From Chef Ryan Nolan of the Water City Grill. I have made this a few times now and it is delicious and beautiful. Most recently I made this with Lorrie in Montreal's Recipe #322067 #322067. I highly suggest trying these recipes together.

1 lb mango, diced
1 lb strawberry, diced
1/4 cup sugar
1/4 cup water
1 pinch salt
1 (10 ounce) sara lee all purpose butter pound cake, sliced thin and toasted in oven
2 mint sprigs

Steps:

  • In a large mixing bowl, toss strawberries and mangos together.
  • In a small sauce pan, bring water and sugar to boil and allow to cool.
  • Pour small amount of sugar water over mango mixture and add pinch of salt.
  • Serve with mint sprig and toasted pound cake.

2 to 3 tablespoons unsalted butter
10 strawberries, sliced
3 to 5 teaspoons sugar

Steps:

  • Heat a grill pan over medium-high heat. Grill the bread until golden brown, about 2 minutes per side. Spread the butter over the toasts. Arrange the sliced strawberries over the toasts. Sprinkle the strawberries with the sugar. Broil until the sugar begins to caramelize, about 2 minutes.

3 tablespoons olive oil
1 teaspoon minced fresh thyme or 1/4 teaspoon dried thyme
1 teaspoon minced fresh rosemary or 1/4 teaspoon dried rosemary, crushed
1/4 teaspoon salt
1/4 teaspoon pepper
24 slices French bread baguette (1/2 inch thick)
1/2 pound fresh goat cheese
2 cups chopped fresh strawberries
2 cups fresh arugula or fresh baby spinach, chopped

Steps:

  • In a small bowl, combine the first five ingredients. Place bread on ungreased baking sheets; brush with oil mixture. , Broil 3-4 in. from the heat until lightly browned, 1-2 minutes. Spread with goat cheese. Broil until cheese begins to melt, 2-3 minutes longer., In a small bowl, combine strawberries and arugula; layer over cheese.

6 tablespoons light brown sugar
1 teaspoon grated lemon zest
2 teaspoons lemon juice
3 cups strawberries (sliced or diced)
4 tablespoons mascarpone (Italian cream cheese)

Steps:

  • Toast bread in a toaster.
  • Meanwhile, heat a large skillet over high heat. Add sugar, lemon zest and lemon juice and cook, stirring, until the sugar melts and the mixture begins to bubble, 30 seconds to 1 minute. Add strawberries and stir until juices begin to exude and the berries are heated through, 30 seconds to 1 minute more.
  • Spread 1 tablespoon mascarpone on each piece of toast. Top with the warm berries.

This is so easy and so delicious. I love cream cheese and strawberries, so when I saw this I had to try it. Instead of using store-bought jelly, I had made some sugar-free strawberry freezer jam earlier and that's what I used. Deeelightful! This would be great for a tea party or just a bunch of gals getting together to chat.

1 (8 ounce) baguette-style French bread
1 (8 ounce) container cream cheese
1 tablespoon honey
2 cups strawberries, sliced
1/4 cup strawberry jelly

Steps:

  • Heat oven to 375 degrees.
  • Cut bread into 24 slices about 1/4-inch thick. Place in a single layer on an ungreased cookie sheet. Bake about 10 minutes or until lightly brown, turning once.
  • Stir together cream cheese and honey; spread on one side of each bread slice.
  • Arrange strawberry slices on the cheese.
  • Heat jelly in a custard cup in a microwave oven on high power for 30 seconds; stir (or heat and stir in a small saucepan until melted). Brush jelly over strawberries.
  • Serve with a few whole berries to decorate the tray.
