STRAWBERRY BRUSCHETTA
Strawberry season is here! This is a fresh and healthy sweeter version of the traditional Italian finger food. Lovely for brunch, or for a light lunch alongside a nice salad, or up the sweet factor and serve as a healthier dessert option! Add the balsamic and olive oil at the very end to avoid soggy bread. STRAWBERRY BRUSCHETTA
This is so easy and so delicious. I love cream cheese and strawberries, so when I saw this I had to try it. Instead of using store-bought jelly, I had made some sugar-free strawberry freezer jam earlier and that's what I used. Deeelightful! This would be great for a tea party or just a bunch of gals getting together to chat.

- Wash the strawberries and place in a blender. Blitz until roughly chopped. Alternatively, you can cut the berries by hand into small pieces.Place in a bowl.
- Place the ricotta in a bowl. You can use just plain ricotta if you like (or any other soft cheese). I like to flavour my cheese, so I added some basil flavoured olive oil. You can use plain olive oil, skip this step completely or add some fresh or dried herbs to flavour the cheese. Mix well.
