2 tablespoons unsalted butter, melted
2 tablespoons olive oil
1/2 teaspoon dried oregano
1/2 teaspoon garlic salt
2 cups 1/2-inch cubes crusty Italian bread

Steps:

  • Preheat the oven to 350 degrees F.
  • Whisk the butter, olive oil, oregano and garlic salt. Toss with the bread cubes. Spread in a single layer on a baking sheet. Bake until golden brown and toasted, 15 to 20 minutes.

6 cups mixed baby greens
About 1/4 cup extra virgin olive oil
Juice of 1 lemon, about 2 tablespoons
Salt and freshly grated pepper to taste

Steps:

  • Wash salad by immersing in a sinkful of cold water and swirling around. Lift greens out of sink into salad spinner or clean cotton pillowcase and spin like crazy. Fun for the whole family. Toss salad greens gently with olive oil in a large wooden bowl. Sprinkle on lemon juice and toss again. Finally, season to taste with salt and freshly ground pepper, toss again, and serve. Eat with your fingers.

Caesar Salad with Crunchy Croutons image

1/2 loaf crusty Italian bread
1/4 cup extra-virgin olive oil
1/4 cup grated Parmesan
2 tablespoons fresh thyme leaves
Kosher salt and freshly ground black pepper
4 anchovy fillets
1 clove garlic, smashed
2 lemons, juiced
1 tablespoon water
1/2 cup extra-virgin olive oil
1/2 cup freshly grated Parmesan
Freshly ground black pepper
Salt
2 heads romaine lettuce
Freshly grated Parmesan, for garnish

Steps:

  • Make the croutons:
  • Heat the oven to 350 degrees F.
  • Hand-tear the bread into small pieces and put them into a bowl. Add the olive oil, Parmesan, and thyme leaves; season with salt and pepper. Mix this well to combine all the flavors. Spread the cubes out onto a baking sheet and bake until they are golden brown, about 15 minutes. Let them cool before tossing them onto the salad.
  • Make the dressing: Put the anchovies, garlic, lemon juice, and water into a blender and process for 30 seconds until the mixture is smooth. With the blender running, pour the olive oil in slowly for the dressing to emulsify. Stir in the Parmesan and a couple of grinds of black pepper. Season, to taste, with salt and set aside. (Refrigerate the dressing if you will not be using it right away.)
  • Assemble the salad: Tear the lettuce into a large bowl. Add enough dressing to coat the salad to your liking. Add the croutons and some extra Parmesan and toss the salad well. Serve immediately.

CHOPPED SALAD WITH CORNBREAD CROUTONS



Chopped Salad with Cornbread Croutons image

One of my favorite exercises as a chef is finding unique ways to bring familiar flavors together.

Number Of Ingredients 9

1/2 cup cubed cornbread (1/2-inch cubes)
6 cups chopped romaine lettuce (about 1/2 head or 2 hearts)
1 1/2 cups thinly sliced red cabbage (about 1/4 head)
1/2 cup canned black-eyed peas, drained and rinsed
1/2 cup frozen fire-roasted corn kernels, thawed (or fresh corn kernels)
1/2 cup halved cherry tomatoes
1/4 cup diced pimientos, rinsed
1/2 cup ranch dressing
1/2 cup thinly sliced red onion (about 1/4 onion)

Steps:

  • Preheat the oven to 350˚ F. Spread the cornbread cubes on a small baking pan. Bake, flipping halfway through, until golden, 8 to 10 minutes. Let cool.
  • Combine the lettuce, cabbage, black-eyed peas, corn, tomatoes and pimientos in a large bowl. Add the dressing and toss to coat. Serve topped with the red onion and cornbread croutons.

1/2 (8-ounces) loaf rosemary bread, cut into 1/2-inch cubes* see Cook's Note
Olive oil, for drizzling
3 cups packed arugula
1/3 cup toasted pine nuts
1/4 cup Citrus-Herb Sauce, see Roasted Citrus-Herb Game Hen recipe
Salt and freshly ground black pepper

Steps:

  • Preheat the oven to 350 degrees F.
  • Place the bread on a baking sheet, drizzle with olive oil and bake for 12 to 15 minutes until toasted. Set aside to cool.
  • In a medium salad bowl, mix together the cooled croutons, arugula, and pine nuts. Add the Citrus-Herb Sauce. Toss well until all ingredients are coated. Season with salt and pepper, to taste. Serve immediately.
  • *Cook's Note: You can also use olive bread or any plain rustic loaf in place of the rosemary bread.

CAESAR SALAD WITH "CRUSTY" CROUTONS

1/2 cup garlic-flavored olive oil, divided, plus more as needed
1/2 cup grated Parmesan, divided, plus more as desired
4 ounces frozen pizza crust, thawed
1/2 lemon, juiced
1 medium head romaine, chopped, rinsed, and dried
Kosher salt and freshly ground black pepper

Steps:

  • Put 1/4 cup of oil in a medium skillet over medium-high heat and heat until hot but not smoking. Add 1/4 cup of the cheese to a medium bowl and set aside.
  • Brush a work surface with a little oil and press the dough into a rectangle about 1/4-inch thick. Cut the dough into thin strips, about 1/4-inch wide. When the oil is hot, using kitchen scissors, carefully hold the dough strips, 2 at a time, over the pan and snip off 1/4-inch pieces, letting them gently fall into the hot oil (this may take several batches). Shallow-fry the dough pieces, tossing frequently with a slotted spoon, Chinese strainer or tongs, until golden brown, 3 to 4 minutes. Transfer the croutons to the bowl with the cheese and toss to coat. Continue frying and dredging the dough in the cheese until all the dough is used.
  • When ready to serve, add the romaine to a large bowl, drizzle with lemon juice and add the remaining 1/4 cup oil. Season with salt and pepper, to taste and toss well to evenly coat the lettuce. Add the remaining 1/4 cup of cheese and the croutons and toss well until combined.
  • Transfer to a serving platter and top with additional cheese, if desired.

GARLIC CROUTONS

4 cloves garlic, smashed
4 slices crusty bread
Salt and pepper, to taste
1 ounce Parmesan cheese, grated
1 ounce parsley, chopped

Steps:

  • In a skillet heat oil and garlic. Saute bread in oil until browned on both sides. Season with salt and pepper. Sprinkle with cheese and parsley. Cut into bite-sized cubes.

3 cups cubed Italian bread
3 medium tomatoes, chopped
6 ounces cubed part-skim mozzarella cheese
1 medium sweet yellow pepper, cut into 1-inch pieces
1/3 cup minced fresh basil
6 tablespoons olive oil
3 tablespoons white or brown balsamic vinegar
1-1/2 teaspoons minced garlic
1/8 teaspoon salt
1/8 teaspoon pepper

Steps:

  • Place bread cubes in a single layer in an ungreased 15x10x1-in. baking pan. Bake at 450° for 6-8 minutes or until golden brown, stirring twice. Cool., In a large bowl, combine the tomatoes, mozzarella, yellow pepper and basil. In a small bowl, whisk the oil, vinegar, garlic, salt and pepper. Pour over salad and toss to coat. Sprinkle with croutons.
