When I was young, my favorite food to order in a restaurant was beef stew. My mother and I decided to create our own and experimented with different ingredients until we came up with this recipe. - In a 4-qt. slow cooker, combine the first 12 ingredients. In a large bowl, combine the beef, flour, salt and pepper; toss to coat. In a large skillet, brown beef in oil in batches. Transfer to slow cooker., Cover and cook on low for 6-8 hours or until beef is tender. Serve with noodles.

- Mix 1/3 cup of the steak sauce, the onions, rosemary, lemon zest, garlic and thyme. Place steak in nonmetal dish or resealable plastic bag. Add steak sauce mixture; turn to evenly coat steak on both sides. Cover and refrigerate 1 hour to marinate, turning occasionally.
- Preheat grill to medium-high heat. Remove steak from marinade; discard marinade.
- Grill steak 5 to 7 min. on each side or until cooked through, brushing occasionally with the remaining 1/3 cup steak sauce.

- Rinse potatoes and boil in salted water for about 30 minutes until done. Drain, let cool, peel and cut into wedges.
- Rinse and halve peppers and cut into thin strips. Rinse scallions and cut diagonally into rings. Lightly cook potatoes in 3-4 tablespoons hot oil for about 5 minutes until light golden brown. Add peppers, season with salt and pepper and cook for about 5 minutes.
- Rinse steaks, pat dry, rub with salt and pepper and fry on all sides in 1-2 tablespoons hot oil for about 1 minute until brown. Remove steaks from heat and leave to infuse briefly, turning occasionally.
- Add scallions to vegetables and mix to taste.
- Combine 2 tablespoons oil with balsamic vinegar and lemon juice and season with salt and pepper. Cut steak into thin slices, arrange on plates, drizzle with balsamic mixture and serve with vegetables.

- Position a broiler pan on the rack closest to the broiler and preheat to high for at least 10 minutes.
- Pulse the anchovies, garlic, Dijon mustard, herbes de Provence, salt and pepper in a small food processor. Add the olive oil and pulse to mix. Rub the paste all over the steak.
- Carefully pull the preheated pan from the broiler, set the steak in the center of the rack (it should sizzle when it hits the pan), and return to the broiler. Cook until the meat feels firm but still gives gently when pressed, 8 to 10 minutes for medium rare. (If your pan rack has preheated properly, it will not be necessary to turn the meat. However, if your broiler doesn't have a high output of heat, turn the meat 3/4 of the way through cooking to finish off the other side.)
- Remove the meat from the broiler, remove it to a cutting board and let it rest for 5 to 10 minutes. Thinly slice the meat, against the grain, set on a platter. Serve warm with lemon wedges.

- Pour wine into a large plastic zip-top bag and add smashed garlic cloves.
- Place steaks into bag, seal and "knead" bag to cover steaks all over in wine.
- Place in fridge to marinate (at least one hour).
- Meanwhile, coarsely chop black and green olives.
- Place olives in a medium-sized bowl; stir in chopped tomato and capers with liquid.
- Season with black pepper to taste.
- Place olive mixture in fridge until needed.
- When ready to cook, season steaks with the salt, pepper and garlic powder.
- Heat oil over medium heat in a large skillet.
- Add steaks and cook 2-5 minutes per side for desired doneness (rare to medium).
- Place steaks on a serving platter and top each with equal portions of the olive mixture.
ONE-PAN GRILLED STEAK AND VEGETABLES
I found by cooking all of this dinner in one pot, it added so much flavor to the dish and prevented the grill from flaming or pieces falling in the grate! Using my cast iron pan made it super easy and I served dinner right from the pan! How easy is this. Love one-pot recipes, and this one is paleo, too. Glenn and I are not very big eaters and I don't go wow over steak (just me) but I go crazy over eggplant. This was a perfect meal for two.

- Preheat the grill to 350 degrees F (175 degrees C).
- Drizzle steak with 1 tablespoon olive oil. Season with Italian seasoning, garlic powder, sea salt, and black pepper.
- Lay eggplant out in an even layer on a wood board and lightly season both sides with salt.
- Heat 2 tablespoons olive oil in a large cast iron pan on the grill. Add Brussels sprouts and eggplant. Cook until browned on all sides, flipping halfway, about 15 minutes.

STEAK WITH VEGETABLES PROVENCALE

- Barbecue, pan-fry, or grill the steaks to desired degree and keep warm. Peel and chop onions, seed and chop red and green peppers, chop eggplant. Heat oil in large frying pan, add onions, peppers, and eggplant. Saute 2 minutes. Add peeled and chopped tomatoes and water. Simmer covered for 10 minutes. Add parsley, salt and pepper.
SEARED TUNA WITH TIAN OF PROVENCAL VEGETABLES

- For the vegetable tian: Preheat the oven to 350 degrees F. Lightly oil a 9 by 13-inch ceramic or glass baking dish. In a small bowl, combine the oil with the thyme, garlic, salt, and pepper.
- Arrange half of the vegetables in rows in the dish, interspersing the different types until the bottom of the dish is covered. Drizzle with half of the oil mixture. Make a final layer of mixed vegetables, and drizzle with the remaining oil mixture. Cover the top of the vegetables with lightly oiled parchment paper. Bake until the vegetables are tender, about 40 minutes.
- Remove the vegetable tian from the oven, keep warm in a warm place, and increase the oven temperature to 450 degrees F.
- For the tuna: Season the tuna with the salt and pepper. Heat the oil in a large nonstick skillet over high heat. Add the tuna and cook, turning once, until seared on both sides, about 2 minutes. Uncover the tian and place the seared tuna fillets on top of the vegetables, spacing them evenly. Bake, uncovered, until the tuna is rare to medium-rare, about 5 minutes. Spoon equal amounts of the sauce in the centers of 6 warmed plates. Using a wide spatula, lift portions of the tuna and vegetables and transfer to the plates.
- For the sauce: Place the tomato confit, garlic confit, water, salt and pepper in a blender and process on high speed. With the machine running, drizzle in the oil and blend until the sauce is emulsified, about 1 minute. Transfer to a medium bowl and stir in the parsley and thyme. Set aside at room temperature
- Place the tomatoes in a colander and toss with the salt. Let drain at room temperature for 2 hours. Pat the tomatoes dry with paper towels. Preheat the oven to 250 degrees F. Place the tomatoes, garlic, and rosemary in a nonreactive 2-quart saucepan. Add enough oil to cover the tomatoes. Cover the saucepan and bake until the tomatoes are very tender, but not falling apart, about 3 hours. Drain, discard the garlic and rosemary, and set the tomato confit aside for the sauce. (The tomato confit can be prepared up to 3 days in advance, covered and refrigerated.)
- Place the garlic cloves and 2 cups cold water in a small saucepan and bring to a boil over high heat. Drain. Repeat the procedure 2 more times. Return the drained garlic cloves to the saucepan and add the oil. Bring to a bare simmer over very low heat. Cook until the garlic is tender, about 40 minutes. Cool completely. Transfer to a 1-pint canning jar, add enough oil to cover the garlic, and seal. (The garlic confit can be prepared up to 3 weeks in advance, covered and refrigerated.)
