EASY STEWED PEACHES
You can make these with slightly underripe peaches (which is handy if you happen to have a lot of them).

Steps:
- Wash and peel the peaches with a paring knife or vegetable peeler.
- Dice roughly and add to a medium pot. Add 1 cup water. Cover and bring to a simmer over medium heat, then remove the lid and cook for 25-30 minutes, stirring occasionally, or until peaches are soft when poked with a fork.
- Stir in the honey, as desired according to how sweet you want them.
- Mash slightly if desired, or serve as is with or without the liquid.
- Serve as a simple side or over yogurt or oatmeal.

STEWED PEACHES
Steps:
- Combine peaches plus any peach juice from slicing, sugar, and lemon juice in a medium saucepan over medium-high heat, stirring occasionally. Bring mixture to a boil. Reduce the heat to a simmer and cook the mixture for 10 minutes, or until peaches are tender. In a small bowl, stir together cornstarch and water. Add cornstarch mixture to the peaches, stirring to combine. Bring mixture to a boil and boil for 1 minute, or until slightly thickened. Remove from heat. Stir in brandy, if using, and cool slightly.

Steps:
- Combine all ingredients except yogurt and ground cinnamon in heavy medium saucepan. Bring to boil, stirring until sugar dissolves. Reduce heat and simmer until fruit softens, stirring occasionally, about 20 minutes. Transfer fruit only to glass bowl, using slotted spoon. Boil liquid until reduced to 1 cup, returning liquid exuded from fruit to saucepan, about 10 minutes. Pour liquid over fruit, discarding orange slices. Serve warm, room temperature or chilled, topping with dollop of yogurt and dusting of cinnamon.
