RECREATE THE EASY ITALIAN LEMON CREAM CAKE FROM STANLEY TUCCI: SEARCHING FOR ITALY

- Pre-heat oven to 350° (180° celsius). Lightly grease and flour an 9 ½ inch bundt cake. In a large bowl beat on medium speed eggs and sugar until light and fluffy. Melt butter and let cool completely. Grate the peel of one lemon. In a medium bowl whisk together flour,baking powder and salt, then alternating with the cream gently fold into egg mixture with a spatula, keep folding until mixture is combined, gently fold in lemon peel, vanilla and melted butter, pour into prepared pan and bake for approximately 40-45 minutes. Let cool, then dust with powdered sugar.

- In a small bowl, combine the flour, pecans and salt. Stir in butter. Press into an ungreased 13-in. x 9-in. baking dish. Bake at 350° for 20-25 minutes or until golden brown. Cool on a wire rack., In a large bowl, beat cream cheese and confectioners' sugar until smooth. Fold in whipped topping. Spread over crust. Top with pie filling. Store in the refrigerator.

Steps:
- Preheat oven to 35o degrees.
- Cut butter into flour, then add nuts and press into bottom of ungreased 13x9 inch pan.
- Bake crust at 350 degrees for 30-35 minutes, or until it begins to brown (takes a long time).
- Cool crust before adding other layers.
- Mix together softened cream cheese, powdered sugar, and 1 1/2 cups of the Cool Whip.
- Mix until well blended and spread evenly over crust.
- Beat pudding mixes and milk together well and spread over cream cheese layer.
- Spread remaining Cool Whip on top.
- Refrigerate until it sets.
