- In a small bowl, pour boiling water over sun-dried tomatoes; let stand 5 minutes. Drain., In a large skillet coated with cooking spray, heat butter over medium-high heat; saute mushrooms and shallots until tender, 3-4 minutes. Add garlic; cook and stir 1 minute. Remove from pan., Sprinkle steaks with pepper and salt. In same skillet, heat oil over medium heat; cook steaks until desired doneness (for medium-rare, a thermometer should read 135°; medium, 140°), 5-7 minutes per side. Remove from pan; keep warm. , Add wine and thyme to skillet; bring to a boil, stirring to loosen browned bits from pan. Cook, uncovered, until liquid is reduced by half. In a bowl, mix flour and broth until smooth; gradually add to wine mixture. Stir in sun-dried tomatoes and mushroom mixture; bring to a boil. Cook and stir until thickened, about 2 minutes. Spoon over steaks.

MINUTE STEAK AND MUSHROOM SAUCE
One of my favorite meals to eat, this is sooo easy and can be done in about 30 minutes. Goes great with mashed potatoes and rolls of some kind are a MUST to sop up the extra mushroom sauce.

Steps:
- Slice mushrooms (if using fresh) and saute in butter until tender.
- If using a can, drain well.
- Set aside.
- In a large skillet, heat oil.
- Salt minute steaks and dredge in flour.
- Fry until breading is brown.
- **Make sure when frying you leave the meat long enough for the breading to fry until it sets, as it will fall off if not fried long enough.
- This is what makes it GOOOOD!
- When the meat is fried, place on paper towels to drain excess oil.
- Place in a 2 quart casserole dish and keep warm.
- Leave 2 tablespoons of oil in the skillet and remove the rest.
- Add cream of mushroom soup, milk, and mushrooms, stirring constantly.
- Let soup simmer on med-low heat until throughly heated.
- Pour over warm meat and serve.

- Add steaks and cook on med-hi for 6-7 minutes per side.
- Remove from heat and keep warm.
- To pan add remaining butter and mushrooms, cook and stir 3 minutes.

- Sprinkle both sides of steaks with flour. In a large skillet, cook steaks in oil to desired doneness (for medium-rare, a thermometer should read 135°; medium, 140°; medium-well, 145°). Remove and keep warm. In the same skillet, saute the mushrooms, onions and garlic until tender, adding additional oil if necessary. Stir in wine. Bring to a boil; boil for 1 minute. Add the broth, salt and pepper. Bring to a boil; boil for 6 minutes or until sauce is reduced by half. For two people, serve two steaks with 1-1/2 cups sauce. STEAK IN RUM AND MUSHROOM SAUCE FOR TWO
The natural flavors of the mushrooms and rum, as well as the small amount of alcohol will enhance the flavor of the meat. My preference is the Chuck Eye Steak, but any tender cut of meat could be used including a ground beef patty or even a chicken breast. Cooking is a Creative Sport.

Steps:
- Rub both sides of the steak, first with the pepper, and then the olive oil.
- Sear the meat in a dry frying pan for 3 1/2 minutes per side or until you are happy with the doneness.
- Remove the meat, add the butter and stir until it is melted and starts to turn brown.
- Reduce the heat, add the flour, rum, liquid from the mushroom can, and the mushrooms.
- Stir until the sauce thickens.
- If the sauce is too thick, add the water.
- Adjust taste with the salt.
- Serve with a baked potato, or another option is to add cooked pasta to the mushroom sauce while it is still in the pan.

This is delicious and quite easy to prepare, I have even made this recipe using pork tenderloin, the sauce recipe can be doubled if desired, make sure to brown the meat on both sides this will contribute to the flavour of the dish and make certain to leave the steak sit out to almost room temperature so plan well ahead --- this is very good!

- Season the steak with pepper, then let the steak sit out to almost room temperature, this will help relax the meat fibers and make for a more tender and flavorful steak (just before frying season the steak with a small amount of salt).
- In a large skillet, melt half the butter over high heat; brown steak on both sides (about 2 minutes per side).
- Transfer to a plate.
- Reduce heat to med-high; add remaining butter to skillet.
- Cook onions, mushrooms and thyme, stirring for 10 minutes, or until liquid is released, and the mushrooms are starting to brown.
- Add in the garlic (if using) and cook for 2 minutes.
- Add flour and cook stirring for 1 minute.
- Gradually stir in beef stock, cream and horseradish.
- Reduce heat, and simmer, stirring for 5 minutes, or until sauce is thickened.
- Return steak, and any accumulated juices to pan; simmer for 5 minutes, or until steak is desired doneness.
- Let steak rest for 5 minutes.
- Season sauce with more salt and pepper to taste.
- Slice steak thinly across the grain, and serve with the sauce.

- Mix meat, salt and pepper; shape mixture into 2 oval patties.
- In 8-inch skillet, cook patties over medium heat, turning occasionally, until done, 8 to 12 minutes.
- Remove patties to warm plate.

- In a bowl, combine beef, flour, Worcestershire sauce, onion, and spices; blend gently thoroughly mixing all ingredients.
- Add milk and mix again.
- Shape into 8 patties, cover and refrigerate.
- Meanwhile, place mushrooms in a small bowl.
- Cover with hot water and soak 20 to 30 minutes; chop and set aside.
- Strain water through a paper towel into a clean bowl (this will remove any dirt).
- Save the liquid.
- Add enough beef broth to saved liquid to make 1 cup.
- Add red wine and stir well.
- Place a heavy nonstick skillet over medium-high heat.
- Add patties and brown them thoroughly on each side.
- Remove from skillet and drain on paper towels.
- Pour off any liquid in skillet and return skillet to heat.
- Add chopped mushrooms, liquids, and carrots to skillet.
- Bring liquid to a boil and reduce it by a third.
- Add beef patties, reduce heat and simmer 10 minutes.
- Sprinkle patties with parsley and serve hot.
- Serve with baked potatoes and fresh green salad, if desired.
