SAFFRON RICE (INSTANT POT & STOVE TOP)

Steps:
- Pick and rinse basmati rice well. Change water and rinse thrice to remove starch as much as possible. This step yields fluffy non sticky cooked rice.
- Soak for 15 minutes, drain and spread on a plate.
- Place the inner pot or insert in your instant pot and switch it on. Press saute mode and set the timer for 8 minutes.
- Once the display shows hot, your pot is ready to cook.
- Add 2 tablespoons oil and fry the whole spices for 2 minutes.
- Add the drained rice and saute very well for next 6 minutes until all the moisture in the rice is leaves. You don't have to keep sauteing for 6 minutes continuously though, just leave the rice in saute mode and keep an eye.
- Now add 2 cups water to the sauteed rice. Also add 1/4 saffron threads and salt to taste. Mix gently.
- Close the instant pot, set pressure valve to seal.
- Press pressure cooker/manual button and set the timer to 5 minutes. You can also cook for 4 minutes but as I said above, I prefer to cook the rice perfectly to ensure proper digestion.
- After five minutes of pressure cooker, let the pressure settle down on its own.
- Open your instant pot and fluff the rice gently.
- Add fried onions, fried cashews and raisins. Mix well.
- Serve immedietly topped with more nuts and pomegranate jewels.

- Cover rice with cold water and set aside to soak for 30 minutes.
- Soak saffron threads in 2 tablespoons boiling water.
- Melt butter in a large saucepan over medium heat; add cardamom, cloves and cinnamon and fry 2 minutes, stirring occasionally. Stir in onion and saute, stirring occasionally, until golden brown. Stir in the rice, reduce heat to low and simmer for 5 minutes, stirring constantly.
- Pour in the boiling broth and stir in the salt and saffron.
- Cover and cook until rice is cooked and all liquid is absorbed, about 40 minutes.

SAFFRON RICE

Steps:
- Combine saffron threads and boiling water and allow to 'steep' for at least 5 minutes.
- In a medium pot, combine saffron + boiling water with the basmati rice and all other ingredients.
- Cover and bring to a boil; reduce heat and simmer (covered) for 15 minutes.
- Remove from heat and let sit for another 10 minutes before serving.
- Combine saffron threads and boiling water and allow to 'steep' for at least 5 minutes.
- Combine saffron + boiled water with the basmati rice and all other ingredients.
- Cook using the 'white rice' function (or regular function if there is not a white rice option).
- Once the cook time is up, fluff with a fork and serve.

EASY SAFFRON RICE
Steps:
- Gather the ingredients.
- Pour the stock into a medium-sized pot with a tight-fitting lid. Place the pot on the stove over high heat.
- While the stock is coming to a boil, add the turmeric, saffron, chile (if using), and a squeeze of lemon or lime juice. Stir well.
- Add the rice plus 1 1/2 tablespoons fish sauce (or 1/4 teaspoon salt) and stir. Bring to a boil.
- Reduce the heat to low and cover tightly with a lid. Cook 12 to 15 minutes, or until liquid has been absorbed by the rice. (Insert a fork or knife straight down into the pot and push the rice aside. If you see liquid, it still needs more time to cook.)
- When most of the liquid is gone, turn off the heat and place the lid on tightly. Allow the pot to remain on the burner for another 5 to 10 minutes, or until you're ready to eat. The residual heat inside the pot will finish steaming the rice. The rice will stay warm in this way for 1 hour or more.
- Before serving, remove the lid and fluff rice with chopsticks or a fork. Taste test for salt, adding 1/2 tablespoon more fish sauce or a little more salt if needed (the amount will depend on the saltiness of your stock). If the rice tastes too salty, add another squeeze of lemon juice.

SAFFRON RICE
Steps:
- Heat 3 tablespoons butter in a large saucepan over medium-high heat. Add 1 finely chopped onion and cook, stirring, until softened, 4 minutes. Stir in 2 cups basmati rice, 2 teaspoons kosher salt and 1/2 teaspoon saffron threads. Add 1 1/2 cups each water and low-sodium chicken broth. Bring to a simmer, reduce the heat to low, cover and cook until the rice is tender and the liquid is absorbed, 15 minutes. Let sit, covered, 5 minutes, then fluff with a fork. Stir in 1/4 cup chopped cilantro and 2 sliced scallions.
CRISPY SAFFRON RICE
Steps:
- Put the rice in a large bowl, then cover with enough water so that it comes up a couple inches above the rice. Soak for 30 minutes. Drain the rice, then rinse it well.
- Bring a large pot of water to a boil and add 2 tablespoons salt.
- Crush the saffron using a mortar and pestle, then add 3 tablespoons boiling water from the pot and allow to steep and break down.
- Add the rice to the boiling water and cook until it's soft on the outside but still has a bite on the inside, 4 to 5 minutes. Drain and rinse under cool water to stop the cooking.
- Heat a 12-inch nonstick skillet with a lid over medium-high heat and add the ghee and the saffron water; swirl it around so it coats the pan evenly. Add the rice and pack it down firmly with the back of a spatula, mounding it slightly higher in the center. Use the handle of the spatula to poke a few holes in the rice, stopping right before you get to the very bottom of the rice (this allows the steam to escape). Carefully cover the skillet with a clean dish towel and then the lid, folding the corners of the towel up around the lid so they don't touch the stove (if you're working with a gas range, you may want to fold the towel up around the lid before putting it on the skillet to be extra careful that your towel doesn't touch the flame). Cook on medium-high for 30 minutes, then reduce the heat to medium-low until the bottom is golden brown, about 7 minutes more. Carefully uncover the skillet, keeping the cover level so that any moisture collected under the towel doesn't spill out and burn you or fall back into the rice.
- Flip the rice out onto a plate so that the crispy bottom becomes the top. Serve!
TOO TIRED, & BROKE, YELLOW RICE AND CHICKEN
This is another recipe shared with me by my southern gentleman friend, he said his mama always used to make this for him, it is his ultimate comfort food. It's easy to keep the (2) ingredients on hand, for those nights when you just want to throw something together that everyone will eat and enjoy. It's particularly nice when you're too broke to do much, and kids love it! The "yellow" comes from the saffron in the rice. If you look in the rice section, you will find there are a few different brands of yellow, or saffron rice, it's usually in a "tube" shaped package rather than a box, & it is simply called "Yellow Rice" on the package. If you have more than 2-3 people, you may want to double it. Instead of canned chicken you can also use a cup or so of shredded or diced leftover chicken. The container sizes are approximate as I didn't have any on hand & I was going from memory, of course you could vary it by adding vegetables, cheese, whatever, but this is the easiest preparation. Apparently this "recipe" is just too easy for some; I hesitated to even put it on here because it is so basic, but sometimes it's nice to have an easy recipe that might otherwise allude us just because of it's simplicity. After all, if someone would not have shared it with me, I wouldn't have thought of it. I was accused of not putting enough information on this recipe, but I'm not really sure what other information they need, that I could include to make this ANY easier. However, I did go ahead & elaborate on the already Very simple instructions below as best as I could. I hope it's ease does not discourage other people from trying this, it really is This simple, which is why there is not more information provided.

- Pour rice into a bowl, and fill it with cold water. Swirl the grains, using your fingers. Tip out any starchy water, and repeat until water runs almost clear.
- Combine rice and water in a pot: For most long-grain and medium-grain rice, pair 1 cup rice and 1 1/3 cups water. For short-grain rice, use 1 cup rice and 1 cup water. For most brown rice, combine 1 cup rice and 1 3/4 cups water. The rice and water should not come more than halfway up the sides of your pot; the mixture will double in volume as it cooks.
- Bring water to a hard boil over medium-high heat. The water's entire surface should break with big, constant bubbles. As soon as water is boiling, give it a vigorous stir with a spatula or wooden spoon, making sure to scrape at any grains at the bottom of the pot. Cover it with a lid and turn the heat to low.
- Cook long-grain and medium-grain rice for 15 minutes; short-grain varieties for 20 minutes; and brown rice for 30 minutes.
- When allotted time has passed, or when you hear a change in sound - if you listen closely, you'll notice the sounds will slowly change from a bubbly simmer to a steamy sort of flutter - turn off heat and let rice rest for about 10 to 15 minutes before serving.
