Stewed Cinnamon Apples made with just three ingredients are great for breakfast or dessert. Serve them warm or cold on top of oats, yoghurt, ice cream or custard. Make a big batch and keep in the fridge or freezer to use throughout the week.

2 Apples (I use pink lady)
1 teaspoon Cinnamon
1 teaspoon Maple Syrup
2 tablespoon Water

Steps:

  • Peel and dice apples into fairly uniform pieces.
  • Place a small saucepan or skillet on low heat, and add water, apples, cinnamon and maple syrup. Cook, stirring regularly, for 10 minutes or until the apples have softened. Add more water to the saucepan if needed.
  • Remove from heat and serve (see list below for serving suggestions).

6 Rome or Granny Smith cooking apples (Can use (organic) apples of choice)
1/2 cup Water
1/2 cup Raisins/Sultanas ((for added sweetness and fibre))
2 tsp Cinnamon

Steps:

  • Peel and core the apples and chop them into small evenly sized pieces.
  • Put all the ingredients in a covered, heavy-bottomed pan and cook for about 15 minutes, stirring regularly.
  • Cook until soft with rough shapes, no longer identifiable as apple slices. The colour should be a russet brown with the cinnamon effect.
  • These may be eaten warm, or cold. I suggest making up as many ramekins (sized to hold 1 - 1.5 apple equivalent in each and covered and put in the fridge for easy access.

3/4 cup cinnamon candies, such as Red Hots
1/2 cup light brown sugar
4 large Granny Smith apples, peeled, cored and each cut into eighths
1 stick (8 tablespoons) salted butter
One 16-ounce store-bought pound cake, cut into 8 slices
Vanilla ice cream, for serving
Mint leaves, for garnish

Steps:

  • Combine the candies, brown sugar and 2 1/2 cups water in a large saucepan and place over medium-high heat. Cook, stirring, until the candies and sugar have fully melted, about 10 minutes.
  • Add the apples and bring to a boil. Cook until the apples are tender but not mushy, about 5 minutes. Remove the apples with a slotted spoon and transfer to a heatproof dish. Allow the syrup to boil for an additional 5 minutes to thicken and intensify. Pour the syrup over the apples and allow to cool. Transfer to the fridge and chill for at least 4 hours.
  • When ready to serve, warm a griddle over medium heat. Butter the griddle and toast the slices of pound cake for about 2 minutes per side, adding more butter as needed.
  • To plate, place a piece of pound cake on each plate. Top with a scoop of ice cream and 4 apple slices. Drizzle with additional syrup and garnish with the mint.

When fall rolls around, I find I have a craving for my mom's stewed apples. She never followed a recipe, but would somehow always manage to whip up the most flavorful apples you ever tasted! In an effort to recreate my mom's stewed apples, I came up with this recipe. We would usually have this as a side dish with supper, replacing applesauce. However, it would also be delicious served as a dessert with vanilla ice cream or over gingerbread or pound cake with a little whipped cream. I hope you will enjoy it!

4 tablespoons butter
7 cups cooking apples (thinly sliced, approximately 6, I like Granny Smith)
1/2 cup sugar
1/2 cup brown sugar
2 teaspoons cinnamon
1/4 teaspoon nutmeg
1/2 cup water

Steps:

  • In a 10" skillet (w/lid) melt butter over medium heat; turn off heat.
  • Mix in sugar and brown sugar, cinnamon, nutmeg and add 1/2 cup water, stirring to combine.
  • Bring mixture to a boil and allow to boil until beginning to thicken.
  • Reduce heat to medium; stir in apple slices, turning to coat.
  • Cook over medium to medium high heat 4-5 minutes, stirring, allowing sauce to continue to thicken.
  • Reduce heat to low, cover apples and cook until tender, stirring occasionally, another 5-10 minutes, adding more water if necessary, until apples are tender (cooking time will depend on the thickness of your apple slices).
  • Sauce will thicken as it cools.
