How to make Scottish Stovies is actually a matter of debate. No Scottish Stovies recipe is the same! This hearty dish is a bit like a potato stew, and usually consists of onion, potatoes, other leftover roast vegetables, stock or gravy, and some form of leftover roast meat or sausage. It's a nostalgic favourite of many and often eaten on a Monday after a big Sunday roast and served with crusty bread or oatcakes. Read on for our recipe and possible variations, including vegetarian and vegan stovies!

Number Of Ingredients 7

250g (8.8oz) Roast Beef from previous days roast or meat of your choice (see notes for variations)
900g (2lb) Roast Potatoes from previous days roast, make up any difference with raw potatoes
50g (3-4 tbsp) Beef Dripping saved from previous days roast, or butter, oil, dripping or lard
400ml (2 cups) Stock or leftover gravy with water added to make up the difference. We used OXO cubes.
2-3 tbsp Beef Jelly from previous days roast *Optional - If you put the Beef fat from the roast into a container and leave to cool overnight it will separate out into dripping and meat jelly
Other vegetables (from previous days roast) or 2 large raw carrots
1 Large Onion

Steps:

  • Dice the onion and any peel and chop any extra potatoes you might need, plus a carrot if using.
  • Roughly dice your beef or a substitute meat like sausages.
  • Add Beef dripping or a substitute fat to a large hot pan.
  • Add the onion to the hot fat in a layer, allow them to change colour but not to brown.
  • Add the diced meat to the pan as a layer on top of the onions once they begin to change colour. Stir together. Note: If using Corned Beef then add at the end and stir through to warm up other than at this point.
  • Add potatoes and any other vegetables to the mix, on top of the meat but do not stir together.
  • If required make up your stock, adding the beef jelly to the mix and stirring to combine.
  • Pour the stock into the pot. It should come to just below the top layer of vegetables so add more or less as necessary. Do not stir but leave everything in layers.
  • Bring to the boil
  • Once boiling turn down to a low simmer and cover.
  • Cook for 45-60 minutes until the potatoes begin to soften and break down. Test them with a knife to see if they're ready.
  • Season with salt and pepper. Only stir at this point, so that the onion caramelises and the potatoes break down when you stir.
  • Serve with oatcakes or crusty bread.

Wherever you go in Scotland you will come across Scottish Lorne Sausage, which are square and sliced. Whether you be in a Hotel, a Guest House or a Bed and Breakfast, you will be offered a Scottish cooked breakfast, that will usually include the slices of this Scottish Lorne sausage. It is nearly always on a breakfast menu, along with bacon, egg, and "tattie" (potato) scones, and many Scots will eat it in a bread roll for lunch or maybe serve it with potatoes and vegetables for dinner. This is an easy recipe - and the sausage can be frozen in slices for ease and convenience. Prep time includes chilling time. What's in a name? It is thought that the Lorne sausage, which also goes by the names of square sausage, sliced sausage or sausage slice, was an invention of the Scottish comedian Tommy Lorne who lived from 1890 and died in 1935. He was born in Kirkintilloch near Glasgow. His birth name was Hugh Gallagher Corcoran. Tommy Lorne performed in many Scottish theatres and often performed in Glasgow and Edinburgh and was much in demand for pantomime. In his own acts he would apply white make-up and wear a short kilt, a glengarry, boots that were far too big for him and a jacket that was short. He spoke in an hilarious high pitched voice. It is thought that Lorne sausages were named after Tommy Lorne because of one of his famous catchphrase: "sausages are the boys" - he loved his sausages! He often ate a sausage sandwich between his acts. It has even been suggested that not only were Lorne sausages named after Tommy Lorne and to give people an easy to make sausage sandwich, but that Tommy Lorne was the inventor of the Lorne sausage.

1 lb minced beef (hamburger meat)
1 lb pork sausage
6 ounces fresh breadcrumbs
4 fluid ounces water
1 1/2 teaspoons salt
1 1/2 teaspoons ground coriander
1 teaspoon black pepper (more if you prefer it spicier)
1 1/2 teaspoons ground nutmeg or 1 1/2 teaspoons ground mace

Steps:

  • Lorne Sausage.
  • Put everything in big bowl together and give it a really good mix by hand. Then ideally put the mix into a loaf tin or rectangular pan about 10" x 4" x 3".
  • Put the sausage meat block in the freezer for a little while until it's just starting to set. Remove it from the tin and cut the sausage block into the thickness of slices you prefer.
  • Put the slices, separated by cling film, into freezer bags and put them back in the freezer.
  • To Serve.
  • When required, defrost and grill or fry in a little fat or oil until brown and crispy on the outside, and cooked through.
  • Serve with bacon and eggs for breakfast. Serve with chips and baked beans for a larger meal. Traditionally served in a bread roll ("roll on sausage" in Scotland) as a morning-after recovery aid, laced with HP Brown Sauce.

The spice combination is more reminiscent of a French meat pie or a black pudding rather than an American country sausage. Lorne is traditionally served with soft potato flatbreads called "Tatties."

2 pounds ground beef
2 pounds ground pork
¼ cup bread crumbs
¼ cup beef broth
1 ½ tablespoons brown sugar
1 ½ teaspoons onion powder, or more to taste
1 ¼ teaspoons kosher salt, or more to taste
1 ¼ teaspoons ground black pepper, or more to taste
1 ¼ teaspoons ground coriander, or more to taste
½ teaspoon ground nutmeg, or more to taste
¼ teaspoon ground allspice, or more to taste
1 tablespoon olive oil

Steps:

  • Mix together ground beef, ground pork, bread crumbs, beef broth, brown sugar, 1 1/2 teaspoons onion powder, 1 1/4 teaspoons kosher salt, 1 1/4 teaspoons pepper, 1 1/4 teaspoons coriander, 1/2 teaspoon nutmeg, and 1/4 teaspoon allspice in a large bowl until well combined. Shape some of the mixture into 2 or 3 small patties and place remaining sausage mixture in the refrigerator.
  • Heat oil in a large skillet over medium-low heat. Add sausage patties and cook until browned and cooked through, 3 to 5 minutes per side; do not overcook or sausages will be dry. An instant-read thermometer inserted into the center should read 160 degrees F (70 degrees C).
  • Taste cooked sausages, adding more salt, pepper, and/or spices to the uncooked mixture as desired. Press uncooked sausage mixture into loaf pans and place in the refrigerator until firm, 2 to 3 hours.
  • Remove sausage "loaves" from the pans and slice into 1/2-inch slabs. Separate slabs with plastic wrap and store in the refrigerator if you will be cooking all sausage within 4 days. Cook as directed above, over medium-low heat.

30g lard or butter
1 onion , finely chopped
½ swede , peeled and cut into 2cm cubes (400g prepped weight)
2 large carrots , peeled and cut into 2cm cubes
1 celery stick, finely chopped
500g leftover roast meat (lamb or beef), or corned beef, cubed
700g potatoes , peeled and cut in to 3cm cubes
500ml beef or lamb stock
oatcakes or crusty bread, to serve

Steps:

  • Heat the lard or butter in a medium sized saucepan. Add the onion and fry for 10 mins over a low-medium heat until softened. Add the swede, carrot and celery and fry for 5 mins.
  • Stir in the meat, if using leftover roast lamb or beef, then the potatoes. Pour over the stock and season generously, bring to the boil, then turn the heat down to a simmer. Cook covered for 1 hr 30 mins or until the vegetables have softened and the potatoes have broken down completely. If you're using corned beef, add this to the pan 20 mins before the end of cooking. Serve with oatcakes, or crusty bread

6 large baking potatoes, peeled and cubed
1 cup milk
1 tablespoon butter
1 large onion, roughly chopped
1 (12 ounce) can corned beef, cut into chunks
salt and pepper to taste

Steps:

  • In a saucepan, combine potatoes and milk. Bring to a boil, reduce heat, and simmer until potatoes are tender, about 30 minutes.
  • While potatoes are simmering, melt butter in a skillet over medium high heat. Saute onions until soft and translucent.
  • When potatoes are soft, mix in sauteed onions and corned beef. Cook an additional 10 minutes, or until heated through. Season with salt and pepper.

1 lb onion
1 lb sausage
1 teaspoon sage
1 teaspoon thyme
2 beef bouillon cubes or 3 teaspoons beef bouillon powder
salt and pepper

Steps:

  • Preheat the oven to 350F and lightly grease your baking dish.
  • Peel and thinly slice the potatoes; peel and chop the onions.
  • Dice the sausages.
  • In a baking dish put a layer of potatoes, a layer of onions and a layer of sausage.
  • Season to taste and sprinkle over half the herbs.
  • Continue the layers until you have used up all the ingredients, ending with a layer of potatoes.
  • Sprinkle on the rest of the herbs.
  • Dissolve the stock cubes in 1 pint of hot water and pour into the baking dish.
  • Bake for 40 minutes or until the potatoes are tender.
