Bitter melon is a vegetable most of us have to learn to love, but it deserves being given a chance. Here's why, with a stir-fry recipe featuring the acerbic gourd.

2 bitter melons, preferable yellow or whiter in color
For the ground pork mixture:
3 ounces ground pork
1 teaspoon rice wine
1/2 teaspoon minced fresh peeled ginger
1/2 teaspoon sugar
1/4 teaspoon kosher salt
For the sauce:
2 medium cloves garlic, minced
3 tablespoons Chinese fermented black beans, smashed
3 dried red chilies, or to taste
2 tablespoons Asian fish sauce
1 tablespoon rice wine
1/2 teaspoon kosher salt, or to taste
1 tablespoon sugar
1/4 cup water mixed with 2 teaspoons cornstarch
5 tablespoons oil, for stir-frying, divided

Steps:

  • To prepare the bitter melon, halve lengthwise and scoop out and discard all the seeds. Cut the melon crosswise into 1/4-inch thick slices and set aside.
  • For the ground pork mixture: In a small bowl, mix the ground pork with the rice wine, ginger, sugar, and salt. Set aside.
  • For the sauce: Mix all the ingredients for the sauce in a bowl and set aside.
  • Heat a wok over high heat. Add 3 tablespoons oil and heat until shimmering. Add the pork mixture and cook, tossing and stirring, until the pork is just cooked through. Scrape out onto a clean plate.
  • Return the wok to high heat. Add the remaining 2 tablespoons oil and heat until shimmering. Add the slices of bitter melon to the wok. Stir-fry over high heat until the melon is considerably softened but still a bit crisp, about 5 minutes. Add the sauce mixture and mix with the melon, then stir-fry 1 minute longer.
  • Turn off the heat and add the cornstarch slurry to the wok. Stir around rapidly to prevent the cornstarch from clumping. Add a few tablespoons more water to the wok if needed to thin out the sauce. Return the wok to low heat and simmer the mixture for 20 seconds. Add the pork mixture back to the wok, stirring to combine. Serve immediately.

This is an old family recipe that my mother made when I was a kid and dislike and now that I am over 50 years I make it for my family and the kid also not like it to bitter for their taste.

1 1/2 lbs ground pork, with fat
1 stalk green onion, minced
1 egg
1 teaspoon salt
1/3 teaspoon white pepper
1 teaspoon sugar
1 1/2 teaspoons minced ginger
2 tablespoons lee kum kee panda brand oyster sauce
1 tablespoon lee kum kee black bean paste
3 tablespoons rice wine
1 tablespoon cornstarch
2 medium bitter melons
1 cup chicken broth
1 tablespoon lee kum kee panda brand oyster sauce
1 teaspoon onion powder
1/2 teaspoon sesame oil
cornstarch roux

Steps:

  • In a wok fill about one third of water and cover and bring to a boil.
  • On a cutting broad slice the bitter melon lengthwise and remove the seeds with a spoon and set aside.
  • In a mixing bowl combine pork, green onion, egg, salt, pepper, sugar, ginger, oyster sauce, wine and cornstarch and mix together and divide the pork mixture into four and place the pork mixture into each shell bitter melon and place into bamboo steamer and cover into the wok with the boiling water for 20 minutes.
  • In a saucepan add in the chicken broth, oyster sauce, onion powder and sesame oil and bring to a boil add in some cornstarch roux for from a light sauce.
  • After the bitter melon is steamed remove from the bamboo steamer and plate the bitter melon onto a serving plate and top with the sauce.

  • Cut bitter melon in half length-wise. Remove seeds including fluffy white core using a spoon. Cut the halves into 0.5-1cm (3/16"-3/8”) thick pieces width-wise.
  • Place bitter melon in a bowl, add 1 tsp salt and toss (do not massage) to cover bitter melon pieces with salt. Leave for 10 minutes, then rinse and drain well. This is to remove bitterness of goya.
  • Heat oil in a large frypan or a wok over high heat. Add tofu and cook both sides until lightly browned, about 2-3 minutes. Remove from frypan/wok.
  • Add sesame oil to the frypan/wok over high heat. Add pork and cook for about 2 minutes until slices are almost cooked through.

  • Prep the bitter melon. Cut the bitter melon in half lengthwise and scoop out the seeds and the white pith. Slice the bitter melon into half-moon pieces, about 1/2-inch thick. Put the bitter melon into a bowl, sprinkle salt all over and set aside for 10 minutes (the salt will help drain water from the bitter melon and make it less bitter). The rinse the bitter melon well under cold water and set aside to dry. Once dry, pan fry the bitter melon over medium heat with a little oil. Fry about 5 minutes until it's lightly browned. Set aside.
  • Prep the tofu. Cut the tofu into small rectangle bricks (I make 16 pieces from one block of tofu). Pan fry in a little oil until all sides are brown. Set aside.
  • Prep the pork belly. Cut the thin sliced pork belly into three pieces each (about 2-3" inches wide). Set aside.
