2 cups semolina flour, plus more for baking sheet
1 cup all-purpose flour
1 teaspoon coarse salt
1 cup water, divided, plus more if needed

Steps:

  • Mound semolina and all-purpose flours and salt in 3 separate piles on a large, clean work surface.
  • Using your fingers, swirl ingredients together until combined.
  • Gather flour mixture into a pile, and create a well in center. Pour 1/2 cup water into well.
  • Gradually incorporate flour mixture into water using your fingers.
  • Once all the water is absorbed, continue adding water, 1 tablespoon at a time, until mixture begins to form a dough.
  • Start to gather and knead dough, working it until no dry flour remains on work surface.
  • Continue to knead until smooth and elastic, about 5 minutes.
  • Divide dough into 16 equal portions, and cover them with a clean, damp kitchen towel.
  • Roll 1 portion of dough into an 18-inch-long rope.
  • Use a knife to cut and drag a 1/3-inch piece of dough from end of rope facing you -- a grainy wooden cutting board helps grip the dough.
  • Holding knife at a 45-degree angle to work surface, press and roll dough toward you.
  • Unfurl each piece of dough over your thumb in the opposite direction to form a concave shape, and transfer to a rimmed baking sheet lightly sprinkled with semolina flour. Repeat with remaining dough. Orecchiette can be stored at room temperature in a single layer overnight; cover with a clean kitchen towel or plastic wrap.

1 cup all-purpose flour, plus more for dusting
Coarse salt and freshly cracked black pepper
1 large egg, lightly beaten
2 tablespoons extra-virgin olive oil
Freshly grated Parmesan, for garnish
Fresh basil leaves, for garnish

Steps:

  • Mound the flour on a clean work surface. Sprinkle with the salt and toss with your fingers, then make a well in the center of the flour and pour in the beaten egg. Quickly combine with your fingers and as the dough starts to come together, add 1 tablespoon of water at a time, up to 3 tablespoons total. Keep kneading until you get a solid but soft ball of dough, about 5 minutes. Place it in a bowl and cover with a damp towel for 30 minutes to 1 hour.
  • Divide the dough into 4 equal pieces. Roll them each out on a floured surface to make a skinny log about 10-inches-long. Pinch off a small piece of dough, just enough to cover your fingertip, and roll the dough against the floured work surface with your thumb, creating a "little ear". Transfer the orecchiette to a large piece of parchment paper. Keep pinching and making the orecchiette with your thumbs until no dough is left.
  • In the meantime, bring a pot of salted water to a boil. Pick up the sides of the parchment paper to slide the fresh pasta into the water. Boil until the pasta floats to the top, 2 to 3 minutes.
  • Reserve about half a cup of pasta water, and drain the rest.
  • Combine the pasta with the oil and 2 tablespoons pasta water in a large bowl (add more pasta water if it seems dry!). Season with a pinch of salt and pepper and divide between 2 dinner bowls, or among 4 smaller bowls. (Our kids eat only a tiny bit, so we could still call this 2 servings.)
  • Garnish with freshly grated Parmesan and fresh basil leaves!

Orecchiette are the typical pasta of Apulia (Puglia), the heel of Italy. Nowadays you can buy them in many supermarkets all over the world, but local women in the region still hand-make them for special occasions or just for Sunday lunch. The most traditional way to serve them is with broccoli rabe and anchovy sauce.

2 ½ cups durum wheat semolina flour (such as Bob's Red Mill®)
1 pinch salt
1 cup water, or as needed, at room temperature

Steps:

  • Mix semolina flour and salt in a large bowl or on a marble work surface. Make a well in the center.
  • Pour water into the well a little at a time, mixing it with the flour. Add as much water as needed to make a sticky but compact dough.
  • Knead dough with your hands by flattening the ball, stretching it, and folding the top towards the center. Turn 45 degrees and repeat until dough is elastic and smooth, but not too soft, about 10 minutes.
  • Shape dough into a ball. Place in a bowl and cover with plastic wrap. Let rest at room temperature for about 30 minutes before using.
  • Work with one portion of dough at a time, keeping the remaining dough covered to keep it from drying out. Dust a work surface with semolina flour; roll out the dough to make a rope, about 1/3 inch thick.
  • Cut off little 1/3-inch thick pieces. Pick up knife with a rounded tip. Carefully hold one side of the dough with your index finger. Hold the knife in your other hand. Gently drag the small piece of dough towards you. Lift up the knife by the end in such a way that you get a thicker edge. You'll obtain a small disk of dough, thinner in the centre. Press the disk gently against your thumb and it will curve.
  • Proceed the same way with the rest of the dough. Transfer orecchiette onto a floured surface and sprinkle with more semolina flour. Do not overlap orecchiette or they will stick together. Let dry for about 30 minutes before cooking.

400g orecchiette
1 tbsp olive oil
2 red chillies, deseeded and finely chopped
2 garlic cloves, crushed
400g can butter beans, drained and rinsed
400g can cherry tomatoes
1 lemon, zested and juiced
½ large bunch of parsley, finely chopped
25g grated parmesan or vegetarian alternative (optional)

Steps:

  • Cook the orecchiette following pack instructions until al dente, about 10 mins. Drain, reserving the cooking water.
  • Meanwhile, heat the olive oil in a large frying pan over a medium heat and fry the chillies and garlic for 2 mins until just softened. Mix in the butter beans, tomatoes, lemon zest and juice. Cook for 5 mins more, then scatter in the parsley and cook for another 2 mins. The tomatoes should have reduced slightly and the beans should be warmed through.
  • Tip the orecchiette into the frying pan with the butter bean mixture. Pour in a little of the reserved pasta cooking water if you prefer a looser sauce. Spoon into bowls and sprinkle with the cheese before serving, if you like.

1 lb hot Italian sausage, casings removed
1 (10 ounce) package white mushrooms or 1 (10 ounce) package brown button mushrooms, sliced
1/2 cup dry white wine
1/4 teaspoon black pepper
2 cups loosely packed basil leaves, torn up
1/2 cup parmesan cheese, grated

Steps:

  • Bring a large pot of lightly salted water to a boil; cook pasta as package directs.
  • Drain, reserving 1/4 cup cooking water.
  • Meanwhile, cook sausage in a 12-inch skillet over medium-high heat for 5 minutes, or until no longer pink.
  • If necessary, break large pieces apart with a wooden spoon.
  • Add mushrooms and cook an additional 5 minutes.
  • Pour in wine, reserved pasta water and black pepper.
  • Stir in basil.
  • Remove from heat; toss with pasta and cheese.
  • Note: For perfect pasta every time, for 1 pound of dried pasta, bring at least 6 quarts of salted water to a boil.
  • Add all of the pasta.
  • With wooden spoon, stir once or twice to prevent sticking.
  • Check at suggested time; if cooked properly, there will be no white inside.

This tiny handmade pasta is a labor of love, but you'll be glad you devoted an afternoon to fresh pasta-making once you've tasted it. The tender orecchiette is irresistible once tossed in the rich, buttery sauce studded with savory mortadella and bright peas.

For the orecchiette:
1 2/3 cups all-purpose flour, plus more for dusting
2 large eggs, beaten to blend
2 teaspoons olive oil
Pinch of kosher salt
For the mortadella and pea sauce and assembly:
2 tablespoons olive oil
2 small garlic cloves, finely chopped
1/2 cup homemade chicken stock or low-sodium chicken broth
6 tablespoons unsalted butter (preferably a European-style butter such as Plugra), cut into 6 pieces
1 (2-ounce) slice mortadella, diced (about 1/2 cup)
1/2 teaspoon finely grated lemon zest
Kosher salt, freshly ground black pepper
1/2 cup frozen petite peas, thawed
12 mint leaves, thinly sliced, divided
6 tablespoons grated Parmesan, divided

Steps:

  • Form the orecchiette:
  • Mound 1 2/3 cups flour into a 7"-wide circle on a clean work surface. Form a 3" well in the center. Add eggs, oil, and salt to the well. Using a fork, slowly incorporate flour closest to well to make a paste, gradually pulling in as much flour as you can with the fork. Using a bench scraper or your hands, incorporate remaining flour, then knead with your hands, adding 1 tsp. water at a time if necessary, until a smooth, pliable dough forms.
  • Fold top of dough toward you, then press down with the heel of your hands. Rotate dough 90 degrees. Continue kneading with this motion until dough is very smooth and elastic, about 10 minutes. Form dough into a ball, cover with plastic wrap, and let sit at room temperature at least 30 minutes and up to 4 hours.
  • Using bench scraper or knife, cut ball into 3 equal-sized pieces. Pinch off a walnut-sized piece from 1 piece to work with, then wrap all remaining dough tightly in plastic wrap. Starting from the center outward, roll walnut-sized piece into a long, thin rope about 1/3" wide, preferably on a wooden surface to make rolling easier. Using the tip of a sharp knife, cut rope into 1/3" pieces, then position them cut sides up. Using 2 fingers, press down to form 2 little indentations in a thin, flattened oval disc about 1/8" thick. Repeat with remaining dough, covering dough and formed orecchiette with plastic as you go. Lightly toss orecchiette with flour, then cover with plastic and let sit at room temperature up to 4 hours.
  • Make the mortadella and pea sauce and assemble:
  • Heat oil over medium-low in a large skillet. Cook garlic, stirring, until fragrant, about 2 minutes. Add stock and bring to a boil, then reduce heat to medium and whisk in butter, 1 piece at a time. Cook until sauce is thickened and creamy, 8-10 minutes. Immediately stir in mortadella and lemon zest; season with salt and pepper. Keep warm over very low heat.
  • Cook orecchiette in a large pot of generously salted boiling water just until pasta floats and is cooked through, 2-3 minutes. Using a slotted spoon, transfer pasta to skillet with sauce. Increase heat to medium, then add peas, half of the mint, and 4 Tbsp. cheese. Toss gently to coat; season with salt and pepper. Divide pasta among bowls and top with remaining mint and 2 Tbsp. cheese.

  • 3. Whisk them, gradually pulling in flour from the rim, until the mixture comes together into a firm ball of dough.
  • 4. Turn the dough out onto a well-floured surface and work it until smooth.
  • 5. With a well-floured hand, pinch off small fingerfuls of dough, roll them between your thumb and forefinger into balls, and press each in the middle to form an indentation. (Toddler fingers are especially well-suited to this task.)
  • 6. Cook the orecchiette in the boiling water for 1 minute past the point when they rise to the top. Drain and serve.
