- In a large saucepot, melt the butter and add the oats. Stir for 2 minutes to toast. Add the boiling water and reduce heat to a simmer. Keep at a low simmer for 25 minutes, without stirring.
- Combine the milk and half of the buttermilk with the oatmeal. Stir gently to combine and cook for an additional 10 minutes. Spoon into a serving bowl and top with remaining buttermilk, brown sugar, and cinnamon.
SCOTTISH BUTTERMILK STEEL CUT OAT SCONES
Steel cut oats are my new passion. I haven't tried this recipe yet, but will shortly. It comes from Bob's Red Mill, an excellent brand of healthy grains, etc. The recipe seems a tad fussy, but my mouth waters just thinking about the yummy (and healthy) end result.

Steps:
- Preheat oven to 350F degrees.
- Place the oats in a pie pan and toast them for 20 minutes, stirring often to toast evenly and not burn.
- Remove when slightly golden.
- Combine oats with buttermilk in a small bowl and let stand for 20 minutes.
- In a large bowl, combine the flours, baking soda, sugar, baking powder, salt and dried currants.
- Reset the oven to 400F degrees.
- Butter a baking sheet.
- Using a pastry blender, cut the 4 tablespoons butter into the flour until the texture is coarsely crumbled.
- Stir in the buttermilk/oat mixture until combined.
- Flour your hands and scoop up the dough, forming it into a ball. Do not overmix.
- Press the ball of dough directly into the pan, then press into a 3/4" thick circle.
- With a sharp knife, score the surface, almost to the bottom, making eight wedges.
- Brush the surface with milk and sprinkle a bit of sugar and cinnamon on top.
- Bake for 12 to 15 minutes.
- Cut into wedges.

STEEL CUT OATMEAL SCONES
Very slightly sweet, quite healthy compared to your average scone. If you want this sweet add another 1/2 cup sugar or splenda!! Great for on the go. This is also great if you add a cup of dried fruit such as blueberries, cherries or currants at the end. Be careful not to overmix and remember, these are not meant to be sweet. Caution this is a fairly moist dough, just use quite a bit of flour to avoid sticking. This recipe is lower calorie, high fiber, high protein (for a scone), and very low GI. These will keep you full for a very long time.

- Soak the oatmeal in the buttermilk for up 2 -3 hours, a minimum of 1 hour.
- MIx all dry ingredients together including cinnamon.
- Cut butter into dry ingredients.
- Mix extracts, egg and sugar well, into oatmeal/buttermilk mixture.
- Very gently mix wet and dry mixtures together until just incorporated and turn out onto floured surface.
- Roll out and cut to the size you prefer.
- Bake at 375 for 10-15 minutes depending on your oven, watch these very closely to make sure they do not dry out!
- Makes 24 medium/small scones.

BAKED OATMEAL - STEEL CUT
This is my twist on a recipe from Epicurious. I love steel cut oats, so I modified the recipe a bit to add a few healthier twists. I make a batch on the weekend, then portion it up for us to grab and go for breakfast at work. Just pop it in the microwave, and top it with some Greek honey yogurt. You can easily swap out the bananas and berries for apples, which we do in our house also! Fresh or frozen berries will also work. If you are short on time, you can swap out old fashioned oats for the steel cut and eliminate the soaking. NOTE:The prep time does not include the soaking of the steel cut oats.

- Measure the 2 cups of steel cut oats into a container and cover with water. Place them in the fridge to soak overnight and soften a bit (I have let them soak for a day or two before and it doesn't change anything). SHORT ON TIME - you can use 2 cups old fashioned oats instead for an even swap.
- Preheat the oven to 375°F with a rack in the top third of the oven. Spray a 9X13 pan with cooking spray. You can also use a 8-inch square pan if you prefer.
- Drain the water off the oats and let them sit in a colander for a bit to get all the water off.
- Arrange the bananas in a single layer in the bottom of the prepared baking dish. Sprinkle two-thirds of the berries over the top.
- In a large mixing bowl, mix together the oats, half the walnuts, baking powder, cinnamon, and salt.
- Cover the fruit with the oat mixture.
- In the same mixing bowl, whisk together the maple syrup, milk, egg, coconut oil, and the vanilla.
- Slowly drizzle the milk mixture over the oats. Gently give the baking dish a couple thwacks on the countertop to make sure the milk moves through the oats. Scatter the remaining berries and remaining walnuts across the top.
- Bake for 35 to 45 minutes, until the top is nicely golden and the oat mixture has set. Remove from the oven and let cool for a few minutes. Drizzle with maple syrup if you want it a bit sweeter before serving. Serve with vanilla or honey yogurt as a topping.

- Preheat the oven to 425 degrees F (220 degrees C). Lightly grease a baking sheet.
- In a large bowl, mix the flour, oats, sugar, baking powder, salt, and currants. Make a well in the center. In a small bowl, beat egg until frothy, and stir in melted butter and milk. Pour into the well, and mix to create a soft dough. Pat dough into two 1/2 inch thick circles. Place on the prepared baking sheet. Score 8 wedges into each circle of dough.
- Bake 15 minutes in the preheated oven, until risen and browned. Split wedges, and serve warm.

- Mix everything together, and scoop out lumps of batter using a a scant 1/4 cup measure.
- Place the cookies about an inch apart, and bake for 14 - 18
- minutes. Edges should just barely be turning brown.
- Let the cookies cool on the cookie sheet for about 10 minutes before transferring them to a cooling rack.

- Combine first 5 ingredients in a food processor or bowl.
- Add butter and process until it resembles coarse meal.
- Add oats, currants and buttermilk and stir mixture until dough just sticks together.
- (DO NOT over mix) Transfer to a floured work surface and knead about 5 times.
- Roll out dough to 1 inch thickness.
