Found this online, and its really the easiest, fastest cake ever! Tastes good too! Plus there's practically no clean up- just one bowl needed for mixing and steaming. Definitely worth making when you have an overripe banana :)

Number Of Ingredients 7

1 banana
1 egg (can substitute 50 ml milk or water)
1/4 cup icing sugar (I used 1/8 cup packed sucanat)
1 teaspoon oil (I used extra virgin olive oil)
2 teaspoons water
100 g plain flour (used whole wheat pastry flour)
2 teaspoons baking powder

Steps:

  • First you start boiling water for steaming. I used a wok, but really any pot should work fine.
  • In one small mixing bowl, mash banana.
  • Add the rest of the ingredients, mix together well.
  • Steam 20 minutes (make sure the water is boiling and giving off lots of steam before putting bowl in).
  • Do not open steamer by the way. Resist the temptation. It will smell great while steaming.
  • EAT!

2 tablespoons unsalted butter, melted
2 1/2 cups all-purpose flour
2 teaspoons baking powder
1 1/2 teaspoons powdered cinnamon
1 teaspoon baking soda
1/4 teaspoon salt
3 large eggs, at room temperature
1 cup sugar
4 ripe bananas, mashed (about 2 cups)
1/2 cup non-fat yogurt
1 tablespoon vanilla extract

Steps:

  • Generously grease a 10-inch tube pan with the softened butter, making certain that it is thoroughly coated. Sift together the flour, baking powder, cinnamon, baking soda, and salt.
  • Break the eggs into a large bowl. Beat vigorously with an electric mixer at high speed until the eggs are light and lemon-colored and have tripled in volume, about 5 minutes. Add the sugar and beat for 3 minutes. Add the mashed bananas, yogurt, and vanilla extract, beating well after each addition. Slowly, fold in the dry ingredients. Pour the batter into the greased pan.
  • Fill a wok or a large pot with water for steaming and heat until boiling. Place the cake pan in a steamer tray over the boiling water or balance it on a trivet or an empty tuna can in the center of the pan. Cover and steam over high heat for 50 minutes, or until the cake is springy to the touch; check the water level after 30 minutes and add more boiling water if necessary. Remove from the steamer and let cool slightly. Unmold the cake onto a platter, cut into slices, and serve warm with tea. To reheat, steam for 10 minutes.

2 cups all-purpose flour
1 1/2 teaspoons baking powder
1 teaspoon baking soda
3/4 teaspoon salt
3/4 cup sugar
1/2 cup butter, melted (1 stick)
1/2 cup buttermilk, yogurt, or milk
2 eggs
1 teaspoon vanilla
2 ripe bananas, mashed (about 1 cup)
1/4 cup all-purpose flour
1/4 cup dark brown sugar
1/4 cup butter (1/2 stick)

Steps:

  • Preheat oven to 300 degrees. In a large bowl, combine the flour, baking powder, baking soda, salt, and sugar. Blend in the melted butter, mixing together until moist. Add 1/4 cup of the buttermilk and combine.
  • In a separate bowl, combine the other 1/4 cup of buttermilk with the eggs and blend into the flour mixture. Add the vanilla and mashed bananas. Beat for 1 minute. Place the batter in a greased 9-by-13-by-2-inch pan.
  • To make the topping, squeeze the flour, brown sugar, and butter together with your hands. Crumble the topping evenly over the batter. Bake for 35 to 40 minutes. When the cake is done, an inserted toothpick or fork should come out clean from the center.

Steps:

  • Preheat oven to 325 degrees F.
  • Grease and flour a 9x13 inch pan.
  • In a small bowl, mix mashed bananas with lemon juice, set aside.
  • In a medium bowl, mix flour, baking soda and salt.
  • Set aside.
  • In a large bowl, cream 3/4 cup butter and 2 1/8 cups sugar until light and fluffy.
  • Beat in the eggs one at a time, then stir in 2 teaspoons vanilla.
  • Beat in the flour mixture alternately with the buttermilk.

  • Spread on cooled cake.
  • You can add walnuts or pecans to the cake or sprinkle them on top of the frosting.

A gluten and dairy free version of our favorite banana cake. This recipe calls for steaming rather than baking to create a moist and delectable dessert.

1 cup rice flour
1/4 cup sweet rice flour
1/4 cup potato starch
3/4 cup dark brown sugar
3/4 teaspoon baking soda
1 teaspoon ground cinnamon
2 medium eggs
1 1/4 cups mashed bananas
4 1/2 tablespoons canola oil
1/4 cup dark brown sugar
1 tablespoon dark brown sugar (optional)
1 teaspoon cinnamon
2 tablespoons rice flour
2 tablespoons chopped nuts (optional)
1 1/2 tablespoons canola oil

Steps:

  • 1. Boil water on high heat for the steamer beforehand.
  • 2. In a bowl, sift together the dry ingredients. Make sure to mix it well. Set it aside.
  • 3. In another larger bowl, beat the eggs then combine mashed/pureed bananas and canola oil.
  • 4. With a mixer, gradually add the dry ingredients until every last bit is blended.
  • 5. Oil a baking pan or any type of container appropriate for steaming. (It doesn't really matter what shape it is as long as it fits the steamer and can also contain the batter leaving an inch allowance for puffing up.).
  • 6. When the water boils, place the container and steam for 20 minutes.
  • 7. Mix the ingredients for the sugar crumb topping. Mix well.
  • 8. After 25 minutes, the cake has already puffed up. Spread the sugar crumb topping and continue steaming for 5 more minutes or until a fork or toothpick comes out clean when the middle part of the cake is poked all the way through.
  • 9. Place on a rack and let it cool for about 20 minutes(or until you can resist the urge of devouring the whole thing). Enjoy!
