1 envelope bearnaise sauce
1 pound fresh asparagus, trimmed
1/4 pound fresh crabmeat
2 tablespoons butter
1/2 teaspoon minced garlic
1 tablespoon lemon juice
4 beef tenderloin steaks (1 inch thick and 3 ounces each)
1/8 teaspoon paprika

Steps:

  • Prepare bearnaise sauce according to package directions. Meanwhile, place asparagus in a steamer basket; place in a large saucepan over 1 in. of water. Bring to a boil; cover and steam for 8-10 minutes or until crisp-tender. , In a large skillet, saute crab in butter for 3-4 minutes or until heated through. Add garlic; cook 1 minute longer. Stir in lemon juice; keep warm., Grill steaks, covered, over medium heat or broil 4 in. from the heat for 6-8 minutes on each side or until meat reaches desired doneness (for medium-rare, a thermometer should read 135°; medium, 140°; medium-well, 145°). Top with crab mixture, asparagus and bearnaise sauce. Sprinkle with paprika.

½ pound thin skirt steak, trimmed of excess fat
1 tablespoon Montreal steak seasoning
½ pound thin asparagus spears, trimmed
1 teaspoon olive oil
salt and ground black pepper to taste
⅓ cup grated Parmesan cheese
½ jarred roasted red pepper, cut into six 1/2-inch strips
6 toothpicks
1 tablespoon grated Parmesan cheese, or to taste

Steps:

  • Butterfly or pound steak with a meat mallet to 1/4-inch thickness. Cut into 6 strips, approximately 2 inches wide by 5 inches long. Season both sides with Montreal steak seasoning and place in the refrigerator.
  • Preheat Panasonic Countertop Induction Oven to Medium-High on the "Grill" setting.
  • Place asparagus in a shallow dish; drizzle olive oil on top. Season with salt and pepper.
  • Grill asparagus for 2 minutes, turning after 1 minute. Transfer to a plate.
  • Reheat oven to Medium-High on "Grill" setting.
  • Line up steak strips next to each other in an assembly line. Cover evenly with 1/3 cup Parmesan cheese. Place 3 to 4 asparagus spears on top, perpendicular to each steak strip. Top asparagus with 1 red pepper strip.
  • Roll steak tightly around asparagus, angling it diagonally to avoid overlapping the steak. Secure with a toothpick.
  • Grill steak bundles for 8 minutes, turning every 2 minutes. Remove to a plate and sprinkle with 1 tablespoon Parmesan cheese.

1-1/2 pounds beef flank steak
1 pound fresh asparagus, trimmed
2 tablespoons avocado oil
2 tablespoons butter, melted
1 garlic clove, minced

Steps:

  • Preheat oven to 400°. In small bowl, combine rosemary and spices; set aside. , Place steak on 1 side of a 15x10x1-in. baking pan; place asparagus on remaining side in a single layer. Brush steak with oil and sprinkle with seasoning mix. Combine butter and garlic, pour over asparagus. , Cover with foil; bake until meat reaches desired doneness (for medium-rare, a thermometer should read 135°, medium, 140°; medium-well, 145°), 25-30 minutes. Let steak stand 5-10 minutes before slicing. Serve with asparagus.

1 pound beef tenderloin or top sirloin steak, cut into 3/4-inch cubes
1/2 teaspoon salt
1/4 teaspoon pepper
1 tablespoon canola oil
2 garlic cloves, minced
1 green onion, sliced
1/4 cup butter, cubed
1 pound fresh asparagus, trimmed and cut into 2-inch pieces
1/2 pound sliced fresh mushrooms
1 tablespoon reduced-sodium soy sauce
1-1/2 teaspoons lemon juice
Hot cooked rice

Steps:

  • Toss beef with salt and pepper. In a large skillet, heat oil over medium-high heat; saute beef 2 minutes. Add garlic and green onion; cook and stir until beef is browned, 2-3 minutes. Remove from pan., In same skillet, heat butter over medium-high heat; saute asparagus and mushrooms until asparagus is crisp-tender. 1 cup long-grain rice
8 ounces flank steak
1 large clove garlic
Fresh or frozen ginger to yield 1 tablespoon, coarsely grated
3 tablespoons dry white wine
1 tablespoon reduced-sodium soy sauce
1 tablespoon honey
3/4 pound asparagus
1 teaspoon Asian sesame oil
1 teaspoon canola oil
1/2 pound plain white mushrooms or portobello mushrooms
1/2 pound snow peas
2 scallions

Steps:

  • Prepare broiler if using; cover broiler pan with aluminum foil.
  • Combine rice with 2 cups water. Bring to boil; reduce heat, cover and simmer until rice is tender -- 17 minutes total.
  • Wash and dry steak, and score on the diagonal to make a diamond pattern.
  • Crush garlic, and grate ginger. Combine them in a bowl with wine, soy sauce and honey; stir well, and add the steak, stirring to coat well.
  • Wash and trim the asparagus by breaking the stems at the point where they yield easily.
  • Heat a large nonstick skillet until hot. Reduce heat to medium. Add sesame oil, canola oil and asparagus. Saute, stirring occasionally.
  • Meanwhile, prepare stove-top grill, if using. Remove steak from marinade and broil or grill about 5 minutes, until meat is rare or medium rare and brown on both sides.
  • While steak cooks, wash and trim the mushrooms, and slice thickly. Add to skillet with asparagus.
  • Wash and string snow peas, and cut in half crosswise. Add to the asparagus and mushrooms, and cook another minute, until asparagus is firm but tender.
  • Wash, trim and slice scallions.
  • Add remaining marinade to vegetables, and cook over low heat until marinade is heated through.
  • When meat is ready, slice thinly on the diagonal, and arrange on the plate. Mound the rice on the plate, and top with the cooked vegetables. Sprinkle with scallions.

  • Place noodles in a large heat proof bowl. Cover with boiling water, cover with a small plate on top, and soak for 3-5 minutes, or until completely cooked. Drain well and set aside.
  • Cut the beef crosswise into 3" pieces and then rotate a quarter and slice very thinly lengthwise, cutting across the grain.
  • In a medium-sized bowl, stir together the beef broth, 2 tablespoons of soy sauce, honey, garlic powder, crushed red pepper flakes, cornstarch, brown sugar and sesame oil, whisking well to combine; set aside.
  • Heat 1 tablespoon of the olive oil in a large nonstick skillet over high heat. Once sufficiently hot (the oil should be sizzling) add half of the beef and cook, stirring once or twice, until brown on the outside and still juicy on the inside, about 2 minutes. Remove meat with a slotted spoon and transfer to a large serving bowl. Repeat with the remaining beef, adding 1 tablespoon of oil to the pan. Transfer all cooked meat to the serving bowl, keeping the skillet on the burner.
