QUICK AND EASY BARBECUE RUB
This rub is my personal recipe, settled on after lots of experimenting. It's great on ribs, brisket, and pork butt. Quick and easy from ingredients everyone usually has. This recipe makes enough for 2 to 3 full racks of baby back ribs, depending on how liberally you coat them. For those that are new to barbecuing/smoking, 'rub' is a misnomer, as you're really just coating the meat and not actually rubbing it in. Generally, I'll rinse and pat dry the meat I'm prepping then apply a thin coat of yellow mustard so that the rub sticks.

- In small heavy bottomed skillet, toast star anise, cinnamon stick, fennel seeds, peppercorns, cloves over medium heat, stirring until fragrant 2-3 minutes. Let cool; transfer to spice grinder. Grind until blended. Place spice mixture in small bowl; stir in brown sugar, salt, cayenne pepper and garlic powder.

- Preheat oven to 350 degrees F. Using a sharp knife, cut a criss-cross diamond pattern into the top of pork about 1/4-inch deep. Season pork roast with salt and pepper and place in a 9- x 13-inch baking dish.
- In a small bowl, combine remaining ingredients; mix well. Pour half the barbecue mixture over the pork.
- Roast 25 minutes, then pour the remaining sauce over the pork. Continue roasting 15 to 20 minutes more or until internal temperature reaches 155 degrees F. to 160 degrees F. Let roast sit 5 to 10 minutes, then slice and serve with sauce from pan.
