  • Hull and quarter 1 quart strawberries. Toss with 1 teaspoon sugar in a large bowl. Sprinkle a layer of gingersnap crumbs or graham cracker crumbs in the bottom of parfait glasses. Top with the berries. Mix 1 cup nonfat Greek yogurt with 2 tablespoons honey and 1/2 teaspoon cinnamon, then spoon over the berries.

Strawberry parfait is a delightful summer dessert that can be made so quickly and easily with fresh fruit, cream, and amaretto-soaked biscotti.

12 amaretti biscuits
2 tablespoons amaretto liqueur
2 cups fresh strawberries
1 1/2 cups heavy cream
1 teaspoon vanilla extract
2 tablespoons powdered sugar

Steps:

  • Gather the ingredients.
  • Place the amaretti biscuits in a plastic bag and gently crush using a rolling pin until they resemble coarse sand. Remove a couple of tablespoons and keep to the side for garnish. Spoon an even amount into the base of four glass dessert dishes or wine glasses. Press the crushed biscuit crumb firmly with the back of a spatula, then carefully, without disturbing the crumb, spoon over the amaretto. Pop the glasses into the refrigerator while you prepare the rest of the parfait.
  • Wash, hull , and dry the strawberries.
  • Choose three or four of the largest, well-shaped strawberries and slice as thinly as you can. Then, finely chop the remaining strawberries. Once the biscuit base is chilled, take the slices and lay evenly into the base and up the sides of the glasses in an even line. Repeat with a second row behind and overlapping with the previous fruit, reserving a few slices of strawberry for decoration. Fill the well in the middle of the sliced fruit with half of the chopped strawberries. Return the glasses to the refrigerator.
  • Whip the cream, vanilla extract, and confectioners' sugar using a stand or hand mixer to create stiff peaks. Take care not to overwhip the cream, which can soon become over-stiff and will be hard to pipe into the glasses.
  • Pipe the cream into each glass using a piping bag fitted with a large plain nozzle or layer using a spoon. Top with another layer of chopped strawberries and finish with more cream. Decorate with a few slices of strawberries and a little amaretti crumb.
  • Serve. If the parfaits are not to be eaten immediately, cover each glass with plastic wrap and keep in the refrigerator. They are best eaten the same day.

3 Tbsp. (1/2 of 3-oz. pkg.) JELL-O Strawberry Flavor Gelatin
1/2 cup cold water
1 pkg. (3.4 oz.) JELL-O Vanilla Flavor Instant Pudding
2 cups cold milk
8 square shortbread cookies, coarsely crushed (about 1/2 cup)
1/2 cup quartered strawberries

Steps:

  • Add boiling water to gelatin mix in medium bowl; stir 2 min. until completely dissolved. Stir in cold water. Cool completely.
  • Beat pudding mix and milk with whisk 2 min.
  • Spoon cookie crumbs into 8 parfait glasses; cover with layers of pudding, strawberries and gelatin.
  • Refrigerate 2 hours.

One 1-pound bag frozen unsweetened strawberries, thawed
2 tablespoons sour cream
1 scant cup chilled heavy whipping cream
Eight 2-inch vanilla meringue cookies, coarsely broken (about 2 cups), plus 2 more, halved

Steps:

  • In a medium bowl, using a potato masher or fork, mash the berries and any juices into a chunky sauce.
  • Place the sour cream in a 1-cup measuring cup. Add enough chilled heavy cream to fill the cup completely. Scrape the cream mixture into a deep medium bowl. Beat the mixture until thick and stiff with a handheld electric mixer. Fold in the broken meringues.
  • Divide the sauce in half and spoon into the bottom of four serving bowls or glasses. Divide the cream mixture in half and spoon on top of the sauce. Repeat the layers using the remaining sauce and cream mixture. Top each parfait with a meringue half and serve immediately.

4 ounces light cream cheese, soften
1/4 cup sugar
1 cup vanilla yogurt
3 cups strawberries, sliced
1 cup small almond cookie, roughly crushed (amaretti)
1 tablespoon almonds, sliced, roasted

Steps:

  • In a bowl, with an electric mixer, mix cream cheese and 3 tablespoon of sugar for 2 minutes or until it's creamy. Add yogurt and mix until the mixture is homogeneous.
  • Put strawberries in a large bowl. Add remaining sugar and stir delicately to coat well. Let rest for 5 minutes at room temperature (stir one time).
  • In 6 parfait glasses of a capacity of 1 cup each, distribute half the mixture of cream cheese, half of strawberries and half of almond cookies. Repeat with remaining ingredients. Cover with a plastic wrap and put in the fridge for 2 hours. When ready to serve, garnish with roasted almonds.

  • Add mascarpone cheese and 3/4 cup strawberry compote to a medium bowl and mix on low speed until well blended, about 1 minute. Cover bowl with plastic wrap and chill in the refrigerator for at least 30 minutes.
  • In a chilled medium bowl, add heavy cream, powdered sugar and vanilla. Mix on low speed until frothy, about 1 minute. Then mix on high speed until stiff peaks form, about 4-5 minutes. Spoon into a pastry bag fitted with a star tip, twist the end of the bag and chill in the refrigerator along with the mascarpone cheese mixture.
  • Prepare this at the last minute so that it doesn't dry out while the mascarpone mixture and whipped cream topping are setting up in the refrigerator. In a small bowl, mix graham cracker crumbs, granulated sugar and butter until it resembles wet sand.
  • In 6 4 oz. glasses, assemble your parfaits as follows: 1. 2 tsp. graham cracker crumb mixture (pat down with the back of a spoon) 2. 2 tsp. mascarpone mixture (gently pat down) 3. 1.5 to 2 tsp. strawberry compote or strawberry preserves 4. 2 tsp. graham cracker crumb mixture (pat down) 5. 2 tsp. mascarpone mixture (gently pat down) 6. 1.5 to 2 tsp. strawberry compote or strawberry preserves 7.
