Meatballs:
1 lb ground meat (a mixture of beef and pork)
2 garlic cloves
1 egg
2 ½ tablespoons dried breadcrumbs
2 tablespoons chopped parsley
¾ teaspoon sweet paprika
¼ teaspoon smoked paprika
¼ teaspoon hot paprika
1 teaspoon salt
¼ teaspoon black pepper
1 tablespoon olive oil
Tomato sauce:
1 medium onion
2 tablespoons olive oil
3 garlic cloves
2 cans chopped tomatoes (each weighing 400 g/ 14 oz)
½ teaspoon fennel seeds
1 teaspoon dried oregano
2 bay leaves
¼ teaspoon cayenne pepper
2 tablespoons chopped parsley
salt and pepper

Steps:

  • Make meatballs: Place the ground meat, grated garlic cloves, lightly beaten egg, dried breadcrumbs, parsley, sweet, smoked, hot paprika, salt, and pepper in a bowl. Mix well with your hand. Form between 30 and 35 small meatballs, about the size of a walnut.
  • Fry meatballs: Heat the oil in a large skillet. Fry the meatballs (in two batches if necessary) until brown on all sides. This will take about 5 minutes. Take the meatballs out of the pan and set them aside.
  • Chop the onion very finely.
  • Saute: Heat the 2 tablespoons olive oil in the same skillet. Add the onion and cook it until translucent. Add the finely chopped garlic cloves and stir for another minute.
  • Simmer: Add the tomatoes from the can, fennel seeds, oregano, bay leaves, cayenne pepper, and chopped parsley. Add some salt and pepper as well. Stir well and bring to a boil. Simmer on medium-low heat for 20 minutes or until slightly thickened.
  • Add the meatballs to the pan and heat them in the sauce for about 5 minutes or cooked through.
  • Serve as suggested above.

1 ½ tbsp olive oil
1 large onion , finely chopped
400g beef mince
50g fresh white breadcrumb
1 tsp each ground cumin and coriander
1 ½ tbsp chipotle paste
200g basmati rice
400g can chopped tomato
400g can kidney bean , drained and rinsed
small handful coriander , to serve

Steps:

  • Heat 1 tbsp of the oil in a large frying pan. Cook the onion for 8-10 mins until soft, then remove from the pan.
  • Meanwhile, place the mince, breadcrumbs, spices and chipotle paste in a bowl, season generously and mix thoroughly. Roll mixture into 20 walnut-sized meatballs. Add the remaining oil to the pan and fry the meatballs for about 8 mins until brown all over.
  • Meanwhile, cook the rice following pack instructions. Return the onion to the pan, adding the tomatoes, as well as a can full of water. Simmer for 5 mins, then add the kidney beans and cook for a further 10 mins, until the sauce has thickened and the meatballs are cooked through. Season the meatballs, scatter with coriander and serve with the rice.

1 large onion, chopped
5 cloves garlic, minced
Kosher salt
1 teaspoon smoked paprika
1 cup sliced small carrots
2 14-ounce cans low-sodium diced fire-roasted tomatoes
2 cups low-sodium chicken broth
1 15-ounce can chickpeas, drained and rinsed
1 1/4 pounds lean ground turkey
3/4 cup loosely packed fresh parsley (about 1 bunch), chopped, plus more for topping

Steps:

  • Heat the olive oil in a large skillet over medium-high heat. Add the onion, garlic and a pinch of salt and cook, stirring occasionally, until soft, about 5 minutes. Transfer half of the mixture to a large bowl. Add the paprika and carrots to the remaining onion mixture in the skillet and cook 1 minute. Add the tomatoes, chicken broth and chickpeas; bring to a rapid simmer and cook, stirring occasionally, until the sauce thickens slightly, about 6 minutes.
  • Meanwhile, add the ground turkey, parsley, 1 teaspoon salt and 1/4 teaspoon pepper to the bowl with the reserved onion mixture and mix with your hands. Form the turkey mixture into 20 meatballs. Place the meatballs in the skillet with the sauce and simmer, turning once, until cooked through, about 7 minutes. Serve with more pepper and parsley.

I love this recipe because it's a change on the same old Italian spaghetti and meatballs (don't get me wrong I love Italian food). But this recipe has bold Latin flavors. Meatballs simmered in a light tomato sauce served over white rice! So good!

1 1/2 lbs 80% lean ground beef
1 teaspoon onion powder
1 teaspoon garlic powder
1 teaspoon dried oregano
salt & fresh ground pepper
3 tablespoons chopped fresh cilantro, chopped
1 egg
1/4 cup breadcrumbs
4 slices bread (white or wheat)
1 cup milk
1 1/2 tablespoons olive oil
1/3 cup sofrito sauce, my Sofrito (or store bought)
2 tablespoons tomato paste
1 (8 ounce) can tomato sauce
1 chicken bouillon cube
salt and pepper
2 russet potatoes, diced (optional)
2 1/2 cups water
2 tablespoons fresh cilantro, chopped

Steps:

  • For the meatballs:.
  • In a medium bowl add bread and cover with milk. Let soak for a few minutes.
  • In a large bowl, combine ground beef, onion powder, garlic powder, oregano, salt and pepper, cilantro, egg, and breadcrumbs. Squeeze the excess milk from the bread and crumble into the meatball mix.
  • With clean hands combine all ingredients (do not over mix). Shape the meat into golf size balls (makes 25 meatballs).
  • Heat a large non-stick deep skillet over medium heat. Add the meatballs brown on all sides (I did this in 2 batches). Transfer meatballs to a large paper towel lined bowl. Set aside.
  • In same skillet, add the olive oil and sofrito. Cook for 4 minutes, stirring occasionally. Add bouillon cube and cook for 1 more minute stirring occasionally.
  • Add tomato paste, cook 1 minute. Add tomato sauce and water (if you like your sauce thinner add more water). Add meatballs and potatoes. Bring to boil then reduce to simmer and cover. Cook for about 45 minutes or until potatoes are tender and meatballs are cooked through.
  • At the very end taste for seasoning. Add salt and pepper if needed. Sprinkle with chopped cilantro.
  • Serve over my white rice, recipe # 503045.

2 sweet mild Italian sausages, casings removed
One 15-ounce can diced tomatoes, drained
1/4 teaspoon dried crushed red pepper flakes
1 1/2 cups chicken broth
1 egg
1 tablespoon chopped fresh flat-leaf parsley
1/4 teaspoon kosher salt
1/4 teaspoon freshly ground black pepper
1 tablespoon all-purpose flour
4 tablespoons extra-virgin olive oil
1 small onion, sliced (about 1 cup)
1 large red bell pepper, cored, seeded and cut into 1/2-inch strips
1/2 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper
1/2 pound large white mushrooms, quartered
One 8 to 10-ounce russet potato, peeled, halved lengthwise and sliced into 1/3-inch slices

Steps:

  • For the meatballs: Place the bread and 3 tablespoons water into a medium bowl. Mash to a paste with a spatula. Add the beef, sausage, egg, parsley, salt and pepper. Blend the mixture thoroughly with your hands or a flexible spatula. Form the mixture into 10 to 16 meatballs. Arrange the meatballs on a parchment paper-lined baking sheet until ready to use.
  • For the hearty meatball stew: Sprinkle the meatballs with the flour and turn to coat with any flour still on the foil. Heat a large heavy nonstick skillet over medium heat for 1 minute. Add 2 tablespoons of the olive oil. Drop the meatballs into the skillet, spaced apart. Cook until the bottoms are set and brown, about 2 minutes. Using a flexible thin spatula, turn each meatball onto an uncooked side and cook until the bottoms are set and brown, about 2 minutes longer. Turn and cook a third side, until set and brown, about another 2 minutes, so the meatballs are browned and set all over. Transfer the meatballs to a large plate.
  • Heat the remaining 2 tablespoons oil in the same skillet over medium-high heat. Add the onions, peppers, 1/4 teaspoon of the salt and 1/4 teaspoon of the pepper. Cook until soft, 4 minutes. Add the mushrooms and the remaining salt and pepper. Cook, stirring occasionally, until the mushrooms have softened, about 5 minutes. Add the potatoes, beans, tomatoes, red pepper flakes and broth. Bring the mixture to a boil. Reduce the heat to a simmer, cover the pan and cook until the potatoes are tender and the meatballs are cooked through, about 20 minutes.

12 shop-bought lamb meatballs
1 onion , sliced
2 large garlic cloves , crushed
2 tsp ground cumin
1 tsp ground coriander
½ tsp ground cinnamon
1 tbsp rose harrisa
400g can chopped tomatoes
200ml low-salt stock (lamb or beef)
2 x 400g can chickpeas
small bunch of parsley , finely chopped
½ small bunch of mint , chopped
50g pomegranate seeds

Steps:

  • Heat the oil in a large, shallow casserole dish or deep frying pan. Add the meatballs and fry for 3-4 mins, turning regularly, until golden. Remove and set aside.
  • Tip the onion into the pan and fry for 7 mins until softened. Stir through the garlic cumin, coriander and cinnamon, and cook for 1 min. Add the harissa, tomatoes and lamb stock, and bring to a simmer. Stir though the chickpeas and meatballs, season and simmer for 10-15 mins until slightly reduced and the meatballs are cooked through.
  • Stir through half the herbs, then scatter the rest on top along with the pomegranate seeds.

350g lean pork mince
2 tsp olive oil
1 large red onion, chopped
2 peppers, sliced, any colour will do
3 garlic cloves, crushed
1 tbsp sweet smoked paprika
2 x 400g cans chopped tomatoes
400g can butter beans, drained
2 tsp golden caster sugar
small bunch parsley, chopped
crusty bread, to serve (optional)

Steps:

  • Season the pork, working the seasoning in with your hands, then shape into small meatballs. Heat the oil in a large pan, add the meatballs and cook for 5 mins, until golden brown all over. Push to one side of the pan and add the onion and peppers. Cook for a further 5 mins, stirring now and then, until the veg has softened, then stir in the garlic and paprika. Stir everything around in the pan for 1 min, then add the tomatoes. Cover with a lid and simmer for 10 mins.
  • Uncover, stir in the beans, the sugar and some seasoning, then simmer for a further 10 mins, uncovered. Just before serving, stir in the parsley. Serve with crusty bread for dunking, if you like.

¾ cup all-purpose flour
2 tablespoons butter
1 large onion, minced
1 teaspoon ground cinnamon
1 teaspoon ground nutmeg
1 teaspoon ground cloves
2 pounds ground pork
2 tablespoons dried parsley
1 egg
½ cup dry bread crumbs
6 cups reduced sodium chicken broth
1 bay leaf
¼ cup cold water
salt and ground black pepper to taste
4 potatoes, peeled and cubed

Steps:

  • Preheat oven to 425 degrees F (220 degrees C). Spread flour out in a thin, even layer on a baking sheet.
  • Roast the flour in the preheated oven until medium brown in color, 10 to 15 minutes; stir often and watch carefully to avoid burning. Remove the flour from the baking sheet immediately once the desired color has been reached; set aside in a shallow bowl to cool.
  • Melt butter in a large, heavy pot over medium heat, and cook and stir the onion until translucent, about 5 minutes. Transfer the onion to a large mixing bowl. In a small bowl, mix the cinnamon, nutmeg, and cloves; stir the spice mix into the onion. Place ground pork, parsley, egg, and bread crumbs into the bowl, and mix to combine thoroughly. Form the meat mixture into 1-inch meatballs; roll each meatball in the roasted flour. Reserve unused flour.
  • Pour the chicken broth into the pot, bring to a boil over medium heat, and carefully drop in the meatballs, a few at a time, stirring to keep them from sticking on the bottom. Drop in the bay leaf. Simmer the meatballs for 20 minutes; mix in the potatoes, and simmer until potatoes are tender and the broth has reduced, an additional 20 minutes. Transfer the meatballs into a bowl with a slotted spoon.
  • Remove and discard bay leaf. Mix remaining roasted flour with cold water in a cup, and gradually whisk the flour mixture into the simmering broth to thicken. Bring the gravy to a full boil, and cook, stirring constantly, until the gravy thickens, about 5 minutes. Return the meatballs to the stew, and serve.

2 cans (10-3/4 ounces each) condensed tomato soup, undiluted

4 medium potatoes, peeled and diced
4 medium carrots, diced
1 jar (16 ounces) whole onions, drained
1/4 cup minced fresh parsley

Steps:

  • In a large bowl, combine the egg, bread crumbs, chopped onion, salt, marjoram and thyme. Crumble beef over the top and mix well. Shape into 24 meatballs. Heat oil in a Dutch oven. Brown meatballs in batches; drain. , Add the soup, broth, potatoes, carrots and whole onions. Bring to a boil; reduce heat and simmer for 30 minutes or until meat is no longer pink. Garnish with parsley.

  • In a large lidded sauce pan, heat olive oil over medium heat. Add onion and peppers and sauté until soft, about 5-7 minutes. Add garlic and sauté 1 more minute. Add tomatoes, tomato paste, tomato sauce, oregano, salt, and pepper. If using canned tomatoes, crush with a wooden spoon, add the water and cilantro sprigs and lat come to a gentle boil. Reduce heat to low, cover and let simmer for 5-10 minutes.
  • Meanwhile, in a large bowl, combine ground turkey, egg, breadcrumbs, onion, garlic, salt and pepper. Using wet hands, mix all the ingredients well until everything is combined. Form meatballs, wetting hands as needed, to about the size of a golfball.
  • Carefully add the meatballs to the sauce and cook, covered, about 15 minutes. Uncover and add the capers and olives if using. Cook uncovered another 10 minutes. Taste and adjust seasoning. Serve with white rice and beans, if desired.
