1 package yellow cake mix
3/4 cup milk
1 egg
1/4 cup corn syrup or 1/4 cup maple syrup

Steps:

  • Place syrup in bottom of pudding mold before adding batter.
  • Prepare the cake mix with the egg and milk or water according to directions on package.
  • Pour into a greased 2 to 2 1/2 qt pudding mold and cover with a lid, foil or greased double wax paper.
  • NOTE: When cooking for smaller numbers, make up the whole cake mix as directed, put pour only half the cake batter into a 1 1/2 qt mold and steam for 1 hour.
  • Alternately, fill in- dividual molds and steam for 20-25 minutes.
  • Bake remaining cake batter.

1 stick (1/2 cup) unsalted butter, softened, plus additional for greasing bowl
1/4 cup Lyle's Golden Syrup*, plus additional for drizzling
1/3 cup superfine granulated sugar
2 large eggs
1 1/3 cups self-rising all-purpose flour
1/2 cup whole milk
1 cup heavy cream
a deep heatproof bowl (1-qt; not plastic); kitchen string

Steps:

  • Add 2 inches water to a large wide pot. Set a rack or a few metal cookie cutters in bottom of pot and bring water to a boil. Bring 3 cups additional water to a simmer in a small saucepan.
  • Butter heatproof bowl, then pour 1/4 cup syrup into bottom. Beat together butter and sugar in another bowl with an electric mixer at medium speed until pale and fluffy. Beat in eggs 1 at a time, then add flour and milk alternately in batches, beating until combined. Pour batter over syrup. Cover bowl with a large round of wax paper, then top with foil, crimping tightly around edge. Tie string around rim to secure.
  • Set covered bowl on rack (water should come three fourths of the way up side of bowl; add simmering water if necessary), cover pot, and steam cake over simmering water 1 1/2 hours. Remove bowl from pot and let stand 5 minutes. Discard foil and wax paper. Invert a plate over bowl, then invert cake onto plate. Serve immediately, drizzled with cream and additional syrup.

250g butter , softened, plus extra for greasing
250g caster sugar
4 eggs
1 tsp vanilla extract
250g flour
1 tsp baking powder
50ml milk
250ml milk
2 egg yolks
25g caster sugar
2 tsp cornflour
few drops vanilla extract
75g caster sugar
25g butter
50ml double cream

Steps:

  • Butter a 1.5-litre pudding basin. To make the sponge, cream the butter and sugar in a mixing bowl until pale and fluffy. Add the eggs, one at a time, mixing well between each addition, then add the vanilla extract.
  • Sift the flour and baking powder into the bowl and fold into the sponge mixture, ensuring there are no lumps of flour remaining. Finally, stir the milk into the mixture.
  • Fill the basin with the sponge mixture and cover with a double layer of buttered foil and baking parchment, making a pleat in the centre to allow the pudding to rise. Tie the foil securely with string, then place in a steamer or large pan containing enough gently simmering water to come halfway up the sides of the basin. Steam for 2 hrs until an inserted skewer comes out clean.
  • To make the custard, bring the milk to the boil. In a bowl, beat together the yolks, sugar, cornflour and vanilla extract. Pour the scalded milk over the egg mix and beat well. Return to the pan and place over a low heat, stirring for a few mins until the mix begins to thicken. Take off the heat and leave to cool.
  • For the butterscotch sauce, dissolve the sugar with 2 tbsp water over a low heat. Bring to the boil; do not stir. When the sugar has turned into a dark, golden caramel, whisk in the butter. Remove from the heat and stir the cream through.
  • When the sponge is cooked, turn out onto a plate, drizzle with the butterscotch sauce and serve with the custard.

3 tablespoons golden syrup
175 g self rising flour
1 teaspoon baking powder, rounded
175 g butter, soft
3 eggs
175 g brown sugar
1 tablespoon black treacle
3 tablespoons golden syrup
to taste custard
to taste creme fraiche

Steps:

  • Grease the bowl, and foil.
  • Get your steamer prepared and start it heating.
  • Put 3 Tbsp golden syrup in bottom of bowl.
  • In a large bowl, sift flour and baking powder into it.
  • Add butter, eggs, sugar and black treacle. Beat for 2 minutes with a hand mixer.
  • Spoon mixture into greased bowl and level with the back of your spoon.
  • To serve loosen pudding with a knife and invert onto a warm plate. Pour Extra 3 Tbsp golden syrup over top and serve with custard or creme' fraiche.

1 tbsp fresh white breadcrumbs
splash brandy (optional but delicious)
175g golden caster sugar
zest 1 lemon
3 large eggs, beaten
175g self-raising flour
2 tbsp milk
clotted cream, to serve

Steps:

  • Use a small knob of butter to heavily grease a 1-litre pudding basin. In a small bowl, mix the golden syrup with the breadcrumbs and brandy, if using, then tip into the pudding basin.
  • Beat butter with sugar and zest until light and fluffy, then add eggs gradually. Fold in the flour, then finally add the milk.
  • Spoon the mix into the pudding basin. Cover with a double layer of buttered foil and baking paper, making a pleat in the centre to allow the pudding to rise. Tie the foil securely with string, then place in a steamer or large pan containing enough gently simmering water to come halfway up the sides of the basin. Steam for 1½ hrs. Turn out onto a serving dish. Serve with lashings of clotted cream and a little extra golden syrup drizzled over if you wish.

custard , to serve (optional)
4 tbsp jam (we used strawberry), marmalade, curd, golden syrup or chopped stem ginger (or 200g/7oz canned fruit, drained and roughly chopped)
175g/ 6oz butter , softened
175g/ 6oz caster sugar
3 eggs
175g/ 6oz self-raising flour
1 tbsp milk
1 tsp vanilla extract

Steps:

  • Generously grease a 1.2-litre pudding basin and put your chosen topping in the base. Boil a kettle of water. To prepare your steamer, put a snugly fitting upturned bowl in the base of a large, deep saucepan, big enough to hold the pudding.
  • Put the ingredients for the sponge in a food processor and blend until smooth (but don't overwork the mix), then tip into the pudding basin. Cover with a lid made of baking parchment and foil, and tie with string to secure (see step-by-step). Stand the pudding on the upturned bowl in your saucepan. Pour in enough hot water to come halfway up the side of the pudding basin. Set over a medium heat and bring to the boil. Cover the pan with a tight-fitting lid, lower the heat to a gentle simmer and leave to steam for 2½ hrs, topping up with boiling water if the level gets too low.
  • Check the pudding is cooked by inserting a skewer through the foil and parchment lid into the centre of the pudding. If the skewer still has some wet mixture on it, return the pudding to the steamer for a further 15-20 mins, then check again. Once cooked, uncover and turn the pudding onto a plate. Serve straight away with custard, if you like.
