I love fresh strawberries, and I try to enjoy as many as possible during the season. Because so many strawberry recipes are quite sweet, I wanted to start the meal with something savory, so I came up with strawberries, cheese and good bread. -Mary Leverette, Columbia, South Carolina

Number Of Ingredients 6

12 slices French bread baguette (1/4 inch thick)
1 tablespoon olive oil
1 round (8 ounces) Brie cheese, rind removed
1 cup sliced fresh strawberries
1 tablespoon balsamic vinegar
1-1/2 teaspoons minced fresh thyme or 1/2 teaspoon dried thyme

Steps:

  • Place bread on an ungreased baking sheet; brush with oil. Broil 3-4 in. from the heat for 1-2 minutes or until golden brown., Spread Brie over toast; top with strawberries. Drizzle with vinegar and sprinkle with thyme.

12 slices French bread (cut ½ inch thick)
1/3 cup butter (softened)
1/3 cup packed brown sugar
2 tsp ground cinnamon
12 slices about 12 oz brie cheese
1½ pounds about 4 to 5 cups sliced stemmed California strawberries
½ tsp vanilla extract
1 cup sliced almonds (toasted)

Steps:

  • Heat oven to 375ºF.
  • Spread 1 side of each bread slice with butter and arrange, butter side up, on a large baking sheet.
  • In a small bowl, combine sugar and cinnamon; sprinkle 1 teaspoon over each slice of bread. Reserve remaining sugar mixture.
  • Toast bread in oven for 5 minutes. Remove from oven and top each with 1 slice brie cheese.
  • Return to oven for an additional 4 to 6 minutes or until cheese is melted.
  • Meanwhile, in a large bowl, combine strawberries, vanilla and remaining sugar mixture; toss lightly.
  • Place two bruschetta on each serving plate. Spoon 1/3 cup strawberry mixture over each; sprinkle with almonds. Serve immediately.

12 slices French bread, cut 1/2 inch thick
1/3 cup unsalted butter, softened
1/3 cup brown sugar
2 teaspoons cinnamon
12 slices brie cheese (about 12 ounces)
1 1/2 lbs sliced stemmed strawberries (about 4-5 cups)
1/2 teaspoon vanilla extract
1 cup sliced almonds, toasted

Steps:

  • Heat oven to 375-degrees.
  • Spread 1 side of each bread slice with butter; arrange, butter side up, on large baking sheet.
  • In small bowl, combine sugar and cinnamon; sprinkle 1 teaspoon over each slice of bread.
  • Reserve remaining sugar mixture.
  • Toast bread in oven for 5 minutes and remove.
  • Top each slice with one slice of Brie; return to oven.
  • Bake an additional 4-6 minutes or until cheese is melted.
  • Meanwhile, in large bowl, combine strawberries, vanilla and remaining sugar mixture; toss lightly.
  • Place two bruschetta on each serving plate.
  • Spoon 1/3 cup strawberry mixture over each; sprinkle with almonds.
  • Serve immediately.
  • Note: to toast almonds, spread on even layer on baking sheet.
  • Bake in a 350-degree oven for 5-10 minutes or until light golden brown, stirring once or twice for even browning.

1 tablespoon butter, softened
2 cups chopped fresh strawberries
¼ cup white sugar, or as needed

Steps:

  • Preheat your oven's broiler. Spread a thin layer of butter on each slice of bread. Arrange bread slices in a single layer on a large baking sheet.
  • Place bread under the broiler for 1 to 2 minutes, just until lightly toasted. Spoon some chopped strawberries onto each piece of toast, then sprinkle sugar over the strawberries.
  • Place under the broiler again until sugar is caramelized, 3 to 5 minutes. Serve immediately.

1 teaspoon grated lemon zest
2 teaspoons lemon juice
3 cups strawberries (sliced or diced)
4 tablespoons mascarpone (Italian cream cheese)

Steps:

  • Toast bread in a toaster.
  • Meanwhile, heat a large skillet over high heat. Add sugar, lemon zest and lemon juice and cook, stirring, until the sugar melts and the mixture begins to bubble, 30 seconds to 1 minute. Add strawberries and stir until juices begin to exude and the berries are heated through, 30 seconds to 1 minute more.
  • Spread 1 tablespoon mascarpone on each piece of toast. Top with the warm berries.
