Quick Keto Chocolate Mousse image

When a sweet craving hits, you'll have this chocolate mousse ready in no time. No need to pre-whip the heavy cream - just throw everything into a bowl and mix! Use any keto-friendly granular sweetener that measures like sugar. I prefer the powdered version of Swerve®, since it dissolves better. Adjust cocoa powder and sweetener amounts to suit your tastes. This is quite rich, so you don't need a lot to feel satisfied.

3 ounces cream cheese, softened
½ cup heavy cream
1 teaspoon vanilla extract
¼ cup powdered zero-calorie sweetener (such as Swerve®)
2 tablespoons cocoa powder
1 pinch salt

Steps:

  • Place cream cheese in a large bowl and beat using an electric mixer until light and fluffy. Turn mixer to low speed and slowly add heavy cream and vanilla extract. Add sweetener, cocoa powder and salt, mixing until well incorporated. Turn mixer to high, and mix until light and fluffy, 1 to 2 minutes more. Serve immediately, or refrigerate for later.

This 10-minute sugar-free low carb chocolate mousse is rich and creamy with less than four net carbs and no sugar in each serving.

1 tablespoon water (cold)
1 teaspoon unflavored gelatin
2 tablespoons water (boiling)
1 cup Splenda
1/2 cup unsweetened cocoa powdered (Ghiradelli preferred)
1/8 teaspoon salt
1 cup heavy whipping cream
1 teaspoon vanilla extract
Optional: 1 cup whipped cream (lightly sweetened with Splenda)
Optional: 2 tablespoons unsweetened cocoa powder (for dusting)

Steps:

  • Gather the ingredients.
  • Chill a medium-sized mixing bowl in the refrigerator.
  • Meanwhile, place the cold water in a small bowl. Sprinkle with gelatin and let it stand for 1 minute.
  • Add boiling water and stir the mixture until the gelatin is dissolved. Set that bowl aside.
  • Combine Splenda, cocoa powder, salt , whipping cream, and vanilla extract in the chilled bowl until roughly mixed together. With an electric mixer on medium speed, beat mixture until it becomes stiff. Do not overbeat to avoid ending up with butter.
  • Beat in the gelatin mixture until it is combined. Again, take care not to overbeat to maintain the texture.
  • Spoon the mousse into a decorative dessert dishes or martini glasses and chill for 1 to 2 hours before serving.
  • Top with whipped cream lightly sweetened with Splenda and a sprinkling of cocoa powder if desired.

Stevia is a natural sweetner and so potent. This dessert is sugar, aspartame, nutrasweet, and egg free and something I can serve my kids without a bad conscience. My mom sent me the recipe and we just tried it. Very rich. Be careful with the amount of stevia because a little goes a long way. Next time I make it I will use less stevia to avoid an aftertaste.

1 teaspoon gelatin
1 tablespoon cold water
1 tablespoon boiling water
6 teaspoons stevia, blend or 3/4 teaspoon stevia extract
1/4 cup cocoa powder
1 cup heavy whipping cream
1 teaspoon vanilla

Steps:

  • In a small bow, sprinkle gelatin over cold water and let stand 5 minutes to soften.
  • Add boiling water, stirring until gelatin is completely dissolved and mixture is clear. Cool slightly.
  • In medium bowl, stir together stevia and cocoa. Add whipping cream and vanilla. Beat at medium speed until stiff peaks form. Pour in gelatin mixture and beat until well blended.
  • Spoon into serving dishes and chill for at least 1/2 hour.

1 tablespoon cold water
2 tablespoons boiling water
1 cup Splenda granular, sugar substitute
1/2 cup unsweetened cocoa powder (Ghiradelli preferred)
1/8 teaspoon salt
1 cup heavy whipping cream
1 teaspoon vanilla extract
whipped cream, lightly sweetened with splenda (optional topping)
light dusting unsweetened cocoa powder

Steps:

  • Preparation:.
  • Chill a medium mixing bowl in the refrigerator.
  • Meanwhile, place the cold water in a small bowl. Sprinkle with gelatin and let stand 1 minute. Add boiling water and stir until gelatin is dissolved. Set aside.
  • In the chilled bowl, combine Splenda, cocoa powder, salt, whipping cream and vanilla until roughly mixed. With an electric mixer on medium speed, beat mixture until it becomes stiff. Do not over-beat or you will end up with chocolate butter. Beat in the gelatin mixture just until combined.
  • Spoon chocolate mousse into decorative dessert dishes or martini glasses. Chill 1 to 2 hours before serving. Top with whipped cream lightly sweetened with Splenda and a sprinkling of cocoa powder if desired.
