- In a medium bowl, combine 1/2 cup softened unsalted butter, 4 minced garlic cloves, 8 anchovies packed in oil, drained and minced, 1/2 teaspoon hot paprika, 1/2 teaspoon fresh lemon juice, and kosher salt to taste. Mix with a fork until smooth and spread on steak. Or transfer to waxed paper, roll into a cylinder, chill, and slice.

- Mince garlic and mash to a paste with a pinch of salt using a large heavy knife. Mash together butter, anchovy paste, lemon juice, garlic paste, and 1/4 teaspoon pepper until combined well. Stir in parsley.
- Pat steaks dry and sprinkle with salt and remaining 1/2 teaspoon pepper. Heat oil in a 12-inch heavy skillet over moderately high heat until hot but not smoking. Sauté steaks 1 at a time, turning once, about 8 minutes total for medium-rare. Transfer steaks to a cutting board and let stand 5 minutes before serving.
- Top steaks with a dollop of anchovy butter and slice.
FAUX FILETS AU BEURRE D'ANCHOIS (STEAK WITH ANCHOVY BUTTER)
Before all the anchovy-phobes dismiss this, I promise, the anchovy flavor is wonderful in this and not overpowering at all. Another Gascon recipe, this steak dish is elegant and rich and satisfying. Add some steamed potatoes and mushrooms and a frisee salad--a great meal!

Steps:
- Remove the anchovies from the cans and drain well; rinse under cold running water and pat dry.
- Place the anchovies and the butter in a food processor or a blender and process, or mix with an immersion blender in a bowl until the anchovy butter is smooth.
- Set aside.
- Bring salted water to a boil in a steamer, place the broccoli in the top of the steamer and steam 3 to 6 minutes or until done to your taste.
- Remove from steamer and keep warm.
- Pre-heat the broiler.
- Heat a large frying pan over high heat.
- When the pan is very hot, saute the steaks about one minute one each side--the meat should be seared on the outside, raw on the inside.
- Place the steaks on a sheet pan and coat the steaks with 2/3 of the anchovy butter.
- Broil for three minutes without turning for medium rare, longer if you prefer.
- Place the steaks on a warm platter and cover.
- Place the sheet pan across two burners and, over medium high heat, melt the remaining butter, stirring and scraping to get all the fond from the pan.
- Cut the steaks into thin slices.
- Add the juice from the steaks to the butter.
- Spoon half half the butter mixture over the sliced steak and toss the broccoli in the remaining butter.
- Serve immediately.

ANCHOVY BUTTER SAUCE
I know that many people say that they don't like anchovies, but when anchovies are toasted and sauteed they are wonderful and get sweet and nutty tasting. This is an amazing sauce served over pan crusted sauteed fish (i.e., Tilapia, Grouper, Halibut, Cod; any white fish), scallops, or chicken. Now, there are hundreds of recipes on here for pan sauteed or breaded chicken and fish, so I won't list them. But I am sure many of you know the preparation method. This is also a great over steamed or grilled seafood or poultry, as well as asparagus, onions, broccoli and even steak. And, is awesome just tossed with a little angel hair pasta for a quick easy side dish or stirred in with pan sauteed cannellini beans. So you can see how versatile it is. It can be made right in the same pan after you pan sear, your seafood or chicken, or you can make it in a small sauce pan on the side. As I said, very flexible.

- Sauce -- Now, I like to use the same pan I cook the seafood or chicken in, but you can just make it in a small sauce pan if you want. Either works very well.
- In the pan, heat to medium high heat and melt the butter. Then stir in the anchovies and mash with a fork as they cook. You only need to cook them just a couple of minutes. Then stir in the wine, garlic, capers, pepper and 1 lemon slice and squeeze slightly. Just cook another 2-3 minutes and remove from the heat. Stir in the parsley and remove the lemon slice.
- Serve -- Just garnish your dish with one of the lemon slices and pour the butter sauce over your dish. A little pinch of paprika gives it nice color and a little spice to the sauce.

- In a small nonstick skillet over medium-high heat, warm 1 tablespoon oil. Add the anchovies and use the back of a spatula to mash them to pulpy bits as they sizzle. Stir in the garlic and cook, stirring, until fragrant, about 1 minute. Add the parsley, thyme, and, last, the vinegar, scraping the sides of the skillet with the spatula. Let the mixture cook until the vinegar has nearly evaporated, 2 to 3 minutes. Remove from the heat and let cool for about 10 minutes.
- In a heavy nonstick or well-seasoned cast iron skillet over high heat, melt a scant tablespoon of butter until hot and sizzling. Carefully place the steaks in the skillet and cook until well seared, 2 to 3 minutes. You may need to reduce the heat slightly if the butter begins to brown too much. Use tongs to flip each steak and continue to cook to the desired doneness, 2 to 3 minutes more for medium rare.
