This tender crisp roasted bok choy recipe makes an easy and healthy 12 minute, low calorie side dish. Amp up the flavor with a drizzle of balsamic reduction and sprinkle of sesame seeds.

1 pound baby or sprout bok choy ((about 14 pieces))
1/2 pound broccoli ((1/2 head))
2 tablespoon olive oil ((or vegetable oil))
1/4 teaspoon garlic powder ((or 1 clove finely minced))
1/4 teaspoon salt
1/4 teaspoon pepper
optional: 1/2 tsp red chili flakes or red pepper flakes
drizzle Balsamic reduction (bottled), Note 1
1 tablespoon or more, toasted sesame seeds, Note 2
optional: 1 teaspoon lemon zest or a squeeze of lemon juice. Note 3

Steps:

  • Heat oven to 450F/232C. Line a large baking sheet with foil and spray with cooking spray/oil. Parchment paper is fine too if it can withstand a very high heat.
  • PREPARE BOK CHOY AND BROCCOLI: Cut 1/2 inch/1.27 cm off white bult ends of boy choy. Separate stems (or cut baby bok choy in half lengthwise if using regular bok choy). Tear off any partial leaves that are wilted or brown. If adding broccoli, cut stems off and cut florets in half or into smaller pieces.
  • MIX WITH SEASONINGS: Lay bok choy and broccoli in a single layer on pan. Drizzle with oil. Sprinkle with garlic powder, salt and pepper and red pepper flakes (if using). Toss with hands to coat veggies evenly and spread out in single layer.
  • ROAST, DRIZZLE AND SERVE: Roast for 6 minutes or until slightly browning. If you prefer more char or caramelization, continue roasting another 4-5 minutes, but vegetables will be softer. Remove from oven. Transfer to platter. Drizzle with balsamic reduction and sprinkle with toasted sesame seeds. Garnish with lemon juice or zest if desired.

4 baby bok choy (about 1 pound), split horizontally
2 tablespoons finely chopped chives
4 teaspoons reduced-sodium soy sauce
2 teaspoons lime juice
1 teaspoon lime zest
1/4 teaspoon sugar
1 teaspoon spicy sesame oil

Steps:

  • Place the bok choy in a steamer basket and place the basket over (not in) simmering water. Steam until the base of the bok choy is just tender when pierced with the tip of a knife, about 6 minutes. Meanwhile, whisk together the chives, soy sauce, lime juice, lime zest and sugar in a small bowl. Transfer the bok choy to a platter and drizzle with the soy mixture. Drizzle with the spicy sesame oil and serve.

Steps:

  • In a medium skillet, bring water to a boil. Add bok choy. Cover; simmer over medium-low heat until tender, 5 to 7 minutes. Uncover; cook over high heat until pan is dry, 2 to 4 minutes. Add vegetable oil and garlic clove; cook, tossing often, until garlic is fragrant, 2 minutes. Season with coarse salt and ground pepper.

1 pound broccoli
2 tablespoons canola oil
1 garlic clove, chopped
1 tablespoon finely grated fresh ginger
1 to 2 tablespoons soy sauce

Steps:

  • Cut white stalks from bok choy; slice into 1-inch pieces. Coarsely chop green leaves.
  • Peel stalks from broccoli; slice 1/4 inch thick. Cut florets into bite-size pieces.
  • In a large skillet, boil 1/2 cup water. Add bok choy stalks and broccoli; cover. Simmer over medium-low until broccoli is bright green, 5 to 7 minutes. Uncover; cook on high until water evaporates, 2 to 4 minutes.
  • Add bok choy leaves, oil, and garlic. Cook, tossing often, until garlic is fragrant, 2 minutes.
  • Press ginger in a sieve over skillet to release juices. Stir in soy sauce.

This is among the easiest, most flavorful preparations of greens imaginable, and it pairs beautifully with almost any vaguely Asian roasted meat or fish. It is also exceptional on its own, with rice. You could swap out the bok choy for broccoli, if that's all you have, or chard, or beet greens.

1 tablespoon soy sauce
3 1/2 tablespoons oyster sauce
Pinch of sugar
2 tablespoons rice vinegar (do not use seasoned rice vinegar)
1 tablespoon neutral oil
1 tablespoon finely minced garlic
4 to 6 bunches of baby bok choy, approximately 1 1/2 pounds, cleaned, with ends trimmed

Steps:

  • Combine soy sauce, oyster sauce, sugar and rice vinegar in a bowl and set aside.
  • Heat oil in a skillet or wok set over high heat. When it shimmers, add garlic, then bok choy, and stir-fry for 2 minutes. Add 2 to 3 tablespoons water to the skillet or wok, then cover it and allow to cook for 2 to 3 minutes more, until bok choy has softened nicely at its base.
  • Remove bok choy from the skillet or wok and place it on a warmed platter. Drizzle the reserved sauce over the greens and serve.

1 lb fresh broccoli
1 lb fresh baby bok choy
1 clove minced garlic
2 tablespoons soy sauce
1 tablespoon vegetable oil (originally called for 2 T, but I thought it was too much)
2 teaspoons finely minced ginger

Steps:

  • Cut broccoli head into florets and stems into bite sized pieces.
  • Cut the leaves off the bok choy and cut the stems into bite sized chunks.
  • Steam the broccoli and the stems of the bok choy in half a cup of boiling water for 5 minutes or until they are bright green.
  • Remove lid and boil water out.
  • Add garlic and oil and stir well.
  • Add bok choy leaves.
  • Cover pot briefly til leaves just wilt.
  • Add ginger and soy sauce.
  • Stir, then serve.

3 tablespoons oyster sauce
2 teaspoons low-sodium soy sauce
2 teaspoons rice vinegar
1 teaspoon toasted sesame oil
Pinch of sugar
1 1/2 pounds baby bok choy (3- to 4-inch heads), bottoms trimmed
2 tablespoons vegetable oil
3 cloves garlic, roughly chopped
1 tablespoon roughly chopped fresh ginger

Steps:

  • Stir the oyster sauce, soy sauce, rice vinegar, sesame oil and sugar in a bowl until well combined; set aside. Wash the bok choy well to remove any grit and drain in a colander, leaving some water clinging to the leaves. Halve any large heads lengthwise.
  • Heat 1 tablespoon vegetable oil in a large nonstick skillet over medium-high heat. Add half each of the garlic and ginger and cook, stirring, until just softened, about 30 seconds. Add half of the bok choy and stir to coat. Cook until the bok choy is crisp-tender at the stem, 4 to 5 minutes; add water, 1 tablespoon at a time, to keep a bit of moisture in the skillet and prevent the garlic from burning. Remove to a platter.
  • Add the remaining 1 tablespoon vegetable oil to the skillet and repeat with the remaining garlic, ginger and bok choy. When tender, return the first batch of bok choy to the skillet and heat through. Transfer all the bok choy to the platter and drizzle with the sauce.

1 tablespoon peanut oil
2 garlic cloves, finely minced
1 teaspoon grated fresh ginger
3/4 lb baby bok choy, leves separated
1/2 lb snow peas
1/2 cup chicken stock (or vegetable stock if you wish to keep it vegetarian)
2 tablespoons oyster sauce
1/2 teaspoon sesame oil

Steps:

  • Add the oil, garlic and ginger into a wok or large saute pan. Turn the heat to medium-high. As the oil heats, the garlic and ginger will infuse the oil with flavor. Take care that they do not burn. When the oil is hot, add the bok choy and the snow peas and toss to coat them in the oil.
  • Stir-fry the mixture for about a minute. Add the stock and oyster sauce and bring to a boil. Cover and cook for 2 minute until the bok choy stems are crisp-tender. Drizzle the sesame oil over the mixture and serve.

  • Heat oil on low-medium in a non-stick wok or skillet. Add garlic and stir fry slowly until lightly golden. *Any vegetable oil is fine although I don't recommend olive oil because of the flavor conflict.
  • Add all remaining ingredients and bring to a boil and then keep to a simmer for about 7 minutes.
  • Serve in a deep plate or bowl.
