Steps:
- Melt 2 tablespoons butter in a large pot over medium heat. Add the onions, 2 tablespoons water and a big pinch of salt. Cook, stirring occasionally and adding 1 more tablespoon water if needed, until the onions are caramelized, 15 to 20 minutes. Stir in 2 more tablespoons water and 1 tablespoon Worcestershire sauce. Slowly add the cheese, stirring to melt. Cover and keep warm.
- Meanwhile, combine the ketchup, mustard, steak sauce, mayonnaise, remaining 2 teaspoons Worcestershire sauce and a few grinds of pepper in a small bowl.
- Heat a large cast-iron skillet over high heat. Season the steak generously with salt and pepper. Add to the skillet and cook until well browned, about 3 minutes per side for medium rare. Transfer to a cutting board and let rest 5 minutes.
- Toast the bread and spread with the remaining 1 tablespoon butter; divide among plates. Thinly slice the steak and pile on top of the bread. Drizzle with all but 2 tablespoons of the ketchup mixture and scatter the onions on top.
- Toss the reserved ketchup mixture with the watercress; season with salt and pepper. Serve with the sandwiches.

BRITISH-STYLE CHEESE AND ONION SANDWICH FOR 2
About a week ago I found a really good quality imported "extra mature farmhouse cheddar" cheese from the UK and decided to test it in this recipe which was recently featured on thekitchn.com. Use the best ingredients you can if at all possible: homemade bread and mayonnaise, etc. Q: I don't intend to step on any toes (especially British ones) but don't you think bacon/rashers would be delicious in this sandwich? A. yes. The bacon is optional of course. The husband discovered my secret stash of the farmhouse cheddar cheese and now most of it is gone! :/ Serving suggestion that we enjoyed with our sandwiches: Recipe #272915, hard boiled eggs and fresh fruit. I believe this is my first English recipe posted here but the fine English people have no cause for concern.

LEFTOVER STEAK SANDWICH WITH ONIONS AND MUSHROOMS
This is a delicious sandwich and a great way to use up leftover steak --- I really don't even bother measuring out the exact amounts, the amounts I have listed I think are pretty close to what I use when I make this sandwich, you may adjust the ingredient amounts to suit taste, and to save some time you can fry the onions and mushroom/garlic mixture well in advance --- it's not really necessary to brown the bread, I like to do so as I find it makes a difference to the taste of the sandwich, serving size is only estimated --- this is delicious!

- Prepare the onions, peppers, mushrooms and garlic by slicing / mincing according to ingredient lit. Set aside.
- In a large skillet, heat half of the butter (or oil) to high heat. When the skillet is very hot, cook the seasoned steak pieces in small batches. You want them to brown quickly but not burn. Move the pieces to cook on all sides for about 2 minutes. Transfer to a covered dish.
- Once the steak is cooked, add the remaining butter or oil to the skillet. Add the sliced onions, peppers, mushroom, and garlic. Let them brown for 1 - 2 minutes, then reduce the heat to medium low. Sprinkle with salt and pepper to taste. Cook for about 10-15 minutes until the vegetables are tender, stirring occasionally to prevent sticking.
