1 (10 ounce) package frozen strawberries, thawed
1 (12 ounce) bag semisweet chocolate chips

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease 2 6x8-inch baking pans.
  • Beat the eggs in a bowl with a fork; beat in the sugar, orange juice, cocoa, and cake meal until thoroughly blended. Gently stir in the strawberries and chocolate chips; divide the batter between the 2 prepared baking pans.
  • Bake in the preheated oven until a toothpick inserted near the center of a pan comes out clean, about 45 minutes.

1/2 cup plus 2 tablespoons unsalted butter, melted and slightly cooled
3/4 cup granulated sugar
2 large eggs
1 teaspoon vanilla extract
1/2 cup plus 2 tablespoons all-purpose flour
1/2 cup unsweetened cocoa powder
1/4 teaspoon salt
4 fresh strawberries-sliced and cut into heart shapes
1/2 cup semisweet chocolate chips- melted
1/2 cup semisweet chocolate chips or chunks- for garnishing

Steps:

  • Adjust the oven rack to the lower third position and preheat oven to 350°F. Line a 9x9 inch baking pan with parchment paper (making sure to leave some overhang), spray generously with non-stick baking spray and set aside.
  • In a large bowl, add the melted butter, melted chocolate and granulated sugar and whisk together until well combined. Add in the eggs and vanilla and whisk some more until fully combined.
  • Sift in the flour, cocoa powder, and salt. Using a rubber spoon, fold until just combined.
  • Pour the batter into the prepared baking pan and top with strawberry hearts and garnish with chocolate chip without covering the hearts.
  • Bake at 350°F for 25-27 minutes. Mine were perfect at 25 minutes
  • Remove from the oven and allow to cool completely before slicing.

6 oz bittersweet or semisweet chocolate, chopped
1 stick (1/2 cup) unsalted margarine or (if not keeping brownies pareve) butter, cut into pieces
3 large eggs
1 cup sugar
1/8 teaspoon salt
2 teaspoons finely grated fresh orange zest
3/4 cup matzo cake meal
3/4 cup walnuts, coarsely chopped (3 oz)
For glaze
3 tablespoons sugar
2 tablespoons unsweetened cocoa powder (not Dutch process)
1/3 cup sweet red kosher wine such as Concord
2 oz bittersweet or semisweet chocolate, chopped
3/4 stick (6 tablespoons) unsalted margarine or (if not keeping glaze pareve) butter, cut into pieces
16 walnut halves

Steps:

  • Make brownies:
  • Preheat oven to 350°F. Line bottom and sides of a 9-inch square baking pan with wax paper or greased foil.
  • Melt chocolate and margarine in a metal bowl set over a saucepan of barely simmering water, stirring until smooth. Remove from heat and cool 5 minutes.
  • Beat eggs, sugar, and salt in a large bowl with an electric mixer on high speed until pale and thick. Beat in chocolate in 3 batches on low speed. Stir in zest, matzo meal, and nuts just until blended.
  • Spread batter in baking pan and bake in middle of oven until firm and a tester comes out clean, 25 to 30 minutes. Cool in pan on rack, then invert onto a platter and remove paper or foil.
  • Make glaze:
  • Whisk together sugar, cocoa, and wine in a small saucepan. Bring to a boil, whisking, then simmer 2 minutes, whisking occasionally. Add chocolate and whisk until melted. Remove from heat and whisk in margarine until smooth. Chill glaze, stirring occasionally, until spreadable.
  • Spread glaze over brownies and arrange walnut halves on top. Cut into 16 squares with a large knife, wiping it off with a damp cloth between cuts.

Need a chocolate fix during the holidays? Though I'm not Jewish, this recipe looked intriguing to me so I'm saving it as a gift the next time I'm invited to a Seder. (Yes, in my kitchen it would not be Kosher, but my friends are not that religious.) The combination of fruits --raisins, bananas and applesauce -- should give these a very moist brownie like texture.

2 tablespoons potato starch
3 tablespoons water
1 cup sugar
1/4 cup unsweetened cocoa powder
1 dash salt
1 mashed ripe banana
1/4 cup unsweetened applesauce
1/2 cup matzo cake meal (If you don't have matzo cake meal, put some matzo meal in a blender to make it a bit more fine than)
1/4 cup raisins (make sure they are plump, not dry) or 1/4 cup currants (make sure they are plump, not dry)

Steps:

  • Preheat oven to 325 degrees.
  • Lightly grease an 8" x 8" glass pan.
  • Mix together in mixing bowl the potato starch and water. Add in the sugar, cocoa and a dash of salt. Once blended, add in the mashed banana, applesauce, matzo meal and raisins.
  • Pour batter into prepared pan and bake 25-30 minutes. Cut when cool.

0.25 teaspoons salt
0.5 cups water
0.5 teaspoons vanilla extract

Steps:

  • Heat oven to 350 degrees. Grease a 13x9x2 baking pan. Beat margarine in large bowl at medium speed until creamy. Gradually beat in sugar. Add eggs, one at a time, beating well after each addition.
  • Stir together cake meal, cocoa, potato starch, and salt. Add alternately with water and vanilla, beating until smooth. (Add chocolate chips and stir.)
  • Spread in prepared pan. Bake 30-35 minutes or until wooden pick comes out clean. Cool completely then cut into squares.
