2 tablespoons vegetable oil
1/4 cup finely chopped red onion
1 teaspoon finely chopped garlic
1 can (15 oz) black beans, drained, rinsed
1 tablespoon chopped pickled jalapeño chiles
1/4 cup Food Should Taste Good™ peppercorn blend brown rice crackers, finely ground
1/2 teaspoon chile powder
1/4 teaspoon ground cumin
1/4 teaspoon salt
1/3 cup whole kernel corn (thawed, if frozen)

Steps:

  • In 10-inch nonstick skillet, heat 1 tablespoon of the oil over medium heat. Cook red onion in oil 1 to 2 minutes or until softened. Add garlic, and cook 30 seconds. Remove from heat; cool slightly.
  • In large bowl, mix black beans, chiles, ground crackers, chili powder, cumin, salt and onion mixture. Using potato masher or fork, mash mixture, allowing some chunks to remain. Stir in corn. Shape mixture into 10 balls, using hands or 1-oz scoop. Flatten each ball to form a patty.
  • Using same skillet, heat remaining oil over medium heat. Working in batches, cook burgers abut 2 1/2 minutes on each side or until lightly browned. Keep burgers warm while cooking remaining burgers. If desired, serve on tortillas or slider buns.

1 1/2 pounds ground turkey
Kosher salt and cracked black pepper
1/2 cup shredded Monterey Jack cheese
1 teaspoon Dijon mustard
1 dash Worcestershire sauce
Blackening Spice, recipe follows
Olive oil, for cooking
12 soft dinner rolls, split
2 Roma tomatoes, sliced
Special Sauce, recipe follows
1 1/2 teaspoons salt
1 1/2 teaspoons freshly ground black pepper
1 teaspoon cayenne pepper
1 teaspoon garlic powder
1 teaspoon onion powder
1/4 cup mayonnaise
2 tablespoons ketchup
1 tablespoon yellow mustard
1 teaspoon Sriracha
1 teaspoon pickled relish
Juice of 1/2 lemon

Steps:

  • Heat a large cast-iron griddle over medium-high heat.
  • Add the ground turkey to a large mixing bowl and sprinkle lightly with salt and pepper. Stir in the cheese, mustard and Worcestershire sauce and mix until combined. Form the meat mixture into 12 equal patties. Sprinkle both sides of the patties with the Blackening Spice.
  • Brush the griddle with some olive oil using a clean tea towel. Cook the burgers for 3 to 4 minutes per side. Serve on split rolls topped with the tomatoes and Special Sauce.
  • Whisk together the salt, black pepper, cayenne pepper, garlic powder and onion powder, and transfer to a small plate.
  • Combine the mayonnaise, ketchup, mustard, Sriracha, relish and lemon juice in a bowl.

2 (15-ounce) cans black beans, rinsed and drained, divided
2 tablespoons freshly chopped cilantro leaves

1 egg
1/2 teaspoon red pepper flakes
1/2 cup bread crumbs
Salt and fresh ground black pepper
4 hamburger rolls
1 tomato, sliced
4 small Romaine lettuce leaves, or any other type you have on hand
1/4 cup ketchup

Steps:

  • Heat a grill or grill pan over medium-low heat.
  • In a food processor, pulse onion and garlic until finely chopped. Add 1 can black beans, cilantro, parsley, egg, and red pepper flakes and pulse to combine.
  • Transfer mixture to a large mixing bowl, add the remaining can of black beans and the bread crumbs. Season with salt and pepper, to taste, and mix until well combined.
  • Divide 2/3 mixture into 4 portions and form into patties. Save the remaining mixture for another use, like Black Bean Enchiladas. Place on hot oiled grill over medium-low heat and cook about 6 minutes a side or until heated through. Toast hamburger buns on a grill. Place a burger on the bottom of each bun. Top with lettuce, tomato and ketchup. Cover the burgers with the top of the bun and serve.

Steps:

  • In a large bowl, combine everything except the corn and black beans. Mix well. Add the black beans and corn.
  • Mash with a fork until still chunky. If the black bean mixture is too dry, add the reserved black bean liquid a little at a time until it is like a thick paste.
  • Let the mixture rest in the fridge for a few minutes. Shape into small patties and let sit in the fridge for 15 minutes.
  • Heat a large pan over medium high heat and add the olive oil.
  • Cook the burgers for 5 minutes on each side. The burgers will be nice and brown on the outside.
  • Assemble the burgers and top with toppings.

75g wholemeal bread ,or sourdough
75g walnuts
400g sweet potato
400g can black beans, drained
1 tsp smoked paprika
1 tsp ground cumin
1/2 tsp onion granules
1 tbsp tomato purée
2 tbsp rapeseed oil, to fry
½ cucumber, halved, deseeded and sliced on an angle
2 large carrots (about 300g) peeled into ribbons
small bunch coriander, finely chopped
2 tbsp lime juice
1 tbsp rapeseed oil
4 sourdough burger buns
2 large tomatoes, thickly sliced
1 avocado, peeled, stoned and sliced
50g rocket
coconut yogurt or burger sauce of choice

Steps:

  • Put the wholemeal bread and walnuts in a food processor and pulse to make fine crumbs.
  • Prick the sweet potatoes with a fork and microwave for 5-10 mins until soft. Cut in half and scrape the cooked centres into the food processor with the bread and walnut crumbs. Make sure the beans are drained thoroughly then add them to the processor with the paprika, cumin, onion granules, and tomato puree. Season generously and pulse until the mixture is mostly smooth and holding together. Divide the mix into 4 patties and chill for 20 mins to firm up.
  • Meanwhile make the side salad by mixing the cucumber, carrot, coriander, lime juice and rapeseed oil together. Season and put to one side.
  • Heat the oil in a large non-stick frying pan over a medium heat. Add the patties and fry for 4-5 mins on each side until golden and hot through. Place a small handful of rocket into each burger bun. Top with the tomato slices, burgers, and then avocado. Add a dollop of coconut yogurt or burger sauce of your choice. Serve with the carrot and cucumber salad alongside.

This is my adaptation of a recipe from Cooking Light Magazine (03/07). These black bean burgers are a delicious vegetarian entree and reheat very well in a toaster oven or in a pan. I recommend serving them with rice, greens, salsa and sour cream. Be careful to fully drain the beans and cook the patties long enough so that they will stay together.

2 cups rinsed drained canned black beans
1 teaspoon minced garlic
1/2 teaspoon ground cumin
1/8 teaspoon salt
1/2 teaspoon dried cilantro
1 large egg white
1/2 cup shredded monterey jack cheese or 1/2 cup jalapeno jack cheese
1/4 cup chopped red onion
1/3 cup cornmeal
cooking spray
cayenne powder, to taste

Steps:

  • Set aside 1/2 cup of the beans.
  • Place the other 1 1/2 cups in a medium bowl with garlic, cumin, cilantro and salt. Partially mash with a fork.
  • Place remaining 1/2 cup of beans in a food processor with the egg. Process for approximately 30 seconds or until well combined.
  • Add bean puree to slightly mashed beans in a bowl, and stir until combined.
  • Add cheese and onion, combine well.
  • Divide the bean mixture into 4 parts. Shape each portion into a 1/2 inch thick patty.
  • Place cornmeal on a plate or in a shallow dish.
  • Dredge each patty in cornmeal until thoroughly but thinly covered.
  • Heat a non-stick pan over medium heat. Coat with cooking spray.
  • Add patties and cook for approximately 4 minutes on each side or until browned.
  • Carefully move onto plates with a spatula.
  • Serve hot, with sour cream and rice.

2 large aubergines, pricked all over with a fork
1 tbsp olive oil
1 large onion, thinly sliced
1 heaped tsp garlic granules
2 tsp smoked paprika
1 tbsp demerara sugar
1 tsp dried oregano
5 tbsp barbecue sauce
400g can black beans, drained
4 burger buns, toasted and lightly buttered
red onion or pink pickled onion, shredded lettuce, coleslaw and corn on the cob, to serve (optional)

Steps:

  • Heat the grill to high and grill the aubergine, turning occasionally, until blackened and soft all over, about 20-30 mins. Set aside to cool.
  • Meanwhile, heat the oil in a large ovenproof pan over a medium heat, add the onion and fry until softened and golden, about 10 mins. Heat the oven to 200C/180C fan/gas 6.
  • Peel the skin from the cooled aubergine and discard it, or scoop out the flesh using a spoon, then put in the pan with the onion. Add the garlic granules, paprika, sugar, oregano, 1 tsp sea salt and 1 tsp black pepper. Stir until aromatic, then mix in the barbecue sauce along with the black beans. Season and bake until the sauce is rich and thick, and the aubergine resembles pulled pork - about 10-15 mins.
  • Pile into the burger buns with the red onion or pink pickled onion and any other burger fillings you like. Enjoy with coleslaw and corn on the cob on the side, if you like.
