Bananas and strawberries play nicely together in this sweet and tart quick bread.

1/2 cup vegetable oil, plus more for greasing the pan
1/2 cup plus 2 tablespoons walnuts
1 1/2 cups all-purpose flour
3/4 cup sugar
1 teaspoon baking powder
1/2 teaspoon ground cinnamon
1/2 teaspoon freshly grated nutmeg
1/2 teaspoon fine salt
2 large eggs
1 teaspoon pure vanilla extract
1/2 teaspoon lemon zest
2 very ripe bananas, mashed
8 ounces strawberries, hulled and cut into 1/4- to 1/2-inch pieces

Steps:

  • Preheat the oven to 350 degrees F. Grease a 9- by 5-inch loaf pan.
  • Roughly chop 1/2 cup of the walnuts, and finely chop the remaining 2 tablespoons, keeping them separate.
  • Whisk together the flour, sugar, roughly chopped walnuts, baking powder, cinnamon, nutmeg and salt in a medium bowl.
  • Whisk together the oil, eggs, vanilla and zest. Fold in the bananas and strawberries. Fold the oil mixture into the flour mixture until just combined (it's OK if there are some lumps). Transfer the batter to the prepared pan, and sprinkle the top with the finely chopped walnuts.
  • Bake until the bread is golden brown and a toothpick inserted in the center comes out clean, 1 hour to 1 hour 10 minutes. Run a knife around the edges, and let cool completely in the pan on a rack. The bread can be stored at room temperature in an airtight container for up to 3 days.

1 1/2 cups granulated sugar
1 1/2 sticks (12 tablespoons) unsalted butter, plus more for buttering the pan, slightly softened
3 large eggs
1/2 cup sour cream
1 teaspoon almond extract
1 1/2 cups all-purpose flour
1/4 teaspoon kosher salt
1 pound strawberries, hulled, half sliced and half cut in half
1/4 cup brown sugar
1 1/2 tablespoons all-purpose flour
1 tablespoon salted butter, cold and cubed
1/4 teaspoon kosher salt
1/4 cup sliced almonds
1 cup confectioners' sugar
1 tablespoon plus 1 teaspoon lemon juice

Steps:

  • For the cake: Preheat the oven to 325 degrees F.
  • In the bowl of an electric mixer fitted with a paddle attachment, cream together the granulated sugar and butter. Add the eggs 1 at a time, mixing after each addition. Add the sour cream and almond extract and mix to combine. Turn the mixer to low and gradually add the flour and salt and mix until well combined, scraping the bowl. Fold in the sliced strawberries.
  • For the topping: Combine the brown sugar, flour, butter and salt in a medium bowl and cut together using 2 knives or a pastry cutter until it resembles crumbs. Mix in the almonds.
  • Generously butter a 10-inch cast-iron skillet. Pour the batter into the skillet and even out the surface. Press the remaining halved strawberries into the surface of the batter cut-side down, leaving them mostly exposed. Scatter the crumble over the top of the batter. Bake until a toothpick inserted in the center does not come out totally clean but isn't wet with batter either, about 1 hour. Let the cake sit in the skillet for 30 minutes. Meanwhile, make the glaze.
  • For the glaze: Whisk together the confectioners' sugar and lemon juice. Using a fork or whisk, drizzle over the cake. Serve directly out of the skillet.

  • In a saucepan, combine the sugar, cornstarch and gelatin; stir in water until smooth. Bring to a boil; cook and stir for 2 minutes or until thickened. Remove from the heat. Stir in strawberries; set aside. , In a large bowl, combine milk and pudding mix. Beat on low speed for 2 minutes; set aside. Toss bananas with lemon juice; drain and set aside. , Place half of the cake cubes in a trifle bowl or 3-qt. serving bowl. Layer with half of the pudding, bananas, strawberry sauce and whipped cream. Repeat layers. Cover and refrigerate for at least 2 hours. Garnish with additional fruit if desired.

16 ounces cream cheese, softened
2 (3 ounce) packages vanilla instant pudding mix
1/2 cup icing sugar
1 cup milk
8 cups mashed strawberries
1/4 cup kirsch
1 cup granulated sugar
2 loaves poundcake
1 cup whipping cream

Steps:

  • Beat the cream cheese, pudding mix, icing sugar and milk in a mixer bowl at high speed until smooth.
  • Combine the strawberries, kirsch and sugar in a medium bowl, mixing well.
  • Remove 1 cup of the strawberry mixture.
  • Puree in a food processor and reserve.
  • Slice the pound cake into 1/2 inch slices.
  • Line a 9x13 inch dish with a layer of cake.
  • Layer 1/3 of the cream cheese mix, 1/3 of the strawberry mixture, remaining cake slices in prepared dish.
  • Layer half the remaining cream cheese mix, half the remaining strawberry mixture, remaining cake and remaining cream cheese mixture.
  • Swirl the remaining strawberry mixture over top.
  • Chill for 4-8 hours.
  • Beat whipping cream in small mixer bowl until stiff peaks form.
  • Cut the dessert into 3 inch squares to serve.
  • Top with reserved strawberry puree and whipped cream.

1 (8 ounce) package cream cheese, at room temperature
2 ¼ cups white sugar
1 teaspoon vanilla extract
4 large eggs
2 ½ cups cake flour
½ teaspoon baking powder
2 cups chopped fresh strawberries

Steps:

  • Preheat the oven to 325 degrees F (165 degrees C). Grease and flour a fluted tube pan (such as Bundt®).
  • Beat butter and cream cheese together in a large mixing bowl until smooth. Add sugar and beat until smooth and fluffy. Add vanilla extract and beat in eggs one at a time. Add 1 cup of flour and baking powder and mix until smooth. Beat in another 1 cup of flour until smooth; mix in remaining flour. Fold in strawberries gently. Spoon batter into the prepared pan.

Steps:

  • Preheat oven to 350 degrees. Grease and flour 2 (8 1/2x4 1/2x2 1/2") loaf pans.
  • Using an electric mixer, beat butter at medium speed until creamy. Gradually add sugar, beating until fluffy. Add eggs, one at a time, beating well after each addition. Beat in extracts.
  • In a small bowl, combine flour and salt; gradually add to butter mixture, beating just until combined. Stir in sour cream and strawberries. Divide mixture evenly between prepared pans. Bake 55 to 60 minutes, or until a tester inserted in center comes out clean. Cool cakes in pans on a wire rack 10 minutes. This is one of the best trifles, angel food cake, fruit, and then a delicious light whipped fluff in between the layers, this is SO DELICIOUS!!!! This can be completely prepared well in advance and refrigerated until serving which makes this the perfect dessert to serve to guests. You can change the fruit to whatever you like and use whatever flavor pudding mix you like, you could use a chocolate angel food cake instead of the white. Make certain to soak the banana slices in the pineapple juice for about 5-8 minutes so they will not turn brown. This can really be layered anyway you desire, you will get rave reviews when you serve this to family or friends!

1 (12 ounce) container cool whip frozen whipped topping, thawed (or use whipped cream)
1 (8 ounce) container sour cream

3 large kiwi fruits, peeled and sliced
1 pint fresh strawberries, sliced

Steps:

  • Prepare a large clear glass trifle bowl or a large glass serving bowl.
  • Drain the pineapple then soak the banana slices in the juice for 5-8 minutes before using for the trifle.
  • In a bowl fold the sour cream with the unprepared cream cheese pudding mix and Cool Whip topping until well combined.
  • Using a serrated knife slice the cake into thirds horizontally.
  • Line the large trifle dish with strawberry and kiwi slices (save some strawberry slices to decorate the top of the trifle).
  • Place one layer of the cake into the bottom if the trifle dish, then top with 1/3 of the banana slices and then spoon and spread 1/3 of the crushed pineapple, then 1/3 of the Cool Whip topping mixture.
  • Repeat with the second cake slice, bananas, pineapple then Cool Whip topping.
  • Repeat one more time ending with the Cool Whip mixture on top.
  • Top with the reserved strawberry slices in decorative fashion.
  • Refrigerate until serving.

This is a variation of a Lemon Jello Pound Cake I found on another recipe site. I'm experimenting with cake decorating/sculpting, and it carves rather nicely. It called for lemon jello instead of strawberry, lemon extract instead of vanilla, and apricot nectar instead of orange juice. I will continue to experiment with different flavors of jello, extracts, and juices. I would like to encourage you to do the same and post your variations in your reviews. NOTE: For my purposes, I used cupcake tins for my layers, so I've set the servings accordingly. UPDATE: Originally, I posted this with orange juice instead of strawberry-banana nectar, so the first 2 reviews reflect that. I have since tried strawberry-banana nectar, and I like it much better for the strawberry flavor. If you want to try what's been reviewed or can't find the nectar, try the OJ. It's just got a little bite to it where the nectar is a more mellow flavor.

1 cup strawberry preserves
1/4 cup strawberry liqueur or orange juice
2 pints strawberry sorbet, softened
2 pints banana-strawberry frozen yogurt, softened
1 10-ounce package frozen sliced strawberries in syrup, thawed
3 large ripe bananas, peeled, cut diagonally into 1/4-inch-thick slices
Sliced fresh strawberries

Steps:

  • Cut cake into 1/4-inch-thick slices. Arrange enough slices in bottom of 9-inch-diameter springform pan with 2 3/4-inch-high sides to just cover bottom, fitting tightly. Cook preserves and liqueur in heavy small saucepan over medium heat until reduced to 2/3 cup, stirring frequently, about 14 minutes. Spread half of preserves mixture over cake in pan. Freeze 10 minutes. Spoon sorbet over cake in pan; smooth top. Arrange more cake slices over to just cover sorbet. Spread remaining preserves mixture over cake. Freeze 10 minutes.
  • Spoon frozen yogurt over cake; smooth top. Cover and freeze overnight. (Can be prepared 1 week ahead.)
  • Puree thawed berries in processor. Cover and refrigerate until cold. (Sauce can be prepared 2 days ahead.)
  • Release pan sides from cake. Place banana slices around cake edge. Mound berries in center. Serve cake with sauce.
