CHORITOS A LA CHALACA... MUSSELS CALLAO-STYLE
Steps:
- Clean the mussels and remove the beards attached to the shells.
- Put them in a saucepan with the wine, cover and bring to a boil. When you see the steam, check if all the mussels are open. Turn off the heat, take out the mussels and let cool.
- Meanwhile combine red onion, tomato, corn, rocoto, lime juice, olive oil, salt, pepper and parsley leaves.
- Discard one of the shells of the mussels, cover with a tablespoon of this salsa with some of its juice, and serve immediately at room temperature.
STEAMED MUSSELS IN TEQUILA CHIPOTLE BROTH

- Serving suggestions: toasted bread and lime wedges
- In a large, hot, saute pan, add 1 tablespoon of oil and heat until it smokes, add the sliced garlic shaking the pan quickly so as not to burn the garlic, cook for approximately 30 seconds. Add the onions and tomatoes and cook for 3 minutes.
- Add the mussels tossing them in the pan to coat. Remove the pan from the heat and add the tequila and stock. Return the pan to the heat, cover the pan and cook for 5 minutes or until the mussels start to open. Add the chipotle and the cilantro and cook for 3 minutes. Discard any mussels that did not open. Taste and add salt and pepper, to taste.
- Serve with toasted bread and lime wedges.

- Rinse the mussels under cold running water while scrubbing with a vegetable brush. Discard any with broken shells. Heat oil in a 6 to 8-quart stockpot. Saute the shallot, garlic and thyme to create a base flavor. Add the mussels and give them a good toss. Add wine, lemon juice, chicken broth and red pepper flakes; cover the pot and steam over medium-high for 5 minutes until the mussels open. Toss in the tomato, parsley and butter, recover the pot, and steam for another minute to soften. The tomatoes should keep their shape. Serve with plenty of grilled garlic bread to sop up the broth.

Less is more when it comes to cooking mussels! Use only fresh mussels, which are tightly closed when you buy them. If you can't find fresh mussels, make something else! Serve with slices of fresh crusty bread to soak up the delicious broth.

- Fill a large pot with mussels. Sprinkle chopped onions and garlic over the shellfish. Do not add water, as mussels produce all the water needed for steaming! Cook over high heat until most or all of the mussels open. Discard any that do not open.

- It is very important to clean the mussels. Fresh mussels will still have closed shells, so look for these. In any case, place the mussels in a bowl full of water, under running water. Brush the surface of each with a wire brush. With the tip of a sharp knife remove the remains of any mollusks or small snails that are attached to the shells. Open the mussels with the tip of the knife and rinse inside.
- Place four cups of water in a medium saucepan with a tablespoon of salt, the celery stalk and the carrot. Let the water boil for about 15 minutes to extract the flavor of the vegetables. If you wish you can add two garlic and onion. This will serve to improve the taste of mussels, although this step is not essential.
- Add the mussels and cook uncovered for about five to ten minutes until they are cooked. Drain the water and let the steamed mussels cool.
