BANANA STRAWBERRY MUFFINS
Just received this in an email from Back of the Box Recipes. Haven't tried it yet, but it sure looks delicious! These would be best served warm out of the oven.

Steps:
- Preheat oven to 375°.
- Line 12 muffin cups with paper baking cups.
- Combine sugar, oil and eggs and blend well.
- Stir in bananas and vanilla.
- Lightly spoon flour into measuring cup and level off.
- Add flour, baking soda and salt to sugar mixture and stir just until combined.
- Stir in strawberries.
- Spoon batter evenly into lined muffin cups.
- Bake for 17 to 21 minutes or until toothpick inserted in center comes out clean.
- Immediately remove from muffin cups.

- Heat oven to 350 degrees. Mash bananas in a medium sized bowl and set aside. Beat together butter and sugars. Beat in egg. Sift together flour and baking powder. Add to butter/sugars/egg mixture. Beat well. Fold in mashed bananas and sliced strawberries. Grease 12 muffin tins or use paper liners. Fill tins right to the top with batter. Bake at 350 degrees for 25 minutes or until toothpick inserted in a muffins comes out clean 12 Large Muffins

Steps:
- Preheat oven to 375F (190C). In a large bowl, combine flour, baking powder and baking soda.
- Cut in butter with pastry blender or two knives until mixture is crumbly.
- Stir in bran and nuts.
- In a medium bowl, lightly beat egg; stir in banana, yogurt, brown sugar and molasses.
- Add to dry ingredients, all at once, stirring just until moistened.
- Divide batter evenly among 12 medium greased muffin cups.
- Bake 20 minutes or until toothpick inserted in centre comes out clean.
- Cool 10 minutes in cups on wire racks.
- Remove from cups and let cool completely.
- Serve with Strawberry Butter.
- Straw berry Butter: Cream together 1/2 cup (125 mL) softened butter and 1/2 cup (125 mL) strawberry jam. Makes about 1 cup (250 mL).
- TIP: Add a topping treat to your muffins before you bake them. Over batter in muffin cups, sprinkle quick-cooking rolled oats, cinnamon and sugar, sesame seeds or chopped nuts.

Lots of strawberries from last summer, and need to make some room in the freezer. I made a triple batch of these for a wedding social, they were gone in a flash!

Steps:
- Preheat oven to 375 degrees F. Line a muffin pan with paper liners.
- Combine the butter, milk, and egg in a small bowl and beat it lightly. In a larger bowl, pour in your flour, salt, baking powder, and sugar and gently mix it. Toss in the chopped strawberries and sliced banana, then stir to coat with the flour mixture. Pour in your milk mixture and stir it all up together.
- Fill up the muffin cups with your batter, then place in the oven and bake for 25 to 30 minutes.
- Let them cool down for 10 minutes, then remove from the pan and serve these bad boys up.
