Many years ago, a new neighbor invited me for coffee. She served this delicious, moist cake and a few days later I asked her for the recipe. She wrote it by hand on a sweet little recipe card, which I still have. And 28 years later, she is my dearest friend.

Steps:
- Preheat oven to 325. Butter and flour a 10-inch tube pan.
- Cream butter and sugar until light and fluffy. Stir in applesauce and vanilla.
- Sift dry ingredients together and then sift over applesauce mixture. Sprinkle with raisins and blend gently.
- Pour batter into pan and bake approximately 65-75 minutes or until a toothpick inserted in the center comes up clean. Cool in pan 10 minutes then remove from pan to finish cooling.

APPLESAUCE CRAZY CAKE (NO-BOWL)
Another no-bowl cake recipe. Found this one on a MasterCook recipe e-list back in 1998. Haven't tried it yet but hope to soon. Update: I have tried this now and used half all-purpose half whole wheat flour and no nuts. It worked very well. Not a high rising cake but it was nice and moist when we had this for breakfast the next morning. Took 25 minutes in a 9 inch pan.

- In 8 or 9-inch square pan, combine flour, sugar, baking powder, cinnamon, baking soda, salt, cloves and nutmeg; blend well.
- Stir in apple sauce, oil and vanilla; mix well. Stir in raisins and nuts. Use a rubber spatula to scrape any ingredients clinging to sides, corners or bottom of pan into the batter and even the batter in the pan.
- Bake at 350F for 25 to 30 minutes or until toothpick inserted in center comes out clean. Makes 9 servings.

- To Assemble.
- Preheat oven to 350 °F and grease and flour a 9-x-5-inch loaf pan.
- For loaf, whisk vegetable oil, brown sugar, sugar, whole egg, egg yolk and vanilla until smooth. Stir in applesauce. In a separate bowl, sift flour, baking powder, baking soda, nutmeg and ginger and stir gently into applesauce mixture.
- For streusel, combine brown sugar, flour and cinnamon. Stir in melted butter and walnut pieces and toss to coat.
- Spoon half of the applesauce batter into prepared loaf pan and sprinkle with half of the streusel. Top with remaining batter and sprinkle remaining streusel to finish. Bake for 40 to 50 minutes, until a tester inserted in the center of the cake comes out clean. Cool loaf for 20 minutes, before turning out on a rack to cool completely.

- Preheat the oven to 350ºF or 175ºC. Grease an 8-inch square pan and line it with wax paper.
- In a large bowl, sift together the flour, baking soda, salt, cloves, and cinnamon. Set aside. In a second large bowl, stir together the applesauce, brown sugar, oil, and stout. Mix thoroughly. Add the flour mixture, a little at a time, beating well after each addition.
- Stir in the raisins, dates, and walnuts.
- Spoon the batter into the prepared pan and bake for 40 to 45 minutes, or until a skewer inserted in the center comes out clean. Remove from the oven and cool on a wire rack for 10 minutes. Invert the pan onto a plate, remove the wax paper, and set the cake upright to cool completely.
- To make the icing:.
- In a large bowl, combine the butter and lemon zest. Sift the sugar into the butter and beat with an electric mixer until smooth and creamy. Stir in enough lemon juice to make the icing soft enough to spread easily.
- Spread the icing on top of the cake and smooth the surface with an offset spatula or knife dipped in warm water. Decorate the top with lemon slices, if desired.

1930'S APPLESAUCE CAKE (DEPRESSION ERA CAKE)
This delicious depression era cake calls for just 1 tablespoons of butter. It's also called Poor Man's Cake. It's a good cake for anyone who wants a reduced fat cake, or one that does not contain eggs. If you don't have applesauce on hand you can substitute 2/3 cup of coffee... can't beat that one for economy. I love these old recipes, it's a glimpse into the past, this one was published in the Los Angeles Times, food section about 20 years ago.

- Preheat oven to 350 degrees Fahrenheit Spray a 13 x 9 pan with bakers joy or grease and flour.
- In a large bowl combine cake mix, eggs, applesauce and oil.
- Beat at medium speed for 3 minutes, stir in nuts or raisins.
- Pour into pan.
- Bake for 40 minutes or until toothpick inserted into middle of cake comes out clean.

APPLESAUCE & RAISIN CAKE
Found in the All*You Magazine from March 2009. A nice moist cake with the fun of a pretty glaze. I've made this with both raisins and dried cranberries and they both work really well. Feel free to use what suits your tastebuds the best. It is a great cake to have when you expect company as it is light and goes great with a mug of coffee.

- Preheat oven to 350F and butter a 9x5" loaf pan and line bottom with parchment paper and butter paper. (This makes removing it from the pan so much easier).
- Beat butter and sugar with an electric mixer until light and fluffy. Beat in egg.
- Stir baking soda into applesauce in a separate bowl.
- Mix dry ingredients together.
- Add dry ingredients in to butter mixture alternating with the applesauce. Mix just until blended well - don't overmix or the cake will be dense.
- Gently stir in raisins.
- Pour batter into pan and bake until top springs back when pressed - about 50 minutes (check at 45 minutes).
- Cool in pan on a wire rack for 10 minutes then turn out onto the rack to cool completely.
- Make glaze by mixing the lemon juice with the confectioner's sugar until smooth. Spoon glaze over the cooled cake and let set up before serving.
