This Parmesan Crusted Steak is a unique and delicious way to grill steak. It'll take a tasty steak and up the ante on flavor. Whether you make it for dinner or a special occasion, it'll be sure to please.

2 New York Strip Steaks ((1.5 inches thick))
2 teaspoons Signature Beef Seasoning
3 Tablespoons mayonnaise
¼ cup grated Parmesan cheese
2 cloves garlic (minced)
1 teaspoon dried basil
½ teaspoon fresh ground black pepper

Steps:

  • Turn on the smoker. Preheat your smoker to 225 degrees F.
  • Prep the steaks. Season the New York strip steaks on all sides with Hey Grill Hey Signature Beef Seasoning (or equal parts salt and pepper).
  • Make the Parmesan crust mixture. In a small bowl, combine the mayo, Parmesan, garlic, basil, and black pepper and set aside.
  • Smoke the steaks. Place steaks on smoker, close the lid, and cook until the internal temperature of the steaks are 10 degrees away from your target temperature. (Pull at 115 degrees F for rare, 125 for med rare, 135 for medium, 145 for medium-well, and 150 for well done).
  • Preheat your oven. When your steak is nearly to temperature specified above, set your oven to High Broil. Place a cast iron skillet on the very top rack of your oven to preheat. It needs to preheat for about 8-10 minutes.
  • Add the Parmesan crust. Remove the steaks from the grill and place them on a plate. Top each steak with half of the Parmesan mixture. Carefully place the steaks onto the preheated cast iron skillet and slide them under the broiler.
  • Broil the Parmesan crusted steaks. Broil for about 2-3 minutes, or until the Parmesan crust has melted and the top of the cheese is bubbly and browned. Your steak should be a few degrees under your final desired internal temperature, (125 degrees F for rare, 135 for medium rare, 145 for medium, 155 for medium well, and 160 for well done).
  • Rest and serve. Rest the steaks for 5-10 minutes. The carry over cooking and heat from the skillet should finish the cooking process while the steak rests in the skillet for 5-10 minutes. Remove the steaks from the skillet and serve.

2 well-trimed beef t-bone or porterhouse steaks cut 1 inch
1/4 c grated parmesan cheese
2 Tbsp olive oil, light
2 Tbsp red wine vinegar
1 red bell pepper
1 yellow bell pepper
1 large red onion, cut 1/2 inch slice
SEASONING
1 Tbsp crushed garlic
2 tsp dried basil
1 tsp pepper

Steps:

  • 1. In a small bowl, combine seasoning ingredients: mix well. Remove four teaspoons of the seasoning mix and press into both sides of steak.
  • 2. Add cheese, oil and vinegar to remaining seasoning mixture. Mix well; set aside.
  • 3. Place steak in center of grill - over medium ash-covered coals. Arrange vegetables around steak. Grill steak uncovered 14 to 16 minutes for medium doneness, turning occasionally. Grill peppers 12 to 15 minutes and onion 15 to 20 minutes or until tender, turning once. Brush vegetables with reserved cheese mixture during the last 10 minutes of grilling.
  • 4. Season steaks with salt, as desired. Remove bone and carve steaks crosswise into thick slices. Serve with vegetables.

3 large garlic cloves
2 teaspoons plus 1 tablespoon extra-virgin olive oil
1 teaspoon freshly ground black pepper
2 1 1/2-pound porterhouse steaks (each about 1 1/2 inches thick)
6 cups loosely packed arugula (about 4 ounces)
1 2-ounce piece Parmesan cheese
Lemon wedges

Steps:

  • Blend garlic, 2 teaspoons oil and black pepper in small food processor (or mash on plate with back of fork) to form paste. Pat steaks dry with paper towels. Rub garlic paste over both sides of steaks. Let stand at room temperature 30 minutes or refrigerate up to 8 hours. Prepare barbecue (medium-high heat). Grill steaks to desired doneness, about 9 minutes per side for medium-rare. Transfer steaks to cutting board. Let stand 5 minutes. Cut steaks on slight angle into 1/4-inch-thick slices.

4 (2-inch-thick) filets mignons, tied (10 ounces each)
2 tablespoons vegetable oil
2 tablespoons fine fleur de sel
2 tablespoons coarsely cracked black peppercorns
1/2 cup good olive oil
1/4 cup freshly squeezed lemon juice (2 lemons)
1/2 teaspoon Dijon mustard
1 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper
8 ounces baby arugula
1 (4-ounce) chunk good Parmesan cheese

Steps:

  • Prepare a charcoal grill with hot coals or turn a gas grill to medium-high heat.
  • Meanwhile, pat dry the filets mignons with paper towels. Brush the filets lightly all over with the oil. Combine the fleur de sel and cracked pepper on a plate and roll the filets on all sides in the mixture, pressing lightly to help the salt and pepper adhere. The steaks should be evenly coated with the fleur de sel and cracked pepper.
  • Meanwhile, whisk together the olive oil, lemon juice, mustard, kosher salt, and freshly ground black pepper. Set aside.
  • When the grill is ready, place the steaks on the grill. Cook them for 5 minutes on each side for medium-rare or until the centers of the steaks register 125 degrees on an instant-read -thermometer. Remove to a plate, cover tightly with foil, and allow to rest for 10 minutes before slicing thickly.
  • Toss the arugula in a large bowl with enough of the dressing to moisten; divide among 4 plates. Place a steak on top of each salad. Shave the Parmesan onto each steak with a vegetable peeler, sprinkle with salt, and serve hot.
