Sticky Bacon Sweet Potato Jackets Food

SWEET POTATO JACKET WITH BLUE CHEESE, BACON, PECANS & CRANBERRIES

Steps:

• Split the baked sweet potatoes down the middle and stuff each one with bacon. Top with the soured cream, crumbled cheese and cranberries. Crush the pecans in your hands and scatter over the potatoes with some black pepper. Drizzle with a little maple syrup if you have a sweet tooth.

STICKY BACON & SWEET POTATO JACKETS

Steps:

• Pierce skin of potatoes.
• Microwave on High for 10 - 12 minutes till soft, turn them over halfway.
• Halve potatoes lengthways.
• Scoop 1/3 of flesh out and place in mixing bowl.
• Place potato skins on baking sheet.
• Chop bacon into chunky pieces and fry in oil till cooked.
• Add to bowl and combine with remaining ingredients.
• Season to taste.
• Spoon this mixture back into potato skins.
• Grill till heated through and golden.

SWEET POTATO JACKETS WITH GUACAMOLE & KIDNEY BEANS

Steps:

• Heat oven to 220C/200C fan/gas 7, oil the sweet potatoes, then put them straight on the oven shelf and roast for 45 mins or until tender all the way through when pierced with a knife.
• Meanwhile, mash the avocado with the lime juice in a small bowl, then stir in the chilli, tomatoes, coriander and onion.
• Cut the potatoes in half and top with the beans and guacamole. Serve with the lime wedges for squeezing over.

MAPLE BACON SWEET POTATO CASSEROLE

Steps:

• Preheat oven to 375. Combine all casserole ingredients and spread into an 8x8 or 9x9 casserole dish.
• Combine topping ingredients and sprinkle evenly across the top of the casserole filling.
• Bake at 375 for 30-45 minutes.
