2 medium onions
3 tablespoons olive oil, divided
Coarse salt and ground pepper
4 minute steaks, (3 ounces each)
2 tablespoons Worcestershire sauce
Toasted country bread

Steps:

  • Slice onions into 1/2-inch thick rings. Heat 2 tablespoons olive oil in a large skillet over medium-high heat; cook onions until browned, tossing occasionally, 10 to 15 minutes. Season with salt and pepper; remove.
  • Heat remaining tablespoon oil in same skillet over high heat. Season steaks with salt and pepper. Cook 30 seconds on each side; remove. Add Worcestershire sauce and 2 tablespoons water to skillet, scraping up browned bits with a wooden spoon. Return onions to skillet; toss.
  • Sandwich steak and onions between toasted bread.

1 top round steak (1 pound), about 1 1/2 inches thick
1 tablespoon Worcestershire sauce
Coarse salt and ground pepper
1 medium red onion, halved and thinly sliced
6 tablespoons white-wine vinegar
1 teaspoon sugar
2 tablespoons olive oil
1 head (10 ounces) red-leaf lettuce, torn into bite-size pieces
8 slices whole-wheat bread, toasted
2 tablespoons Dijon mustard

Steps:

  • Pierce steak all over with a fork. Place in a shallow dish, and rub with Worcestershire; season with salt and pepper. Let stand at least 15 minutes. In a small bowl, combine onion, 4 tablespoons vinegar, and sugar; season with salt and pepper. Let stand at least 15 minutes.
  • In a large skillet, heat 1 tablespoon oil over medium-high. Cook steak 6 minutes. Turn, and cover; reduce heat to medium. Cook until medium-rare, 6 to 8 minutes (if steak is browning too quickly, reduce heat to medium-low). Transfer to a plate; let rest 10 minutes. Thinly slice against the grain.
  • While steak rests, stir together 2 tablespoons vinegar and 1 tablespoon oil in a serving bowl; season with salt and pepper. Add lettuce, and toss.
  • Spread 4 slices of bread with Dijon; top with steak and onion. Close sandwiches; serve with salad.

2 sirloin steaks, about 170g each
2 small ciabatta loaves, or 1 large one
handful baby spinach
1 large bunch spring onions, trimmed at the tops and the base
handful sesame seeds, toasted
1½ tbsp brown rice miso
1 garlic clove, grated
1cm piece of ginger, peeled and grated
1½ tbsp mirin
1½ tbsp dry or medium sherry
½ tbsp balsamic vinegar
1 tbsp sesame oil
1 egg yolk
½ tbsp Dijon mustard
225ml sunflower oil
1 small garlic clove, grated to a purée
2 tbsp white miso paste
1½ tbsp rice vinegar
½ lime, juiced
1 red chilli, halved, chopped, (deseeded if you don't like it very hot)

Steps:

  • Put the miso for the marinade in a dish large enough to hold the steaks in a single layer and mix in all the ingredients. Put the steaks in the marinade and turn them over several times. Cover, put in the fridge and leave for an hour or so.
  • To make the mayonnaise, mix together the egg yolk and mustard in a bowl. Continuously beating with a hand whisk or an electric beater, start adding the oil very slowly, a drop at a time. Wait until each drop is amalgamated and the mixture has thickened before adding the next. As it develops more body, you can add the oil in slightly larger quantities. Add the garlic, miso and rice vinegar, then add the lime to taste. Finally, mix in the chilli. Cover and set aside. This will make more than you need, but it will keep in the fridge for three days.
  • Heat a non-stick frying pan until it's really hot. Lift the steaks out of the marinade, shaking off the excess. Cook quickly on each side for 30 seconds, then turn the heat down a little and cook for a further 2 mins (for rare steaks), turning them and basting over some of the leftover marinade. Set aside to rest. Clean the pan.
  • Warm the ciabatta in the oven, then slice horizontally. Spread the bread with a big dollop of the mayonnaise. Pile the spinach onto half of the slices.
  • Heat the frying pan again and brush the spring onions with oil. Fry them over a medium heat, turning all the time, until the base is tender, around 10 mins. They will really collapse but that's okay - just don't burn them.
  • Cut the steaks into thick slices (you can leave them whole if you like, but I prefer them sliced), put them on top of the leaves, top with the spring onions and sesame seeds and top with the other half of the bread. Serve immediately.

1 red onion, sliced into 1/4-inch thick rounds
Cooked flank steak slices, about 12 ounces
4 to 6 slices Swiss cheese
1/2 cup mayonnaise
2 tablespoons honey
1 teaspoon garlic flakes
Salt
Freshly ground black pepper
4 long rolls

Steps:

  • Heat a stove-top griddle with cooking spray and set over medium-high heat to preheat. Place red onion slices on hot pan and sear 2 minutes per side, flipping with a spatula, until golden brown and slightly softened.
  • Arrange steak slices alongside onion. Cook 2 to 3 minutes, until hot. Place cheese on top of steak and cook 1 minute, until cheese melts.
  • In a small bowl, whisk together mayonnaise, honey and garlic flakes. Season, to taste, with salt and freshly ground black pepper. Spread mayonnaise mixture on rolls and top with seared onion slices and cheese-smothered steak.

1 large sweet onion
3 cups buttermilk
2 cups minced fresh cilantro
1 cup minced fresh parsley
2 garlic cloves, minced
1/2 teaspoon plus 2 teaspoons salt, divided
1/4 teaspoon pepper
1/2 cup mayonnaise
1/2 cup plus 3 tablespoons olive oil, divided
1 beef flat iron steak or top sirloin steak (1-1/2 pounds)
1-1/2 cups all-purpose flour
3 tablespoons taco seasoning
Oil for deep-fat frying
12 slices Italian bread (1/2 inch thick)
Optional: Fresh arugula and sliced tomato

Steps:

  • Cut onion into 1/4-in. slices; separate into rings. Place in a large bowl or shallow dish. Add buttermilk; turn to coat. Refrigerate at least 4 hours or overnight., In a small bowl, combine cilantro, parsley, garlic, 1/2 teaspoon salt and pepper. Remove 2 tablespoons herb mixture; stir into mayonnaise. Refrigerate until serving. Stir 1/2 cup olive oil into remaining herb mixture. Reserve 2 tablespoons oil mixture for serving. Place remaining oil mixture in a large bowl or shallow dish. Add beef; turn to coat. Refrigerate at least 4 hours or overnight., Drain beef, discarding marinade. Grill beef, covered, over medium heat or broil 4 in. from heat until meat reaches desired doneness, 7-9 minutes on each side (for medium-rare, a thermometer should read 135°; medium, 140°; medium-well, 145°)., Meanwhile, drain onion rings, discarding marinade. In a shallow dish, combine flour, taco seasoning and remaining 2 teaspoons salt. Roll onion rings in flour mixture. In an electric skillet or deep-fat fryer, heat 1 in. of oil to 375°. Fry onion rings, a few at a time, until golden brown, 1 to 1-1/2 minutes on each side. Drain on paper towels; keep warm., Remove steak to a cutting board; brush with reserved 2 tablespoons oil mixture. Brush bread with remaining 3 tablespoons olive oil. Grill bread over medium heat until toasted, 30-60 seconds on each side., Spread mayonnaise mixture over 1 side of each toast. Thinly slice steak. Top 6 slices of toast with steak, fried onions and, if desired, arugula and tomato slices. Top with remaining toast.

Steak doesn't have to be a heavy meal - give it a Japanese-style marinade for a low-fat supper

2 tbsp brown miso paste
1 tbsp dry sherry or sake
1 tbsp caster sugar
2 crushed garlic cloves
300g/11oz lean steak
baby spinach , sliced cucumber, celery, radish and toasted sesame seeds, to serve

Steps:

  • Tip the miso paste, Sherry or sake, sugar and garlic into a sealable food bag. Season with a generous grinding of black pepper, then squash it all together until completely mixed. Add the steak, gently massage the marinade into the steak until completely coated, then seal the bag. Pop the bag into the fridge and leave for at least 1 hr, but up to 2 days is fine.
  • To cook, heat a heavy-based frying pan, griddle pan or barbecue until very hot. Wipe the excess marinade off the steak, then sear for 3 mins on each side for medium-rare or a few mins longer if you prefer the meat more cooked. Set aside for 1 min to rest. Carve the beef into thick slices and serve with a crunchy salad made with the spinach, cucumber, celery, radish and sesame seeds.

I was determined to recreate gourmet-quality steak at home. After researching and testing multiple methods, I finally found one that gives the seared-to-perfection surface and medium-rare pink center.

Miso Butter:
1/4 cup (56 g) unsalted butter, softened
2 tbsp (39 g) yellow miso paste
1 tbsp (3 g) thinly sliced green onions
1/4 tsp black pepper
Steak:
2 large ribeye steaks, at least 1 1/2 inches (3.8 cm) thick
Kosher salt, as desired for seasoning
Black pepper, as desired for seasoning
1 tbsp (15 ml) vegetable oil
1 tbsp (14 g) unsalted butter
3 cloves garlic, roughly chopped
1/4 cup (10 g) thinly sliced white and light green parts of green onion
1/4 cup (10 g) thinly sliced on the bias green onions, for garnish
1/4 cup (4 g) cilantro leaves, for garnish

Steps:

  • For the miso butter, combine the softened butter and miso together in a small bowl. Add the green onions and pepper and combine. Keep at room temperature or roll into a 1 1/2-inch (3.8-cm) wide log in plastic wrap and refrigerate. Cut into slices before serving.
  • There is one key difference to this method for thick steaks. The first step is to slightly warm the steaks in the oven before cooking on the stove. Adjust the oven rack to the center position and preheat the oven to 275°F (135°C). Add your cast-iron skillet to the oven to warm up. I like to use a preheated cast-iron pan because it retains heat very well for searing. Place a wire rack on a rimmed baking sheet, and set aside.
  • Pat dry the steaks with paper towels, pressing out as much surface moisture as possible. Season both sides of the steak with salt and pepper. Transfer the steaks to the wire rack and place in the oven. The heat helps to dry the free moisture on the surface of the steaks for quicker browning and cook time in the pan.
  • Cook the steak until the internal temperature reaches 90 to 95°F (32 to 35°C) for medium-rare, or 100 to 105°F (38°C to 41°C) for medium, about 15 to 20 minutes. The time will vary depending on the thickness of the steaks. Remove the steaks from the oven.
  • In the warmed 12-inch (30-cm) cast-iron skillet, heat the vegetable oil over high heat until just beginning to smoke. Carefully add the steaks and sear until browned with a nice crust, about 2 minutes. Flip the steaks with tongs and sear until browned, 1½ to 2 minutes, or until an instant-read thermometer inserted into the thickest part of steak registers 120 to 125°F (49 to 52°C) for medium-rare or 130°F (54°C) for medium.
  • Reduce the heat to medium and add the butter, garlic and white and light green parts of green onion. Turn the steaks onto their sides to cook and render any remaining fat, about 1 to 2 minutes. Briefly baste the steaks with the butter, garlic and green onion mixture. Basting the steaks as they cook with oil helps distribute any aromatics like herbs in the pan and evenly browns the surface. The butter is added toward the end to add flavor, mouthfeel and encourage more browning due to the milk protein solids in the butter.
  • Immediately transfer the steaks to a clean wire rack set on a sheet pan to rest for 10 minutes. Serve the steaks topped with the miso butter, green onions and cilantro.

  • Preheating the steak at low temperature activates enzymes called cathepsins in the meat that help to tenderize the beef, which occurs below 122°F (50°C). The goal with searing is to achieve a quick sear to create a thick brown crust on the steak without overcooking the interior.
