CHOCOLATE MATCHA PUFFED CEREAL TREATS

Steps:

• Spray an 8-by-8-inch baking dish with nonstick cooking spray.
• In a medium saucepan, melt the butter. Add the marshmallows and stir until they melt. Remove the pan from the heat, add the puffed rice cereal and matcha powder and mix to combine. Press the mixture into the prepared dish and let stand until the treats have set, about 10 minutes. Cut into 2-by-2-inch squares and transfer to a plate.
• Set a wire rack on a baking sheet. Melt the dark chocolate and coconut oil together in a microwave or double boiler. Dunk the bottom of each square into the melted chocolate mixture to coat and place on the wire rack to set.

STRAWBERRY CEREAL TREATS

Steps:

• Lightly coat two 12-cup muffin pans and a rubber spatula with cooking spray. Sprinkle a few crushed freeze-dried strawberries into the bottom of each muffin cup; set aside.
• Melt the butter in a large saucepan over medium heat. Add the honey, marshmallows, vanilla and salt; stir with the rubber spatula until completely melted. Add the cereal and the remaining crushed freeze-dried strawberries and stir until incorporated.
• Divide the mixture between the prepared muffin pans, firmly packing it in; let set, about 20 minutes. Gently pry out of the pans. Store in an airtight container up to 3 days.

LEMONADE CEREAL TREATS

Steps:

• Line a 9-by-13-inch baking dish with foil, leaving a 2-inch overhang; coat with cooking spray. Melt 4 tablespoons butter in a large pot over low heat. Stir in 10 ounces mini marshmallows until melted and smooth. Stir in 1 tablespoon each grated lemon zest and lemon juice and 1/2 teaspoon vanilla. Off the heat, stir in 6 cups crisp rice cereal, 12 crushed Lemonades and 1/2 cup white chocolate chips. Press the mixture into the pan and let set. Cut into pieces.
