BANANA SQUARES
When we were first married, my husband was in the Navy. Stationed in Puerto Rico, we had banana trees growing in our yard, so I found ways to use dozens of ripe bananas at a time. I made these banana squares often. They freeze well and make a great snack to have on hand when friends drop in for coffee. -Susan Miller, Raleigh, North Carolina

FROSTED BANANA BARS
These banana bars are always a hit at potlucks in the small rural farming community where my husband and I live. I also like to provide them for coffee hour after church. They're so moist and delicious that wherever I take them, they don't last long. -Karen Dryak, Niobrara, Nebraska

Steps:
- Mix together the cake mix, eggs, and vegetable oil.
- Drop by teaspoonful onto foil covered cookie sheet. Cook at 350 degrees F (175 degrees C) for 7 to 8 minutes. Do not overbake. (Overbaking will cause your cookies to be hard as rocks!)
- Once your cookies are all done, lightly dust with confectioners' sugar. Place in container with the banana (leave the peel on), and cover with the foil from the baking sheet. After a couple of hours, or overnight, the cookies will take on some of the banana flavor and taste great! I discovered this by accident when I sent the strawberry cookies and a banana together for the dessert in my husband's lunch!

- Add the strawberries and maple syrup to a medium saucepan set over medium heat. Heat until the berries begin to release their juices, about 5-15 minutes depending on whether or not they were thawed. Bring to a gentle boil, stirring occasionally, until the berries begin to reduce and thicken, about 5 -10 minutes. Use your spoon or a potato masher to break them apart further.
- Preheat your oven to 375°F (190°C) and prepare an 8 x 8 (20 x 20 cm) baking pan by lining it with a sheet of parchment paper, leaving a few inches of overhang on the sides to allow for easy removal. Set aside.

- Blend all of the ingredients together on high speed until smooth – about 2 minutes. Scrape down the sides of the blender as needed as you go.
- Pour the mixture into popsicle molds. If your popsicle mold has slots for sticks, you can insert them before freezing – if not, freeze for 2 hours, then put a wooden popsicle stick in the middle (that is what I did). Continue to freeze for an additional 6 hours or overnight – overnight is recommended for easy removal.
