STEAK TERIYAKI

Steak Teriyaki image

This recipe was found on the Appetite for China blog which features a variety of delicious Asian recipes. When developing the recipe, the blogger, Diana Kuan, was inspired by a steak teriyaki recipe in the cookbook Japanese Cooking: A Simple Art.

Provided by PanNan

Categories     Japanese

Time 25m

Yield 2 serving(s)

Number Of Ingredients 10

1 1/2 lbs sirloin steaks (about 1- 1 1/4-inch thick)
salt (to lightly coat both sides of the steaks)
3 tablespoons vegetable oil
8 ounces cremini mushrooms, sliced
1 shallot, thinly sliced
1/3 cup sake
3 tablespoons mirin
2 tablespoons dark soy sauce
1 scallion, thinly sliced for garnish
1 teaspoon white sesame seeds

Steps:

  • Salt the steaks lightly on both sides to season and extract juices.
  • Heat 1 tablespoon of the oil in a medium skillet over medium heat. Sauté the mushrooms and shallot for about 4 to 5 minutes, until the mushrooms and well-cooked. Set aside.
  • Heat the remaining 2 tablespoons of oil in a large skillet over medium-high heat. Carefully place the steaks in the pan and brown on one side uncovered, about 3 to 4 minutes. Flip the steaks and brown on the other side for another 2 minutes. Reduce the heat to medium. Splash on the sake, cover the pan, and allow the steaks to cook for another 2 to 3 minutes for medium doneness. (Add a few more minutes for medium-well or well done.).
  • Transfer the steaks to a plate and set aside. Add the mirin and dark soy sauce to the meat juices and sake in the pan. Cook uncovered for another 1 to 2 minutes as the meat glaze thickens (forming the teriyaki sauce). Return the steaks to the pan to coat with the sauce, about 30 seconds more on each side.
  • You can either serve the steaks whole or cut them against the grain into 1/2-inch slices. Spoon over with the rest of the teriyaki sauce, the mushrooms, and the shallots. Sprinkle the sesame seeds and scallions on top and serve.

  • Determine whether your steak has been trimmed at the butcher or not and trim it as needed (see "how to prepare hanger steak?" in the FAQ)
  • Mix the ginger, garlic, sake, salt, and vegetable oil together, and then rub the marinade all over the steak. Let this marinate for at least an hour.
  • To prepare the teriyaki sauce, add the soy sauce, sake, and sugar to a saucepan and bring it to a boil. Adjust the heat down to prevent it from boiling over, and cook the sauce until it starts to thicken (3-4 minutes)
  • To cook the steaks, heat a grill pan over medium-high heat until it is hot. Place the steaks in the pan and cook one side undisturbed until you have nice grill marks on it. If you're using a frying pan, you want to let it go until it's nice and browned on one side.

  • Marinate the steak: Combine the mirin, sake, soy sauce, sugar, and grated ginger in a large, shallow bowl. Place the steak in the marinade and let marinate for at least an hour, and up to 48 hours.
  • Boil marinade to make the teriyaki sauce: When ready to cook, remove steak from marinade, reserving the marinade. Place steak on a plate and set aside. Place marinade in a saucepan and bring to a boil.
  • Grill or fry the steak: If grilling the steak, prepare your grill for high, direct heat. If pan frying, heat a large cast iron pan on high heat. If grilling oil the grill grates.
  • Let the steak rest: When the steak is well seared on both sides, remove from the heat, cover with foil, and let rest for 10-15 minutes.
  • Slice steak in half with the grain, then in thin slices across the grain: Notice the direction of the grain of the steak (the striations in the muscle fibers of the steak).
