Beef fajitas are delicious served with a lot of condiments on the side. My favorites are guacamole, extra cilantro, and beans and rice!

1 pound lean steak, cut into strips
½ cup fresh lime juice
½ tablespoon ground black pepper
1 tablespoon chopped fresh cilantro
2 tablespoons vegetable oil
1 large onion, cut into thin strips
1 julienned green bell pepper
2 lemons, quartered
salt and pepper to taste
6 (12 inch) flour tortillas

Steps:

  • Combine the lime juice, ground pepper and cilantro in a shallow dish. Place steak strips into the marinade and refrigerate for two to four hours.
  • Heat 1 tablespoon vegetable oil in a large skillet over medium-high heat. Add steak strips, and fry until cooked to your liking. Remove meat and set aside.
  • Add remaining oil and onions to the skillet. Cook over medium low heat, until translucent, stir in green peppers and steak. Squeeze the juice of 1 lemon over the top and stir. When the green bell peppers are just tender remove the pan from the heat. Season with salt and pepper to taste. Serve the steak fajitas with tortillas and lemon wedges on the side.

3 tablespoons olive oil, divided
1/2 lb beef top sirloin steak, cut into thin strips
1 medium green pepper, sliced
1 small onion, sliced
2 tablespoons soy sauce
1 tablespoon brown sugar
1/2 teaspoon chili powder
1/2 teaspoon ground cumin
1/8 teaspoon pepper
1 teaspoon cornstarch
2 tablespoons lime juice
1 cup cubed pineapple
1 medium tomatoes, chopped

Steps:

  • In a large skillet, fry tortilla strips in 2 tablespoons oil on both sides for 1 minute or until golden brown.
  • Drain on paper towels.
  • In the same skillet, cook the chicken, beef, green pepper, onion, soy sauce, brown sugar, chili powder, cumin, and pepper in remaining oil for 3-4 minutes or until chicken is no longer pink.
  • In a small bowl, combine cornstarch, and lime juice until smooth, add to the pan.
  • Bring to a boil, cook and stir for 1 minute or until thickened.
  • Stir in pineapple, and tomato, heat through.
  • Serve with tortilla strips.

1 tablespoon paprika
2 teaspoons packed light brown sugar
1 teaspoon ground cumin
1 1/2 teaspoons chili powder
1/2 teaspoon ancho chile powder
1/2 teaspoon garlic powder
Kosher salt
1 1/2 pounds skirt steak
Juice of 3 limes, plus wedges for serving
3 tablespoons extra-virgin olive oil, plus more for the grill
4 bell peppers (red, orange and/or yellow), thinly sliced
2 red onions, thinly sliced
8 to 12 flour tortillas
Shredded cheddar cheese and chopped fresh cilantro, for topping

Steps:

  • Mix the paprika, brown sugar, cumin, chili powder, ancho powder, garlic powder and 1 teaspoon salt in a small bowl.
  • Put the steak in a large resealable plastic bag. Add the juice of 1 lime, 1 tablespoon olive oil and the spice mixture; seal the bag and rub the spices into the meat. Refrigerate 30 minutes to 2 hours.
  • Meanwhile, heat a large cast-iron skillet over medium-high heat. Toss the bell peppers and red onions with the remaining 2 tablespoons olive oil, the juice of the remaining 2 limes and 1 teaspoon salt in a large bowl. Add to the skillet and cook, stirring occasionally, until the vegetables are tender and charred around the edges, 8 to 10 minutes.
  • Preheat a grill to medium high and brush the grates with olive oil. Grill the steak 3 to 5 minutes per side for medium rare. Transfer to a cutting board and let rest 5 to 10 minutes.
  • Warm the tortillas as the label directs. Slice the steak against the grain and season with salt. Serve on the tortillas with the onions and peppers; top with cheese and cilantro. Serve with lime wedges.

1 teaspoon cumin, to taste
½ lime, juiced
fresh cilantro, chopped, for garnish
8 whole grain tortillas, warmed

Steps:

  • Preheat the oven to 450°F (230°C).
  • Lay the flank steak in the middle of a baking sheet. Arrange the bell peppers and red onion around it. Drizzle everything with olive oil and season with salt, pepper, chili powder, garlic powder, and cumin.
  • Using your hands, rub the seasoning into the vegetables, then into the steak. Flip the steak and season the other side.
  • Squeeze the lime juice over the top of the steak and veggies.
  • Cook for 12 minutes, or until the meat has reached your desired doneness.

1-1/2 pounds beef top sirloin steak, cut into thin strips
2 tablespoons vegetable oil
2 tablespoons lemon juice
1 garlic clove, minced
1-1/2 teaspoons ground cumin
1 teaspoon salt-free seasoning blend
1/2 teaspoon chili powder
1/4 to 1/2 teaspoon crushed red pepper flakes
1 large green pepper, julienned
1 large onion, julienned
6 to 8 flour tortillas (8 inches)
Shredded cheddar cheese, salsa, sour cream, lettuce and tomatoes, optional

Steps:

  • In a skillet over medium heat, brown the steak in oil. Place steak and drippings in a 3-qt. slow cooker. Stir in the lemon juice, garlic, cumin, seasoning blend, chili powder and red pepper flakes. 1/4 cup vegetable oil (divided)
2 teaspoons chili powder
1 teaspoon kosher salt
1 teaspoon paprika
1/4 teaspoon cayenne pepper
1 teaspoon ground cumin
2 pounds skirt steak
1 red onion (cut into thin strips)
1 red bell pepper (cut into thin strips)
1 green bell pepper (cut into thin strips)
1 yellow bell pepper (cut into thin strips)
2 cloves garlic (minced)
1 lime (cut into wedges)

Steps:

  • Add the chili powder, kosher salt, paprika, cayenne pepper and the cumin to a small bowl and mix before rubbing on the steak and letting marinade for 30 minutes (optional).
  • Add half the canola oil to a large cast iron skillet on medium high heat and add the skirt steak to the pan, cooking for 3-4 minutes on each side before removing from the pan.
  • Add the rest of the canola oil and the onions, bell peppers and garlic to the pan and cook for 4-5 minutes.
  • Slice the steak against the grain thinly, add it back into the pan and squeeze half the lime wedges over the pan before serving.
