These Strawberry Champagne Pops are the perfect treat to beat the summer heat. Filled with sweet champagne and fresh strawberries, these two ingredient pops are a delicious way to cool off all season long!

Steps:
- Pour champagne into pop molds, filling halfway.
- Add several sliced strawberries to each pop mold and then fill with champagne to the top of the pop mold, if needed.
- Add pop sticks to each mold and freeze until solid, for at least 2-3 hours.

Steps:
- Rinse and haul strawberries except one, leave with haul on used for decoration.
- Put the rest of the strawberries in a blender.
- Add vanilla, lemon juice, and sugar and puree.
- Pour into a tall champagne glass.
- Fill glass with ice cold champaign.
- Cut an opening in the bottom of the remaining strawberry and slide on edge of glass.
- Enjoy.

- In a small sauce pot, add the water, sugar, and lemon juice and bring to a slight boil. Boil for 5 minutes and until sugar dissolves. Set aside and let cool.
- Cut the green tops off the strawberries and slice them in half. Using a food processor, slightly puree the strawberries (I still wanted some chunks of strawberries in mine). Turn the strawberries to a bowl and combine with the simple syrup (which is the water and sugar liquid) and sparkling champagne. Slightly stir until well incorporated.
