I love this recipe! It is from the "Frugal Gourmet Whole Family Cookbook" by Jeff Smith. I've made this simple recipe for many years. People are always impressed but... I never tell them how easy it is to make. Some recipes are best kept secret. But I will share this one...

1 pint ripe strawberry
2 tablespoons sugar
2 tablespoons balsamic vinegar

Steps:

  • Hull the strawberries and cut them into quarters lengthwise.
  • Place in a bowl and toss with the vinegar and sugar.
  • Cover and allow to rest on the counter for about an hour so that the berries will "juice" then chill in the fridge for another hour.
  • Toss again before serving.
  • (I like a little more vinegar sprinkled on before serving but do this to your own taste.
  • I should mention that these strawberries do not keep well so they should be prepared and eaten the same day. If made more than a few hours ahead of time they are mushy and texturally unappealing. Just thought I should mention that.

4 pints (8 cups) fresh strawberries, sliced thick
5 tablespoons balsamic vinegar
2 tablespoon sugar
1/4 teaspoon freshly ground black pepper
2 pints vanilla ice cream, for serving
Freshly grated lemon zest, for serving

Steps:

  • Thirty minutes to an hour before serving, combine the strawberries, balsamic vinegar, sugar, and pepper in a bowl. Set aside at room temperature.
  • Place a serving of the strawberries in a bowl with a scoop of ice cream on top and dust lightly with lemon zest.

1 pound/450 grams strawberries (washed in cold water and hulled)
3 dessertspoons caster sugar (about 2 1/2 tablespoons)
3 tablespoons balsamic vinegar
Optional: black pepper

Steps:

  • Gather the ingredients.
  • Preheat oven to 300 F. Put washed strawberries in roasting tray, making sure they are in 1 layer. Dust with sugar and then sprinkle with vinegar.
  • Roll strawberries around by tipping tray from side to side, making sure that all berries are covered.
  • Cover tray with a tea cloth and leave to marinate for 20 minutes.
  • Put tray into center of oven and roast for 20 minutes. The strawberries will soften but keep their shape. The vinegar and sugar will start to caramelize; make sure, though, that it does not burn.
  • Take roasting tray from oven, leave to cool until cold. The syrup will thicken and become very tasty. Transfer strawberries to a jar and close. Store in fridge. They will keep for several weeks.
  • Serve with vanilla ice cream, and a little sprinkling of black pepper, if desired.

  • Boil 1/3 cup balsamic vinegar with 2 tablespoons honey, 1 bay leaf and a pinch of salt until thick, 4 minutes. Discard the bay leaf; let the syrup cool. Beat 1 cup mascarpone, 1/2 cup heavy cream, 1 tablespoon sugar and 1/4 teaspoon vanilla with a mixer until soft peaks form. Toss 3 pints quartered strawberries with half of the balsamic syrup. Serve with the mascarpone mixture and the remaining syrup.

¼ cup white sugar

  • Place strawberries in a bowl. Drizzle vinegar over strawberries, and sprinkle with sugar. Stir gently to combine. Cover, and let sit at room temperature for at least 1 hour but not more than 4 hours. Just before serving, grind pepper over berries.

1/3 cup balsamic vinegar
2 teaspoons plus 4 tablespoons sugar
1/2 teaspoon fresh lemon juice
1/2 cup chilled mascarpone cheese*
1/2 cup chilled whipping cream
1/2 teaspoon vanilla extract
3 1-pint baskets (about 24 ounces) strawberries, hulled, halved

Steps:

  • Combine vinegar, 2 teaspoons sugar, and lemon juice in heavy small saucepan. Stir over medium heat until sugar dissolves. Boil until syrup is reduced to scant 1/4 cup, about 3 minutes. Transfer to small bowl; cool completely. (Can be made 2 days ahead. Cover and refrigerate.)
  • Combine mascarpone, cream, vanilla, and 2 tablespoons sugar in medium bowl. Whisk until thick soft peaks form. Cover and refrigerate up to 4 hours.
  • Combine berries and remaining 2 tablespoons sugar in large bowl; drizzle with balsamic syrup and toss to blend. Let stand 30 minutes, stirring occasionally.
  • Divide berries and syrup among 6 goblets. Top with mascarpone mixture.
  • *Italian cream cheese, available at Italian markets and many supermarkets.

1 lb strawberry, hulled (retain some whole strawberries for garnish)
1 tablespoon grenadine
1/2 tablespoon black peppercorns
3 ounces caster sugar
2 teaspoons balsamic vinegar
1 tablespoon vanilla extract
1 tablespoon strawberry liqueur or 1 tablespoon vodka
1 cup single cream
8 ounces mascarpone cheese

Steps:

  • Place the hulled strawberries and whole strawberries in a bowl and crush lightly with a fork or potato masher, mix with the grenadine and set aside.
  • Place peppercorns in a frying pan, dry roast on a stove for a few minutes, allow to cool and then coarsely crush using a mortar and pestle.
  • In another bowl mix the caster sugar with the balsamic, vanilla and the liqueur or vodka, mix in the single cream.
  • Beat the mascarpone until smooth and mix into the single cream mixture.
  • Spoon a little of the crushed strawberries into the bottom of Martini glasses, wineglasses or Knickerbocker Glory glasses. Spoon over a little of the cream mix and sprinkle with some of the peppercorns.
  • Repeat until the glasses are full, finishing with the cream and the final sprinkle of pepper.
  • Garnish with whole or cut strawberries.

1 teaspoon vanilla
2 pints fresh strawberries
2 tablespoons brown sugar
3 tablespoons dry red wine
1 1/2 tablespoons balsamic vinegar
1 tablespoon butter, chilled
vanilla ice cream

Steps:

  • preheat oven to 400°F.
  • Add 2 Tbsp butter to oven safe skillet and melt in oven. Add Vanilla to butter to butter and combine.
  • Place strawberries, cut side down in skillet andsprinkle with brown sugar. Bake at 400°F for 10 minutes or until berries are soft. Remove pan from oven.
  • With a slotted spoon, remove berries from pan and set aside to let cool.
  • Add wine and vinegar to skillet and simmer over medium heat until reduced slightly.
  • Remove from heat and whisk in chilled butter.
  • To serve, spoon ice cream into dessert bowls, top with warm strawberries and drizzle with sauce.
