10 tablespoons unsalted butter, softened, plus more for greasing insert
1/2 cup firmly packed light brown sugar
2 tablespoons dark rum
1/2 ripe pineapple, peeled, cored and cut into 1/4-inch-thick slices
1 cup all-purpose flour
1/2 cup pecans, toasted and finely chopped
3/4 teaspoon baking powder
1/2 teaspoon ground cinnamon
1/4 teaspoon freshly grated nutmeg
Fine salt
2/3 cup granulated sugar
2 large eggs, at room temperature
1 teaspoon pure vanilla extract
2 tablespoons whole milk
1/2 cup heavy cream
1 tablespoon confectioners' sugar
1 tablespoon chopped maraschino cherries, plus whole for garnish

Steps:

  • Butter the inside of a 4-quart slow cooker insert. Line it completely with a double layer of foil, then butter the foil. Cut up 4 tablespoons of the butter and sprinkle in the bottom of the insert, along with the brown sugar and rum. Arrange the pineapple slices in overlapping circles to completely cover the bottom of the insert; press into the sugar mixture.
  • Combine the flour, pecans, baking powder, cinnamon, nutmeg and 1/2 teaspoon salt in a medium bowl.
  • Combine the remaining 6 tablespoons butter and the granulated sugar in the bowl of a stand mixer fitted with a paddle attachment (or in a large bowl if using a hand mixer) and beat on medium-high speed until light and fluffy, about 3 minutes. Scrape down the sides of the bowl and beat in the eggs and vanilla until incorporated.
  • Reduce the speed to low and beat in the flour mixture until just incorporated. Add the milk, increase the speed to medium-high and beat until smooth, about 30 seconds. Evenly spread the batter over the pineapples in the slow cooker.
  • Drape a double layer of paper towels over the top of the slow cooker (without touching the cake) to prevent condensation from dripping from the cover onto the cake. Cover and cook on low until a toothpick inserted in the center comes out clean, 3 to 4 hours. Turn off the slow cooker and let the cake rest for 20 minutes.
  • Lift the cake by the foil and place on a rack to cool (it can be served warm or at room temperature). Carefully invert onto a platter and peel off the foil.
  • Whip the cream until soft peaks form. Fold in the confectioners' sugar and chopped cherries. Serve slices of cake with a dollop of whipped cream and a cherry on top.

3 (15 ounce) cans sliced peaches in heavy syrup, drained well
5 tablespoons butter, melted
⅔ cup packed light brown sugar
1 teaspoon cinnamon
½ teaspoon nutmeg
1 ½ sticks butter, softened

2 large eggs
½ teaspoon pure almond extract
2 cups flour
2 teaspoons baking powder
½ teaspoon salt
1 cup whole milk

Steps:

  • Spread peach slices between several layers of paper towels and let dry, gently pressing occasionally and replacing any soaked towels, 20 minutes.
  • Meanwhile, pour melted butter over bottom of a 6-quart oval slow cooker. Stir together brown sugar, cinnamon, and nutmeg in a bowl and sprinkle over butter.
  • Arrange peaches in a tight layer over brown sugar. (You may need to make a partial second layer to fit them all in.)
  • Beat softened butter with white sugar in a large bowl with an electric mixer until light and fluffy, about 3 minutes. Beat in eggs, 1 at a time, beating well after each addition. Beat in almond extract.
  • Whisk together flour, baking powder, and salt in a separate bowl. Working in batches, stir flour mixture into egg mixture alternately with milk, beginning and ending with flour mixture. Mix batter until well combined. Spoon over peaches and spread evenly.
  • Drape paper towels over top of slow cooker (to absorb any condensation during baking), then cover with lid. Cook on High until a wooden skewer inserted into center of cake comes out clean, 2 to 2 1/2 hours.
  • Remove lid and paper towels. Using oven mitts, remove ceramic liner from slow cooker and let cool 10 minutes. Run a knife around edge of cake and carefully turn out onto a serving platter.

1 1/4 cups water
1/2 cup vegetable oil

1 (16 ounce) container betty crocker milk chocolate frosting
1/2 cup store-bought caramel sauce

Steps:

  • Spray the inside of a slow cooker with cooking spray. Line the inside with foil, then spray the foil.
  • In a large bowl, beat together cake mix, water, oil, eggs, butter and 1/3 can of sweetened condensed milk on low speed 30 seconds, then on medium speed for 2 minutes, scraping bowl occasionally.
  • Pour half of the cake batter into the bottom of prepared slow cooker. Cover and turn on HIGH. Bake 1 1/2 hours or until cake is just set.
  • In a medium bowl, combine caramel bits and another 1/3 can of sweetened condensed milk. Microwave for 2 to 3 minutes, then stir to melt caramel bits. 3/4 teaspoons baking powder
1/2 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1/4 teaspoon fine salt
4 tablespoons unsalted butter, softened (1/2 stick)
2/3 cups sugar
1 large egg, at room temperature
1 large egg yolk, at room temperature
2 tablespoons whole milk, at room temperature

Steps:

  • Bananas: Butter the inside of a slow cooker, line completely with foil, and then butter the foil. Turn on to HIGH. Sprinkle butter, brown sugar and rum over the foil on the bottom of the slow cooker. Cover the bottom with the banana halves, cut side down, in a slightly overlapping pattern. My friend/co-worker Pat makes the best desserts. When she brought this cake to work we all begged for the recipe! It is worthy of company. She accredits it to the Cafe Latte in St. Paul, Minnesota as shared in Midwest Living magazine. (Cooking time reflects chilling time).

unsweetened cocoa powder, for dusting
1 egg, slightly beaten
1 cup buttermilk or 1 cup sour milk
2/3 cup vegetable oil
2 cups flour (I use unbleached)
2 3/4 cups sugar
1/2 cup unsweetened cocoa powder
1 tablespoon baking soda
1 teaspoon salt
1 cup brewed coffee, hot
2 teaspoons brewed coffee, hot
1/2 cup milk
6 tablespoons butter
1 (12 ounce) package semisweet chocolate pieces (2 cups)
1 1/2 cups pecan halves, toasted
3/4 cup caramel topping

Steps:

  • Preheat oven to 350°F.
  • Grease three 9-inch round cake pans.
  • Line the bottom of each with parchment paper.
  • Grease the paper.
  • Dust with unsweetened cocoa powder.
  • In a small bowl combine the egg, buttermilk and oil; set aside.
  • In a large bowl, sift together flour, 1 3/4 cup sugar, 1/2 cup cocoa powder, baking soda and salt.
  • Gradually add buttermilk mixture to flour mixture, beating with an electric mixer until combined.
  • Gradually beat in 1 cup hot brewed coffee.
  • Pour batter into prepared pans; spread evenly. (Layers will appear shallow).
  • Bake for 25 to 30 minutes or until a wooden pick inserted near center comes out clean.
  • Cool in pans on wire racks 10 minutes.
  • Loosen sides from pans, invert cakes on racks.
  • Remove cakes from pans.
  • Peel off paper; cool thoroughly.
  • When cool, prepare the frosting.
  • In a small saucepan, combine 1 cup sugar and 1/2 cup milk.
  • Add 6 Tablespoons butter.
  • Bring to boiling, stirring constantly.
  • Remove from heat.
  • Add 12 semi-sweet chocolate pieces.
  • Whisk until smooth.
  • If frosting seems to thick or grainy, stir in 1 to 2 teaspoons freshly brewed hot coffee.
  • (Frosting makes about 2 1/2 cups).
  • Place 1 cake layer, top-side DOWN, onto a serving plate.
  • Using an icing spatula or wide knife, work quickly to frost top of this layer with 1/3 of the frosting, pushing it out slightly from edges to make ripple or pedal effect.
  • Arrange 1/3 of the pecans on top and drizzle with 1/4 cup of the caramel topping.
  • Top with the second layer, top-side DOWN.
  • Repeat the above frosting steps with 1/3 of the frosting, pecans and caramel topping.
  • Top with the third layer, right side UP.
  • Repeat with frosting, pecans and caramel topping.
  • Chill cake 1 to 2 hours before serving.

5 ounces evaporated milk (not sweetened condensed milk)
1 (18 ounce) box German chocolate cake mix, with pudding (the one that uses oil)
3 eggs (or as called for by your cake mix)
1/4 cup oil (1/2 the quantity called for by the cake mix)
1 1/3 cups water (or as called for by your cake mix)
3/4 cup butter, room temp
12 ounces semi-sweet chocolate chips
2 cups pecans, chopped

Steps:

  • Heat oven to 350*.
  • Line 13x9 pan with foil and lightly grease the foil.
  • In small saucepan, slowly heat caramels and milk stirring until melted.
  • Prepare cake.
  • Beat on low 1 minute, add butter, beat on hi 2 minutes.
  • Spread 1/2 the batter in pan.
  • Bake for 13 minutes.
  • Pour caramel mix over cake; spread to edges.
  • Sprinkle with 1 cup choc chips and 1 cup pecans.

1 (18 1/4 ounce) box betty crocker super moist German chocolate cake mix
1 1/3 cups water
1/2 cup vegetable oil

1 (14 ounce) bag Kraft caramels (unwrapped)
1/2 cup butter
2 (12 ounce) bags of nestle milk chocolate chips
1 cup of chopped pecans (I have taken these out if I know there is someone with a nut allergy) (optional)

Steps:

  • Preheat oven to 350°F
  • Mix cake mix per box directions. Pour 1/2 of cake batter into a well greased 13 X 9 pan. Bake until cake begins to pull away from sides of pan (15-20 minutes).
  • In a non stick heavy sauce pan, melt butter, caramels and condensed milk until creamy and there are no lumps from candies.
  • Add one bag of chocolate chips to the layer of cake in pan, add nuts, then pour on caramel sauce, then top with 2nd bag of chocolate chips and remaining cake batter.
  • Return to oven and cook until top layer of cake springs back at touch (about 30 minutes).
  • Cool, cut and serve.
  • This always taste better if made a day ahead.

My husband raved about it and finished it off in less than 24 hours. He loved the caramelized edges, while I particularly enjoyed the delicious cake. I did not find it too spicy, but actually a good compliment to the sweetness of the bananas.
