STOVE TOP CHEESY BEEF AND POTATO
This is an off the shelf meal, but if you choose to use fresh mushrooms, be sure to add a quarter cup of additional liquid. An interesting variation is to skip the cheese and add a quarter cup of sour cream and a quarter teaspoon of nutmeg to make a stroganoff. Cooking is a Creative Sport.

Steps:
- Saute the onion in the olive oil within a skillet that has a tight fitting lid.
- When the onion is nearly transparent, add the diced potato and the mushrooms and liquid.
- Lower the heat and simmer covered for 6 minutes or until the liquid is nearly gone and potato is starting to get soft.
- Add the meat and the pepper, stir and cook for an additional 2 minutes.
- Plate the mixture and sprinkle the cheese on top.

CHEESY GROUND BEEF AND POTATOES
This dish is best described as comfort food. With the cheesy ground beef layered atop a bed of buttery potatoes, you will keep coming back for more. I use a mandolin to thinly slice the potatoes.

- Preheat the oven to 400 degrees F (200 degrees C). Spray a baking dish with nonstick spray.
- Place sliced potatoes in a large bowl. Pour melted butter over top and sprinkle with salt; mix until potatoes are thoroughly coated. Line the bottom and sides of the prepared baking dish with potatoes, overlapping as needed.
- Bake in the preheated oven until potatoes are fork-tender, about 30 minutes.
- While the potatoes are baking, heat a large skillet over medium-high heat. Cook and stir ground beef in the hot skillet until browned and crumbly, 5 to 7 minutes. Drain and discard grease.
- Transfer beef to a large bowl and add condensed soup, 3/4 cup Cheddar cheese, and milk. Season with salt and pepper and mix until well combined.
- Remove potatoes from the oven. Pour beef mixture over top and return to the oven. Bake until heated through, about 15 minutes. Sprinkle remaining Cheddar over top and bake until melted, 4 to 5 more minutes.

CHIMICHANGAS (BEEF AND POTATO)
If you have never tried a Chimichangas, do yourself a favor and try these. When you stuff a large flour tortilla, then roll it up and fry it,you end up with a Chimichanga! They are so good! My hubby and I love to prepare Mexican food and really love to eat it. We go to Mexican restaurants (rarely) and then try to duplicate it. These are fabulous! You can serve shredded cheese,red onion, chopped. A pitcher of ice cold Margaritas would seal the deal!!LOL!

Steps:
- In a large saucepan, combine the meat, potatoes, diced tomato, garlic, onion, salt, oregano, sugar and cumin.
- Add water just to cover and bring to a boil over high heat. Reduce the heat and simmer until soupy, about 1 1/4 hours.
- Break up the potatoes and simmer until thick, about 30 minutes longer. Let cool slightly. Season with salt, to taste.
- Preheat the oven to 325°. Wrap the tortillas with foil and place in the oven for 10minutes to soften.
- Spoon a scant 1/2 cup of the meat and potato filling in the middle of each tortilla. Fold one side of the tortilla over the filling, then fold in the two adjacent sides. Finally, fold over the fourth side and secure with a toothpick.
- In a large heavy skillet, heat 2 inches of the oil to 360°F over moderately high heat. Place 3 of the filled tortillas in the skillet, seam side down and fry, turning, until evenly golden brown all over, about 3 minutes. Drain on paper towels, repeat with the remaining tortillas. Remove the toothpicks.
- Arrange the chimichangas on a warm platter. Top each with one with sour cream, salsa,shredded cheese, if using, and shredded lettuce. Arrange the tomato wedges around the platter and serve.

- melt butter in a large heavy skillet.
- whisk in flour.
- whisk in all of the milk.
- add salt and pepper to taste.
- heat to boiling until smooth and it starts to thicken.
- add cream cheese, stirring until smooth.
- add potatoes (and onion if using), cover and simmer until tender (about 20 minutes), stirring once in a while.
- stir in half of the cheese and sprinkle the rest on top.
- simmer uncovered until ready to serve.
