1/2 lb large shrimp (shelled, deveined and washed)
1 1/2 teaspoons garlic oil (or sesame oil)
1 teaspoon garlic, minced
1 tablespoon fermented black beans, washed and drained
1 teaspoon shaoxing wine (or sherry wine)
1 tablespoon fresh coriander, minced
2 teaspoons oyster sauce
1 teaspoon soy sauce
3/4 teaspoon sugar
salt, to taste
pepper, to taste
1 1/2 teaspoons cornstarch
1/4 cup seafood stock

Steps:

  • Combine sauce ingredients and set aside.
  • Heat wok over high heat for 30 seconds.
  • Add garlic oil and coat the wok.
  • When a wisp of white smoke appears, add garlic and black beans.
  • Stir for 30 seconds and add shrimp. Mix together, then spread shrimp in a thin layer. Cook for 30 seconds.
  • Add wine by drizzling around the edges of the wok; mix well.
  • When the shrimp begin to curl and turn pink, make a well in the center of the mixture.
  • Stir sauce and pour in the well.
  • Mix to combine all ingredients, about 1 1/2 minutes, until sauce begins to thicken and bubble.
  • Turn off heat, remove to a heated dish, sprinkle with minced coriander and serve.

1 pound medium to large shrimp (peeled and deveined)
2 tablespoons vegetable oil (such as canola or peanut oil)
2 tablespoons black bean sauce (with garlic)
2 teaspoons fresh ginger (minced)
1 medium red bell pepper (cut into thin strips)
For the Marinade:
1 tablespoon rice wine or dry sherry
1/4 teaspoon salt
For the Sauce:
1 tablespoon light soy sauce
1 tablespoon rice wine or dry sherry
1 teaspoon sugar
3/4 cup chicken broth
For the Cornstarch Slurry:
1 tablespoon cornstarch
2 tablespoons water
To Garnish: 3 to 4 scallions, diced

Steps:

  • Gather the ingredients.
  • Rinse the shrimp and pat dry.
  • Place the shrimp in a bowl and stir in the marinade ingredients. Marinate the shrimp for 15 minutes.
  • In a small bowl, combine the sauce ingredients and set aside. In a separate small bowl, stir the 1 tablespoon of cornstarch into the 2 tablespoons of water and set aside.
  • Heat the wok or pan and add oil for frying. When the oil is hot, add the black bean sauce and fresh ginger, stirring it together for a few seconds until aromatic.
  • Add the shrimp. Stir-fry briefly, then push to the sides and add the red bell pepper . Stir-fry for about a minute, adding a bit of water, broth, rice wine, or dry sherry if it begins to dry out.
  • Push the shrimp and vegetables up to the sides of the pan. Give the sauce a quick re-stir and add into the middle of the pan. Bring to a boil. Give the cornstarch and water mixture a quick re-stir and add into the sauce, stirring to thicken.
  • Stir to mix the sauce with the shrimp and vegetables and then stir in the scallions. Serve hot over rice.

I found a stir fry bean sprout recipe on a web site. I made some changes, and added a few ingredients that we like. We really liked how light yet filling this dish was. We did notice however the soy sauce at the bottom of our plate when we finished. I suggest that the next time I make this, I'll mix a bit of corn starch with soy sauce or water and add it to thicken the sauce up a bit. This can be served as a main dish and serve 2, or it will serve 4 as a side dish.

2 tablespoons sesame oil
1 cup julliened carrot
3 scallions, sliced in 1-inch pieces
1 cup sliced mushrooms
1/2-1 cup sliced water chestnuts (depending on your taste)
1/2 lb shrimp (peeled and deveined)
1 lb bean sprouts (washed & dried)
1 tablespoon grated fresh gingerroot
1 tablespoon minced fresh garlic
1 teaspoon brown sugar
2 tablespoons soy sauce
salt & pepper
red pepper flakes (optional)

Steps:

  • Mix the brown sugar in the soy sauce until dissolved and set aside.
  • In large frying pan or wok, heat the oil on medium high.
  • Saute carrots, scallions, and mushrooms, just until tender.
  • Add the gingeroot and garlic, and season with salt and pepper. Add red pepper flakes if using.
  • Stir until well mixed.
  • Add the shrimp and soy sauce mixture and saute 3-5 minutes until the shrimp are cooked through.
  • Add bean sprouts and stir until heated through. These don't take long. Just be sure not to overcook the beansprouts. They are best when still cruncy.

24 clams, about 1 . 4kg (3 lbs, approximately)
3 tablespoons peanut oil or 3 tablespoons corn oil
4 -5 garlic cloves, peeled and finely chopped
1 cm fresh gingerroot, peeled and finely chopped
4 -5 spring onions, cut into 2 . 5 cm sections, white and green parts separated
1 1/2 tablespoons fermented black beans, rinsed, mashed
1/2 teaspoon sugar
2 tablespoons shaosing wine or 2 tablespoons dry sherry
1 tablespoon thick soy sauce
3 tablespoons clear stock or 3 tablespoons water
1 teaspoon cornstarch, dissolved in
1 tablespoon water
sesame oil (optional)
hot steamed rice

Steps:

  • Leave the clams in water with a little salt until ready to use. Scrub the shells very thoroughly.
  • Heat a wok over a high heat until smoke rises. Add the oil and swirl it around. Add the garlic, ginger and white spring onion. Stir and let them sizzle for a few moments to release their aroma. Add the mashed black beans and stir to mix. Tip in the clams. Sliding the wok scoop or metal spatula to the bottom of the wok, turn and toss for 30-45 seconds. Splash in the wine and sherry around the side of the wok, continuing to turn and stir. When the sizzling dies down, add the soy sauce, sugar and stock or water. Bring to the boil, cover, lower the heat to medium and cook for about eight minutes.
  • Remove the opened clams with a pair of chopsticks or tongs to a warm serving platter and keep warm. Stir and turn the remainder a few times and cook, covered, for another four to five minutes so that they will open. Transfer the rest to the serving platter, leaving the sauce in the wok. Discard any clams that do not open.
  • Lower the heat, add the well-stirred cornstarch to the sauce, stirring as it thickens. Tip in the green spring onion. Scoop the sauce on to the clams and serve immediately. Sesame oil may be sprinkled on, if desired.
  • Serve over hot, steamed rice.

  • 1. Soak fermented black beans. 2. Shell and devein shrimp. Crush garlic. 3. Mince ginger root then combine in a cup with soy sauce, sherry, sugar and pepper. In another cup, blend cornstarch, cold water and remaining soy sauce to a paste. 4. Heat oil. Add salt, then garlic, and stir-fry to brown lightly. Add shrimp stir-fry until pinkish (about 2 minutes). 5. Add ginger-soy mixture and stir-fry 1/2 minute more. Add soaked black beans stir-fry another 1/2 minute. 6. Stir in stock and heat quickly. 1 tablespoon light soy sauce
1 1/2 tablespoons dry sherry
1/2 teaspoon salt

2 tablespoons vegetable oil

Steps:

  • Place the chicken in a bowl and mix with the soy sauce, sherry, salt, sugar, sesame oil and cornflour.
  • Heat a wok over a high heat and add the oil. When it is very hot (slightly smoking), add the chicken and stir-fry 2 minutes.
  • Add the ginger, garlic, shallots, 1 & 1/2 tbsp of the spring onions and the black beans; stir-fry additional 2 minutes.

2 tablespoons fermented black beans, sold in Asian markets
2 tablespoons dry sherry or white wine
About 1 1/2 pounds uncooked shrimp, in the 20 to 30 per pound size range, peeled
1 1/2 teaspoons sugar
2 tablespoons soy sauce
1 clove garlic, sliced, and 1 tablespoon minced garlic
1 teaspoon salt
2 teaspoons dark sesame oil
1 pound bok choy or other cabbage, trimmed, washed and dried
2 tablespoons peanut or vegetable oil
1 tablespoon peeled and minced or grated fresh ginger
3/4 cup chicken stock or white wine, optional
1/4 cup minced scallions

Steps:

  • Soak black beans in sherry, wine or water. In large bowl, marinate shrimp in 1/2 teaspoon sugar, 1 tablespoon soy sauce, sliced garlic, salt and 1 teaspoon sesame oil.
  • Separate bok choy leaves from stems; chop stems into 1/2 - to 1-inch pieces, and roughly chop leaves.
  • Preheat a wok or large skillet over medium-high heat. Add 1 tablespoon peanut oil and raise heat to high. When it begins to smoke, add minced garlic and, immediately thereafter, shrimp and its marinade. Cook shrimp for about 2 minutes, stirring occasionally. Spoon it out of wok or skillet.
  • Put remaining peanut oil in wok or skillet and, when it smokes, add ginger, followed immediately by bok choy stems. Cook, stirring, until bok choy is lightly browned, 3 to 5 minutes, then add leaves. Cook, stirring, for 1 minute, then add 3/4 cup water, stock or white wine and let it bubble away for a minute.
  • Return shrimp to wok or skillet and stir; add black beans and their liquid, scallions, and remaining sugar and soy sauce. Stir and cook for 1 minute. Turn off heat, drizzle remaining sesame oil on top, and serve.
