TRADITIONAL BEEF ROULADEN

4 long, thin slices top round
Kosher salt and freshly ground black pepper
1/2 cup spicy brown mustard
2 dill pickles, sliced in thin spears
1 large onion, thinly sliced
1/2 cup chopped browned bacon
One 32-ounce carton beef stock
2 potatoes, sliced
1 cup all-purpose flour
1 cup butter, melted

Steps:

  • Preheat the oven to 375 degrees F.
  • Place each top round slice between wax paper and pound to tenderize; add salt and pepper and generously spread each with the spicy mustard.
  • On the wide part of each piece of meat, place about 5 pieces of the dill pickle spears, some onion and a heaping tablespoon of the browned bacon. Fold in the edges and roll up like a burrito.
  • Carefully brown the rolls on all sides in a frying pan. Place in a large pot with the beef stock.
  • Put a slice of the raw potatoes between each rolled roulade, making sure the pot is packed tight; the potato slices will hold the roulade together without having to use a string. Cover and bake for about 45 minutes.
  • Make your gravy from the drippings by mixing the flour and butter and adding it slowly into the beef stock until it reaches the desired consistency. Serve with red cabbage and potatoes or spaetzle. You can also serve the potatoes that have soaked up all the delicious juices and held together the rouladen.

8 turkey breast cutlets (about 1 pound)
1 tablespoon Dijon-mayonnaise blend
8 slices deli ham
8 slices provolone cheese
1/2 teaspoon poultry seasoning
1/2 teaspoon pepper
8 bacon strips
SAUCE:
2/3 cup Dijon-mayonnaise blend
4 teaspoons 2% milk
1/4 teaspoon poultry seasoning

Steps:

  • Preheat air fryer to 375°. Place asparagus on greased tray in air-fryer basket. Cook until crisp-tender, 4-5 minutes, tossing halfway through cooking. Set aside., Spread turkey cutlets with Dijon-mayonnaise. Layer with ham, cheese and asparagus. Sprinkle with poultry seasoning and pepper. Roll up tightly and wrap with bacon., In batches, arrange roulades in a single layer on greased tray in air-fryer basket. Cook until bacon is crisp and turkey is no longer pink, 8-10 minutes, turning occasionally. Combine sauce ingredients; serve with roulades.

1/4 cup chopped celery
1/4 cup minced parsley
1 cup fresh breadcrumb

3/4 cup parmesan cheese
12 slices bottom round steaks (paper-thin slices) or 12 slices tenderloin (paper-thin slices)
1/2 cup olive oil
3 cups beef stock
1 1/2 cups dry red wine
1 bay leaf
1 (12 ounce) package spinach noodles

Steps:

  • Mix onions, garlic, celery, parsley, & bread crumbs.
  • Add salt, pepper, & Pamesan cheese.
  • Blend well.
  • Spread 1-2 tablespoons of filling on each slice of meat & sprinkle with olive oil.
  • Roll up & secure with toothpicks or string.
  • Brown rolls in small amount of olive oil.
  • Add stock, wine, & bay leaf.
  • Simmer for 30 minutes.
  • Remove meat & reduce liquid.
  • Serve rolls & sauce over noodles.

2 teaspoons heavy cream
6 slices boiled ham, sliced thin

  • Combine cheese, horseradish, cream, and beat until smooth.

1/4 cup clover honey
1/4 cup Dijon mustard
1/4 cup whole-grain mustard
2 heaping tablespoons drained prepared horseradish
Kosher salt and freshly ground black pepper
1/4 cup canola oil, plus more for drizzling
1 clove garlic, chopped into a paste
Pinch of red chile flakes
4 ounces baby arugula
Four 6-ounce boneless, skinless chicken breasts
8 paper-thin slices country ham or prosciutto
8 ounces triple-cream cheese, such as Red Hawk
2 tablespoons unsalted butter
Micro arugula, for garnish

Steps:

  • For the mustard sauce: Whisk together the honey, Dijon mustard, whole-grain mustard and horseradish in a small bowl and season with salt and pepper. Cover and let sit to allow the flavors to meld while you make the chicken.
  • For the chicken roulade: Preheat the oven to 400 degrees F.
  • Heat 2 tablespoons of the canola oil over low heat in a large saute pan. Add the garlic and red chile flakes and cook for 30 seconds. Increase the heat, stir in the baby arugula, season with salt and pepper and cook until just wilted, about 2 minutes. Set aside.
  • Drizzle the chicken breasts with a little oil and thinly pound between 2 sheets of parchment paper or plastic wrap. Put the breasts on a flat surface skin-side down, and sprinkle the top sides with salt and pepper. Place 2 slices of the ham on each breast; spread 2 ounces of the cheese over the ham and then top with one-quarter of the arugula in the center. Roll the breasts tightly and tie with butcher's twine. Sprinkle the roulade with salt and pepper.
  • Heat a large ovenproof saute pan over high heat. Add the remaining 2 tablespoons oil and cook until it begins to shimmer. Put the rolls in the pan seam-side up and add the butter. Cook until golden brown on all sides, about 3 minutes. Transfer the pan to the oven and continue cooking until the breasts are just cooked through and the cheese has melted, 4 to 5 minutes.
  • Remove the rolls to a plate and let rest 5 minutes before slicing. Serve with the mustard sauce and topped with a bit of micro arugula.

The restaurant has since closed, but I was able to purchase an Stephenson's Restaurants Receipts Old Family Secret Recipes which has most of the Restaurants Signature dishes. I am happy to be able to bring this recipe to you to enjoy!

2 tablespoons butter
1/4 cup flour
1/4 teaspoon salt
1 cup hot milk
1/2 cup grated swiss cheese
1/2 cup tomato sauce
6 slices ready-to eat ham (thin slices)
1/4 cup evaporated milk
1/2 cup grated swiss cheese
2 tablespoons butter

Steps:

  • Sauce: Melt butter over low heat. stir in flour, salt to make smooth paste. Remove from heat. Stir in milk gradually until smooth. Add cheese. Stir over low heat to melt. Cool.
  • Roulades: Pour tomato sauce into 10x6x2 inch baking pan. Roll about 2 spoonsful of cheese sauce into each ham slice and roll ham slice, Place folded side down on tomato sauce. Blend evaporated milk into rest of cheese sauce. Pour over ham. Sprinkle with the 1/2 cup grated swiss cheese. Dot with butter. Bake at 350 degrees about 15 minutes or until hot and bubbly.

12 ounces salmon fillets (or 2 each)
salt & freshly ground black pepper
2 tablespoons sesame seeds
3/4 tablespoon olive oil
1 tablespoon rice wine vinegar
1 tablespoon soy sauce
1 cucumber, sliced very thinly lengthwise (optional)

Steps:

  • Slice each fillet horizontally, leaving one end untouched; turn over, spread open and salt and pepper; roll the fillet up, turban-like, as tightly as possible using a toothpick to fasten; repeat with the remaining fillet.
  • Put sesame seeds in a small saucer; stand a roulade up in the seed, coating the bottom and drizzle a bit of the olive oil on that side; repeat on the other side; repeat with the other fillet.
  • Grill or broil fillets on aluminum foil about 4 minutes, turn and cook opposite side another 6 minutes or until desired doneness.
  • Whisk vinegar and soy sauce together; remove cooked fillets from grill, drizzle with soy mixture and serve on a bed of cucumber strips.

If you lived in Kansas City, Mo from the late 60's to mid 90's to probably had gone to Stephenson's Restaurants the original being at 40 Highway and Lee's Summit Road. They have long since been closed, however I was able to purchase a recipe book called Stephenson's Restaurants Receipts Old Family Secret Recipes that have some of the original restaurants popular dishes. The Apple Fritters were a signature dish,. This is a wonderful recipe and I am glad I was able to share it again with those who remember it.

1 cup milk
1 egg (beaten)
4 tablespoons margarine
1/2 cup sugar
1/2 teaspoon salt
1 orange, juice and zest of
1 cup apple (chopped fine)
3 cups flour
2 teaspoons baking powder
1 teaspoon vanilla
4 cups vegetable oil, to fry fritters enough they float in a pot

Steps:

  • Beat egg, In a mixing bowl combine the milk, egg, and melted margarine. Add the orange juice, rind, chopped apples (skins can be left on ) and vanilla. Sift together the flour, salt, baking powder and stir into milk mixture with a spoon until blended. Do not over mix. Preheat oil in a skillet to 350 degrees. drop off end of tablespoon into hot oil. Fry to a golden brown. Turn so they brown evenly. Allow to cool. Roll in powdered sugar. Serve with salads or eat as dessert.

I've made this dish for years in the oven and it takes more than an hour. In the pressure cooker, 15 minutes. It comes out even more tender and perfect too!

1 tablespoon shortening

1 quart sauerkraut
1 tablespoon brown sugar
1 cup water

Steps:

  • Cut ribs into serving pieces. Heat cooker and add shortening. Brown ribs on both sides. Season with salt and pepper. Place sauerkraut over ribs and sprinkle with brown sugar. Add water. A special recipe from Edward Robert Brooks, "The Gourmet on the Go." Adapted from Morey Amsterdam's Benny Cooker Crock Book. Although the title comes from a joke from Amsterdam's night club act, the recipes are all genuine. Serve these roulades with buttered noodles or rice.

1 (4 ounce) can mushroom pieces
2 tablespoons finely chopped onions
1 teaspoon salt (to taste)
1/4 teaspoon pepper (to taste)
1/2 cup crumbled Roquefort cheese, divided
6 cube steaks, about 1 1/2 pounds total
2 tablespoons flour
2 tablespoons butter
1 1/4 cups vegetable juice cocktail (such as V8)
1/4 cup vodka
1 tablespoon Worcestershire sauce
2 drops hot sauce

Steps:

  • Drain mushrooms and reserve the juice.
  • Combine mushrooms, onions, salt, pepper and 1/4 cup Roquefort.
  • Spread mixture over steaks.
  • Roll steaks up and fasten with toothpicks.
  • Dredge in flour.
  • Heat butter in a large skillet with a cover.
  • Add meat rolls and brown on all sides.
  • Combine reserved mushroom juice, tomato-vegetable juice, vodka, Worcestershire sauce, and hot sauce.
  • Pour mixture over meat.
  • Cover tightly and simmer 40 minutes, or until meat is tender.
  • Remove meat to a heated platter and keep warm.
  • Stir remaining cheese into liquid in pan.
  • Cook, stirring constantly, just until sauce is blended.
  • Pour sauce over meat and serve with buttered noodles or rice.

(I don't know the ounces for the ingredients, this made me enter something. It's the large jar of mushrooms & the pasta & pesto only come in one size.)

1 (8 ounce) package tortellini, in refrigerated section of the store (I like the 3 cheese tortellini, but you can also use the chicken & cheese one.)
1 (4 -8 ounce) package pesto sauce, in the same section as the pasta (in a plastic container with lid about the size of a small package of dip)
Green Giant sliced mushrooms
3/4-1 lb deli chicken, have them slice it thick, for cubing
parmesan cheese
1 (10 1/2 ounce) can cream of mushroom soup
1 (10 1/2 ounce) soup can whole milk (up to 1 soup can)
garlic powder (optional) or fresh garlic (optional)
salt
pepper

Steps:

  • Boil tortellini according to directions on package.
  • Meanwhile, cut your chicken up into cubes.
  • While cooked pasta is draining empty can of mushroom soup, drained jar of sliced mushrooms, about half of the milk, and about 2/3 of the pesto into the large saucepan over low to medium-low heat. Stir together.
  • Dump pasta & cubed chicken breast into pan. Fold together with soup/pesto sauce.
  • Add parmesan cheese, garlic, salt & pepper to taste. Add remaining pesto & milk to desired consistency & pesto/soup ratio.
  • Top with more parmesan.
  • Enjoy!

If you lived in Kansas City you have no doubt visited this restaurant. I am glad I am able to bring this recipe for you to enjoy.

1/2 cup flour
1 1/2 teaspoons salt
1/2 teaspoon paprika
1/4 teaspoon pepper
1/2 cup nonfat dry milk powder
1 cut-up frying chicken
1/4 cup butter
1 1/2 cups hot water

Steps:

  • Dip chicken into water. Coat with mixture of flour and seasonings. Put skin side up into 13x9x2 inch baking pan. Dot with butter. Bake at 425 degrees for 30 minutes (or until golden brown). Remove from oven. Mix 1/2 cup Nonfat Dry Milk Powder with 1 1/2 cups hot water. Pour milk around chicken. Cover with aluminum foil. Return to oven and bake at 350 degrees for 45 minutes.
