ZHARKOYE (RUSSIAN STEW)

This is a wonderful ancient Russian dish that will surprise you by delicious taste and tempting aroma. Serve it on a holiday table and your guests won't get up until the plates are empty.

1 lb beef roast
5 medium potatoes
1 medium onion
2 tablespoons butter
1 medium carrot
2 aka parsnips parsley roots
1 celery root
3 garlic cloves
1 tablespoon sour cream
1 tablespoon dill, chopped
1 tablespoon parsley, chopped
1 (10 3/4 ounce) can beef broth
salt, to taste
pepper, to taste

Steps:

  • Peel potatoes, wash, cut into cubes and fry in butter until light golden.
  • Slice onion, carrot, and roots, fry in butter until golden.
  • Cube beef and fry in butter until light brown.
  • In a ceramic pot, put beef, potatoes, onion, carrot, roots, garlic, season with salt and pepper and pour in the broth.
  • Cook in the oven for 30 minutes at 350, or crockpot for 4 hours on low.
  • 10 minutes before done, add sour cream and sprinkle with green.
  • Serve Zharkoye with salad from fresh vegetables, pickles, sauerkraut and greens.

2 1/2 lbs trimmed pork shoulder, cut into 3/4-inch pieces
1 1/4 teaspoons salt
2 tablespoons olive oil
3 large garlic cloves
1 teaspoon dried summer savory
3/4 teaspoon coriander seed
1/2 teaspoon fenugreek seeds
1 large red onion, finely chopped
1 bell pepper, chopped
4 jalapeno peppers, finely chopped
1 cup water
1/2 cup chopped fresh parsley
3 dill pickles, chopped
3 cups water
3/4 teaspoon salt
3/4 lb old fashioned grits
3/4 lb mozzarella cheese, cut into 1/2-inch cubes

Steps:

  • Place pork in 4 qusrt pot and salt and pepper to taste. Cover pot and let meat steam over high heat, stirring occasionally, 10 minutes. Stir in 1 tablespoon olive oil and brown meat, stirring occasionally, 6-8 minutes.
  • Mash garlic cloves, summer savory, and 3/4 teaspoon salt in mortar and pestle. Put garlic paste into and small bowl and grind the coriander and fenugreek seeds in the mortar and pestle.
  • Add garlic paste and 1 teaspoon olive oil to pork and stir over medium heat 1 minute. Add onion, bell and jalapeno peppers and coriander/fenugreek and cook until onion is softened, about 5 minutes.
  • Add 1 cup water and bring to bowl. Reduce heat and simmer 1 hour.
  • Add parsley and pickles and serve over grits.
  • For the grits:.
  • Bring 3 cups water and 3/4 teaspoon salt to a boil. Stir in grits, return to boil, then simmer, stirring, until thickended, about 18 minutes.
  • Increase heat to medium-low and add cheese a few cubes at a time while stirring until it is all melted inches.

2 berkshire pork chops, 1 inch thick, I used 3 boneless, bone in works too
1 apple, peeled, cored, chopped
1/4 cup calvados
1/2 cup demi-glace, can use More Than Gourmet Classic French Veal Stock mixed with water to equal 1/2C
1 teaspoon sage, fresh, chopped
2 tablespoons butter, divided
1 tablespoon olive oil
salt, to taste
pepper, to taste

Steps:

  • Preheat the oven to 350ºF.
  • Pat the pork chops dry and sprinkle with salt and pepper.
  • In an ovenproof pan, put in 1 tablespoon of butter and olive oil, and on high heat, sear the pork chops for 2 minutes on each side, until nice and brown.
  • Spoon out most of the fat in the pan and put the pan in the oven.
  • Roast the pork chops for 10 minutes, until the internal temperature is 140ºF. It may take less time. Berkshire pork is best at this temperature, which is lower than the USDA recommended temperature of 160ºF. If you are a concerned person, then you are better off sticking with 160ºF. NOTE: cooking time may vary depending on thickness of chops.
  • A couple minutes before you think the pork chops are done, you can peel, core and chop the apple into little pieces.
  • Take the pan out of the oven, remove the pork chops and keep warm.
  • In the now empty pan used to roast the pork, put back on a burner on medium-high heat, and then add the apples, sage and remaining tablespoon of butter. Caramelize for a minute or two.
  • Add the Calvados and reduce by half to burn off the alcohol.
  • Add the demi-glace, any juices in the bowl from the reserved pork, and salt and pepper. Reduce for minute or two until it is nice and thick.
  • Spoon the sauce and apples over the pork chops and serve.
  • Serving suggestions: Serve with Boiled carrots and potatoes.
