Number Of Ingredients 6

3 1/2 ounces cream cheese, at room temperature
1/4 cup unsalted butter, at room temperature
1/2 cup crumbled Stilton cheese or 1/2 cup other blue cheese
2 medium spring onions, finely chopped
1 tablespoon finely chopped fresh parsley
1/3 cup chopped fresh chives or 1/3 cup finely chopped spring onion

Steps:

  • In a bowl mash together cream cheese and butter, or process in a food processor until smooth.
  • Add the crumbled Stilton or other blue cheese, spring onions and parsley. Mix until well combined. Refrigerate fro 20 to 30 minutes, or until set.
  • Using a large spoon or ice cream scoop, divide the mixture into 6 balls. Roll each ball in the chopped chives and place on a plate. Enjoy immediately or refrigerate in an airtight container for up to 5 days.

5 -6 boneless chicken breasts
1 (10 3/4 ounce) can cream of chicken soup
1 (10 3/4 ounce) can cream of celery soup
2 (12 ounce) boxes of stove top chicken flavor stuffing mix
1 cup milk

Steps:

  • Oven@ 350.
  • Cook chicken and cut into bite sized pieces.
  • Place into a casserole dish.
  • Prepare Stove Top according to directions.
  • Heat both cans of soup with the milk in a saucepan until hot.
  • Pour over chicken.
  • Spoon stuffing over top of chicken and soup.
  • Bake for 30-45 minutes or until bubbly.

1 (6 ounce) package stove top chicken flavor stuffing mix
1 cup water
1 1/2 lbs chicken breasts, boneless & skinless
1 (10 ounce) package frozen chopped broccoli, thawed & drained
1 (10 3/4 ounce) can condensed fat-free cream of chicken soup
1/2 cup nonfat milk
2 tablespoons parmesan cheese

Steps:

  • Preheat oven to 400 degrees.
  • Combine stuffing mix and water in large bowl. Let stand for 5 minutes.
  • Pound chicken to 1/4 inch thickness using a meat mallet.
  • Add broccoli to the stuffing and mix lightly.
  • Spread evenly on flattened chicken breasts to within 1/2 inch of the outer edges.
  • Roll up each chicken breasts starting at the short end enclosing the stuffing mixture.
  • Place the chicken, seam side down, in a 13x9 inch baking dish.
  • Mix the soup and milk and pour over the chicken.
  • Sprinkle with the cheese.
  • Bake for 30 minutes or until chicken is cooked through 170 degrees.
