STOVE TOP CANDIED YAMS

Stove Top Candied Yams image

Learn to make delicious stove top southern candied yams from scratch - Paleo, vegan, gluten free, dairy free

Provided by Charla

Categories     Appetizer     Side Dish

Time 50m

Number Of Ingredients 8

3 large sweet potatoes (peeled and chopped (slices or quarters))
1/4 cup of dairy free butter (75g)
1/2 cup of coconut sugar (75g)
1/2 tsp ground cinnamon
1/2 tsp ground nutmeg
1/2 tsp vanilla extract
1/4 tsp himalayan pink salt
1/3 cup of water (80ml)

Steps:

  • Wash and peel the sweet potatoes and carefully cut them into slices (discard the ends and outer skin).
  • Using a skillet on medium heat, proceed to melt the butter and stir in the spices and coconut sugar
  • Carefully add in the potatoes with pink salt and vanilla extract to the sugar mixture
  • Pour in the water to create a watery syrup then fold and stir with the sweet potatoes (don't worry this will thicken up)
  • Reduce the heat to low, cover with lid and allow to cook on low heat for 45 minutes to 1 hour. Continue to baste the yams with the syrup occasionally. Add a splash more water to loosen up the syrup if it's becomes too thick for your liking. The yams should be tender and soft to the touch - can prick with a fork. The butter and coconut sugar should have congealed into a syrup texture.
  • Serve piping hot and enjoy!

Time 1h10m

Number Of Ingredients 5

6 medium firm, sweet potatoes
3/4 c white sugar
1/2 c water
5 Tbsp butter, room temperature
1/2 tsp vanilla extract

Steps:

  • 1. Scrub, wash and peel potatoes, place in large bowl and cut into 1/2 inch slices across. Set aside.
  • 2. Spray a large, heavy skillet with a non stick cooking spray. Add slices of potatoes and the 3/4 cup of water.
  • 3. Bring to boil on Medium high, cap with the lid and turn burner down to low. Check occasionally about every 10 to 15 minutes, DO NOT STIR. May gently slide with a wooden spoon always replacing lid. When potatoes are tender, about 20 minutes or so, gently check with a fork. Add, butter, sugar and vanilla. About 1/2 cup of liquid should still remain in pan with potatoes. Recap with lid and simmer until sugar is melted, and butter and vanilla are incorporated with drippings.
  • 4. The drippings should thicken allowing you to turn potatoes gently with a spatula, don't let them stick. When Juice is thick and cooked real low, remove from burner. Leave lid on potatoes for a few more minutes to allow more steaming. The potato slices should have taken on a candied appearance.

STOVETOP CANDIED SWEET POTATOES WITH PECANS

Stovetop Candied Sweet Potatoes with Pecans image

These Vegan Stovetop Candied Sweet Potatoes are packed with flavor and totally fuss-free! Coated in a spiced brown sugar glaze, they make a delicious Thanksgiving side or festive fall dessert.

Provided by Caitlin Shoemaker

Categories     Side

Time 30m

Number Of Ingredients 9

500 g sweet potatoes, peeled, quartered, and sliced into 1/4 inch slices
1 1/2 tablespoons vegan butter or high-heat oil
1/4 cup (50 g) brown sugar (or sub coconut sugar)
1 teaspoon ground cinnamon
1/2 teaspoon ground ginger
1/2 teaspoon ground nutmeg (optional)
1/4 teaspoon salt
1/2 cup (60 g) pecan pieces
Optional: flaky salt, for serving

Steps:

  • prepare a steam bath for the sweet potatoes; I filled a large pot with 1/2″ of water and placed a metal sieve over top of it. Once the water starts to steam, add in the sweet potatoes and cover. Steam for 10 to 12 minutes, until fork tender. Once tender, remove from the pot and set aside; save 2-3 tablespoons of the steaming water for step 3.
  • Melt the butter in a large saucepan or skillet over medium heat. Once melted, add in the brown sugar, cinnamon, ginger, and salt and whisk well, until a glossy syrup forms. Add 1 tablespoon of the steaming liquid to the pot and quickly whisk until the brown sugar has melted (add more water only if necessary).
  • Add the steamed sweet potatoes and pecans to the butter/sugar mixture, spreading them evenly across the pan. Use a spatula to flip or stir the mixture every 2 min, cooking for 10-12 minutes total. Potatoes are done when slightly browned and nuts are golden.
  • Transfer to a serving dish and top with flaky salt, if desired. Serve warm; leftovers will keep in the refrigerator for up to 5 days.

Salt
3/4 cups chicken broth
1/3 cup brown sugar
3 tablespoons butter plus 2 tablespoons melted
1 generous pinch pumpkin pie spice
Freshly ground black pepper
1 1/2 cups corn cereal (recommended: Corn Flakes)
1/2 cup pecans, chopped
2 tablespoons maple syrup
1 1/2 cups mini marshmallows

Steps:

  • Place the sweet potatoes in a large pot. Add enough cold water to cover by 2 inches. Add a generous pint of salt and bring to a boil over medium-high heat. Cook until the potatoes are slightly soft but still hold their shape, 10 to 12 minutes. Strain and place back in the pot.

Add 3 tablespoons of butter, pumpkin pie spice, a generous pinch of salt and pepper, and stir to combine. Add the cooked sweet potatoes and gently toss to coat. Cook until the liquid has reduced down and is a syrupy consistency and the sweet potatoes are tender, about 5 minutes, making sure to stir every minute.
  • In a large bowl combine the corn cereal, pecans, maple syrup, and 2 tablespoons melted butter and stir until combined. Set aside.
  • Top the sweet potatoes with an even layer of marshmallows and let cook for 3 minutes to allow them to melt a bit. Top with the crunchy topping. Reduce heat to low and cook until marshmallows are completely melted, about 2 minutes.
