MEATLOAF RECIPE
Recipe video above. Meatloaf is so much more than a giant hunk of ground beef in a loaf shape. It should ooze with flavour, be moist and tender yet not crumble apart when sliced. And the caramelised glaze is the crowning glory!

- Preheat oven to 180C/350F. Oil or spray a loaf tin. (Note 3)
- Glaze: Mix together in a small bowl. Set aside.
- Meatloaf: Place breadcrumbs in a very large bowl. Grate over onion. Mix so the breadcrumbs are all wet. (Note 4)
- Add remaining ingredients. Mix well using your hands. Form into a loaf shape, pinching together then smoothing over creases and cracks (helps prevent cracks during baking).
- Transfer into loaf tin. Brush generously with glaze, using about 1/2.
- Bake for 45 minutes. Remove from oven and brush with most of the remaining glaze. If there is excess fat pooling, scoop/pour it off.
- Bake for a further 30 minutes. Remove from oven.
- Stand for 10 minutes before turning out and cutting into thick slices. You will probably get a bit of crumbling just on the edges of the first couple of slices, this is normal and indicative of the tenderness of the meatloaf (zero crumble indicates firm packed harder meatloaf which isn't as enjoyable!).
- Ideal served with a dollop of ketchup, creamy mashed potatoes and steamed vegetables.

Nothing says classic comfort like Ina Garten's Meatloaf recipe from Barefoot Contessa on Food Network.

- Preheat the oven to 325 degrees F.
- Heat the olive oil in a medium saute pan. Add the onions, thyme, salt, and pepper and cook over medium-low heat, stirring occasionally, for 8 to 10 minutes, until the onions are translucent but not brown. Off the heat, add the Worcestershire sauce, chicken stock, and tomato paste. Allow to cool slightly.
- In a large bowl, combine the ground chuck, onion mixture, bread crumbs, and eggs, and mix lightly with a fork. Don't mash or the meat loaf will be dense. Shape the mixture into a rectangular loaf on a sheet pan covered with parchment paper. Spread the ketchup evenly on top. Bake for 1 to 1 1/4 hours, until the internal temperature is 160 degrees F and the meat loaf is cooked through. (A pan of hot water in the oven, under the meat loaf, will keep the top from cracking.) Serve hot.
AMAZING MEATLOAF - MY WAY
I get raves on this from anyone and everyone that eats it - meatloaf lovers and non-lovers. I know it looks like a lot of ingredients, but almost all are things I regularly have on hand. You gotta put some flavor into it- otherwise, just bake a chunk of meat and it will taste like 80% of the other meatloaf recipe's on this site. Steps:
- Preheat oven to 375°F.
- Cook the bacon in a saute pan until crisp. Remove bacon, save for a BLT or something else (will not be used in the meatloaf).
- In the same pan of the bacon fat, add the 2 tbl of olive oil and saute red peppers, shallots and garlic until soft, about 5-8 minutes (do not burn).
- Take the croutons, put them into a plastic bag, and crush with a meat mallet until very finely crushed.
- In a large bowl, mix the meat and the remainder of the ingredients (except the Montreal steak seasoning) by hand, not overworking, until everything is just combined. Season with salt and pepper.
- On a baking sheet, spray with a non-stick cooking spray, and dump the meat mixture onto it. Form into a loaf.
- Top with the Montreal steak seasoning.
- Bake until center reaches 160°F, about 1 hour to 1 1/2 hours, or until cooked through.
- Serve with a sauce.
- Topping Sauce: Heat ketchup, brown sugar and Worcestershire sauce in a small saucepan over medium-low heat until combined.

BIG STAR MEATLOAF
Steps:
- Preheat oven to 325 degrees F.
- In large bowl, mix steak sauce, ground beef, garlic, thyme, Worcestershire sauce, eggs, and steak seasoning until well mixed. Then, add bread crumbs and mix until incorporated.
- Place in 9 by 13-inch casserole dish and shape into a loaf. Add water to pan to come up to 1/4-inch of the meat loaf.
- Bake for 50 minutes until done.
MEATLOAF FOR STEAK LOVERS
My husband, the true carnivore, loves this meatloaf. The kids love it - minus the onions. I got this recipe from Betty Crocker's American Country Cooking which I modified a little.

- Mix milk, egg, and Worcestershire sauce. Set aside. Then mix together salt, mustard, garlic powder, pepper, bread crumbs. Then mix milk, hamburger, and dry ingredients well with a fork. Add onions and mix. Spread in ungreased loaf pan. At this point you can sprinkle the top with more coarse ground pepper and celery salt, or cover with A1 or ketchup. Bake uncovered at 350 degrees until done, about 1 hour to 1 hour 15 minutes.

STEAK FINGERS FOR RARE STEAK LOVERS
If you love rare or medium rare steak, this recipe is for you. My mother used to prepare this recipe for us kids (and she passed away recently at age 81--so it's a pretty old recipe). I believe these steak fingers were served at a Houston restaurant that she worked in during the 1960s. This dish goes well with hot rice. Be sure to cook your rice before you cook the steak fingers because this recipe is very fast! Note: The steak fingers are meant to turn out juicy, not "crispy."

Steps:
- Cut up Round Steak or Sirloin Steak into finger-sized pieces (about 1" or so in diameter, but no thinner or the meat will cook too fast), about 1/3 to 1/4 pound per person.
- (To make slicing easier, place the meat in the freezer for about 30 minutes before slicing.).
- Dip the Steak Fingers into the Soy Sauce, then dredge in the flour. (You can use a plastic bag for the flour-dipping part.).
- Repeat Step 3, then place all the meat on a plate or platter. (At this point, if I want the pieces to turn out especially rare, I put them back into the freezer for a bit before cooking.).
- When you get a plateful of breaded Steak Fingers prepared, quickly place them into a frying pan of heated vegetable oil one at a time. They should really sizzle as soon as you drop them into the oil. As soon as the entire plateful of meat is in the oil, begin turning the pieces. As soon as you have finished turning all the pieces, begin taking them out to drain on a paper towel covered plate. Sprinkle with cracked pepper and serve over hot rice with a salad.
- NOTE: The entire frying process should only take a few minutes. DO NOT LEAVE THE STOVE OR THEY WILL OVERCOOK. The meat may turn out tough if it is cooked well done.
- P.S. These steak fingers heat well the next day for lunch, just so long as they are not cooked well done to begin with.

STEAK-LOVERS' LEFTOVERS (SANDWICHES)
Amazingly enough, there was a little bit of beef tenderloin left after Christmas dinner last year. Looking for a way to stretch less than a pound to make a full meal for 4, I found this recipe from the Feb., 1990, issue of Gourmet Magazine. Everyone just lapped it up! While the quality of meat is obviously a big factor, you can use anything from tenderloin to grilled flank steak to deli roast beef with acceptable results.

Steps:
- Heat 2 tablespoons butter and olive oil in large skillet over medium heat; add onions and cook, stirring occasionally, until golden.
- (Note: The original recipe says to cook until"golden and crispy". I've never managed to get them crispy, but they're delicious just caramelized.) Using a slotted spoon to allow excess oil to drip back into the skillet, remove onion slices to paper towels to drain.
- Reduce heat to moderately low and add mushrooms and garlic to skillet.
- Cook in remaining oil, stirring occasionally, until mushrooms begin to turn brown; transfer mixture to a small bowl.
- Pour broth into skillet and deglaze, using a wooden spoon to scrape up all the brown bits on the bottom of the pan.
- Add cream, catsup, worcestershire and mustard.
- (The recipe doesn't say to, but at this point I let it simmer a little while to reduce sauce and thicken a bit.) Cut bread loaf in half horizontally and butter each half lightly.
- Cut each half into 4 equal pieces and toast in oven, buttered side up.
- Stir sliced beef and mushroom mixture into sauce and heat thoroughly.
- Place beef slices on bottom slices of bread, spooning desired amount of sauce over each slice.
- Sprinkle caramelized onions over each sandwich and place other half of bread slices on top.
