STICKY CITRUS SPONGE CAKE

A great dessert to feed a crowd at the end of a Sunday lunch - it's like a baked version of a steamed syrup sponge

4 medium oranges
6 tbsp golden syrup , plus extra to serve, optional
200g butter , at room temperature, plus extra for greasing
200g soft brown sugar
200g self-raising flour
1 tsp baking powder
100g ground almond
4 large eggs

Steps:

  • Heat oven to 180C/160C fan/gas 4. Finely grate the zest from 2 oranges into a large bowl. Cut the peel and pith from all the oranges with a serrated knife, and slice quite thickly.
  • Drizzle the golden syrup evenly over the base of a greased 23cm round cake tin. There is no need to line the tin and it shouldn't have a loose bottom otherwise the syrup will bubble through. Arrange the best orange slices on top of the syrup and finely chop any that don't fit.
  • Put all the remaining ingredients in the bowl with the zest and chopped orange. Beat with an electric hand mixer until smooth. Spoon on top of the oranges, spread lightly and make a deep hollow in the centre of the mix with the back of a spoon - this will ensure that the cake rises evenly.
  • Bake for 45-50 mins until firm when pressed. Allow to settle for 5 mins before turning out. Drizzle with golden syrup if you like, and serve with custard or ice cream.

1 cup sifted cake flour
1 1/4 cups sifted powdered sugar
5 egg yolks
1 tablespoon finely shredded orange rind
5 egg whites
1 teaspoon vanilla
1/2 teaspoon cream of tartar
1 cup orange juice
1 tablespoon honey
1/2 teaspoon almond extract

Steps:

  • Combine cake flour and 1/2 cup of the sifted powdered sugar, set aside.
  • In small mixer bowl beat egg yolks with electric mixer on high speed about 6 minutes or till thick and lemon coloured.
  • Gradually add remaining powdered sugar, beating constantly about 4 minutes.
  • Stir in orange peel.
  • Wash beaters thoroughly.
  • In large mixer bowl beat egg whites, vanilla, and cream of tartar till soft peaks form.
  • Gently fold yolk mixture into whites.
  • Sift flour mixture over egg mixture, 1/3 at a time and fold in gently.
  • Turn into ungreased 9 inch tube pan.
  • Bake in 325 degree oven about 55 minutes or till cake springs baack when lightly touched.
  • Invert cake in pan, cool thoroughly.
  • Remove from pan.
  • With a long tined fork, poke holes in top of cake at 1 inch intervals.
  • For syrup, in a saucepan combine orange juice and honey.
  • Simmer 5 minutes.
  • Remove from heat, stir in almond extract.
  • Spoon syrup evenly over cake, a small amount at a time, allowing cake to absorb syrup.
  • Chill, if desired.

  • Combine flour, powder and salt and fold into juice mixture.

Chaja [cha-ha] Cake is a Uruguayan dessert which has: vanilla sponge cake layers, peach syrup, dulce de leche, chopped meringue cookies, whipped cream, and peach slices. I had heard about this cake on the Cooking Channel. Since there was no recipe for it on the cooking channel's website I researched it on Google and I tried finding a recipe but a lot of them were in Spanish. I tried finding a recipe in English but they all seemed a little too time consuming and the measurements were in grams. So I came up with and easier way to make this. The sponge cake part of the recipe credit goes to food.com user izza_zanab (whose recipe I doubled). I've made this cake before and it's really really delicious!!

6 eggs
1 cup granulated sugar
2 cups unsalted butter, softened
2 teaspoons vanilla essence or 2 teaspoons vanilla extract
2 teaspoons baking powder
1/4 teaspoon salt
1 1/2 cups flour
3 (15 1/4 ounce) cans peaches packed in heavy syrup (drained)
1 cup reserved peach syrup from the can peach
1 cup granulated sugar
1 cup water
2 (4 1/2 ounce) boxes of store bought vanilla meringue cookies or 9 ounces of homemade meringue cookies
2 cups heavy cream plus 4 tbsp granulated sugar or 16 ounces store bought whipped cream
2 cups dulce de leche

Steps:

  • For the cake: In a bowl beat eggs. Mix in sugar, butter, and vanilla. Then, Sift the baking powder, salt and flour into the batter. Pour the batter into a 13 by 9 inch rectangular greased cake pan or 2 or 3 round 8 inch cake pans. Bake at 355 degrees F. For 25 minutes or until the cake is fully done.
  • For the syrup: On a stovetop at medium heat in a saucepan pour 1 cup of peach syrup, 1 cup of water, and 1 cup of sugar. Stir until dissolved. Stir until dissolved once it leads to a boil remove from the stovetop and reserve until ready to use.
  • For the meringue: Chop the meringue cookies into small chunks and reserve until ready to use.
  • For the whipped cream: If you are making the whipped cream from scratch pour 4 tbsp of sugar and 2 cups of heavy cream. Then whisk until the cream reaches stiff peaks. Set aside and refridgerate. If you are using store bought whipped cream reserve until ready to use.
  • Assembling the cake: Once the cake has fully cooled divide 3 layers. Use the middle layer for the cake base and baste 1/3 cup of the reserved peach syrup. After that spread spread even layer of the dulce de leche onto the cake, sprinkle 1/4 portion the chopped meringue cookies, spread a generous amount of whipped cream, and spread 2/3 cup of peaches. Top with the 2nd cake layer and repeat. For the 3rd layer baste 1/3 cup of the syrup and frost the entire cake with the remainder of whipped cream, sprinkle rest of the chopped meringue cookies all over the entire cake, and garnish the top with the remainder of sliced peaches.

100g skinned hazelnuts , ground
50g semolina or polenta
175g golden caster sugar
1½ tsp baking powder
2 large oranges
4 medium eggs
200ml light olive oil
generous pinch saffron threads
85g icing sugar
Greek yogurt or crème fraîche and orange segments to serve, optional

Steps:

  • Heat the oven to 180C/fan 160C/gas 4. Oil the base of a 23cm ring tin (or oil and line the base of a 20cm round or 18cm square cake tin). Put the ground hazelnuts in a frying pan and toast over a medium heat, stirring frequently until evenly browned. Leave to cool, then mix with the semolina, caster sugar and baking powder.
  • Finely grate the zest from one orange and combine with the eggs and oil. Beat well with a wooden spoon, then fold into the dry ingredients. Pour the mixture into the prepared tin and bake for 30-40 mins, until risen and firm to the touch.
  • While the cake is baking, pare the zest from the other orange and cut into very thin shreds. Put in a saucepan with the juice from both oranges, the saffron and icing sugar. Bring to the boil, then simmer gently for 5 mins.
  • When the cake is done, leave it to cool in the tin slightly, then turn out onto a plate. Peel off the lining paper. While the cake is still warm, skewer it well and spoon the syrup over. Serve as it is, or with yogurt or crème fraîche and orange segments. The cake will keep in the fridge in an airtight container for 3-4 days.

1 large whole seedless orange
½ lemon , juiced and zested
225ml olive oil , plus extra for the tin
200g ground almonds
120g polenta
1 tsp baking powder (use gluten-free if you need to)
3 large eggs
225g golden caster sugar
natural yogurt or crème fraîche, to serve (optional)
100g golden caster sugar
½ orange , juiced
½ lemon , juiced
6 cardamom pods , seeds removed and ground
4 rosemary sprigs

Steps:

  • Bring a pan of water to the boil. Lower the orange in and cover with a lid, leaving a gap so that a little steam can still escape. Boil gently for 30 mins, then remove from the water and allow to cool slightly. Quarter the orange and remove any pips, then transfer to a blender or food processor, add the lemon juice and zest and blitz to a smooth purée.
  • Heat the oven to 180C/160C fan/ gas 4. Oil the sides of a 23cm round cake tin and line the bottom of the tin with baking parchment.
  • Sieve the almonds, polenta, baking powder and ½ tsp salt into a large bowl and mix together thoroughly. Whisk the eggs and sugar in the bowl of a stand mixer until really pale and fluffy, about 4 mins. With the mixer still whisking, slowly pour in the olive oil in a steady stream so that the mixture doesn't split. Once incorporated, scrape in the orange purée and whisk to combine, then add the dry ingredients, combining until you have a smooth batter. Pour the batter into the cake tin and bake for 55 mins to 1 hr 5 mins until a skewer inserted into the middle comes out clean.
  • Cool in the tin on a wire rack while you make the syrup. Combine the sugar, orange juice, lemon juice, cardamom and 30ml water in a pan. Bring to the boil, stirring until the sugar has dissolved, then add the rosemary. Turn off the heat and infuse for at least 30 mins.
  • Use a skewer to poke holes in the top of the cake, then pour over the syrup. Allow to settle for 5 mins or so, then slice and serve with some natural yogurt or crème fraîche, if you like.

10 eggs, separated
2 cups sugar
1 3/4 cups flour
1/4 cup cornflour
1/2 teaspoon salt
2 teaspoons baking powder
3 tablespoons oil
4 teaspoons orange juice
4 teaspoons orange zest

Steps:

  • Preheat the oven to 350°C.
  • Grease a large pan or two smaller ones and line with waxed paper. Grease the paper and coat with a corn flour and sugar mixture.
  • Whisk egg yolks, adding half the sugar gradually until light coloured and creamy.
  • Add oil, orange juice and orange zest and beat again.
  • Whisk egg whites until very light and forms soft peaks.
  • Add the other half of sugar gradually beating on medium to high speed.
  • Add corn flour, flour, salt and baking powder gradually to the egg yolks, beating all the while.
  • Gently fold in the egg whites with a rubber spatula until well mixed.
  • Spoon the mixture into the pan and bake for 35- 45 minutes until brown.
  • A toothpick inserted into the center should be clean and the midlle should spring back when touched.

225g baking spread
225g self-raising flour
1 level tsp baking powder
100g golden caster sugar
100g brown sugar
4 large eggs
finely grated zest of 2 oranges
150g butter, softened
300g icing sugar, sifted
finely grated zest of 2 oranges
25g caster sugar
juice of 2 oranges

Steps:

  • Heat oven to 180C/160C fan/gas 4. You will need 2 x 20cm loose-bottomed sandwich tins, greased and bases lined with baking parchment. Measure all the cake ingredients into a large bowl (reserve a little orange zest for decoration) and beat with a wooden spoon or electric hand mixer until combined and smooth.
  • Divide evenly between the 2 tins. Bake for 20-25 mins or until well risen, lightly golden and shrinking away from the sides of the tins. After 5 mins, remove from the tins and leave to cool on a wire rack.
  • To make the icing, put the butter and icing sugar into a bowl and mix with an electric hand mixer until light and fluffy. Stir in the orange zest.
  • Remove the paper from the cakes. Sit 1 cake upside down on a plate. Make the glaze by putting the caster sugar and orange juice into a saucepan, stirring over a low heat until the sugar has dissolved. Boil until reduced by half, then brush half on the upside-down cake, using a pastry brush. Spread half the butter icing over the glazed cake. Sit the other cake on top, brush with the remaining glaze, then spread with the remaining butter icing. Scatter with the reserved orange zest. The cake is best eaten on the day, but will keep for up to 3 days in a cool place. It freezes well un-iced or filled.
